HOMEMADE INSTANT OATMEAL MIX
Recipe adapted from and with thanks to The Lemon Bowl

Steps:
- Combine all the ingredients in a large mixing bowl and stir to combine. Store in an airtight container for up to 3 weeks.
- To serve, place 1 cup of the oatmeal mixture in a glass bowl along with 1/2 - 3/4 cup milk or water. Microwave for 90 - 120 seconds, stir and then let rest for at least 2 minutes before serving. *
- * Adjust the liquid and the cooking time according to your preference. I like my oatmeal more chewy than mushy, so 1/2 cup and 90 seconds works for me. My boys like theirs a little more mushy, so 3/4 cup and 120 seconds works for them.

Steps:
- Preheat oven to 350 degrees. Spread oats on a rimmed baking sheet; bake until lightly toasted but not browned, about 15 minutes. Let cool. Pulse in a food processor until coarsely chopped. Mix in 1 cup of a combination of add-ins (see our suggestions below), and stir in sugar, salt, and cinnamon, or more to taste, before storing in an airtight container for up to 2 weeks.
- To serve, stir in boiling water until desired consistency is reached. Let stand 2 to 3 minutes.
INSTANT OATMEAL MIX
This tastes remarkably similar to the maple and brown sugar instant oatmeal varieties you buy in little packets. Save money by making your own! For each batch of oatmeal, combine 2/3 cup quick-cooking oats with 1 to 2 tablespoons of mix; add boiling water until desired consistency is reached.

DRY OATMEAL MIX
This recipe came from the February/March 2003 issue of Taste of Home's Light and Tasty. I really have enjoyed this recipe and the ease of preparation. Also, very economical to have on hand. Those small packets of pre-flavored oatmeal do get pricey. 3 points per serving.

INSTANT OATMEAL MIX (OAMC)
I love making my own oatmeal mixture because I know exactly what's in it (many store-bought packets have additives), it's cheaper (every penny counts!), and I think it just tastes better. I keep a large Tupperware of this mixture in my desk at work, along with a 1/4-cup measuring cup; I give the Tupperware a quick shake before measuring out my serving. Alternatively, you could prepackage servings in sandwich-sized Ziplocs. 1/4 cup is about the same amount as the store-bought packets, so that's the serving size the recipe is based on, but I often measure out 1/2 cup portions.

Steps:
- First, decide which flavor you are going to make. Then, mix together the dry ingredients in a microwave-safe single serving container such as a jar or zip-top sillicone bags (like we used). If you'd like to prep multiple servings, now is the time to do that!
- Then, add 2/3 cup of liquid (water, or any kind of milk will work) to each serving, stirring dry and wet ingredients together.
- Microwave on high for 90 seconds. Alternatively, you can stir in boiling water and skip the microwave.
- Remove from microwave and stir. Serve, and enjoy.

- To make the instant oatmeal mix, put the oats, dried fruit, nuts, and cinnamon into a large jar or resealable bag with a bit of extra room. Shake well until all the ingredients are thoroughly combined.
- To prepare one serving of oatmeal, scoop 1/3 cup of the Oatmeal Mix into a deep, microwave-safe cereal bowl. (If the bowl is too shallow, the oatmeal may overflow when it cooks.) Add 2/3 cup water and stir well.
- Place the bowl in the microwave and cook on high for about 2 minutes, until the water is absorbed and the oats are tender. Remove the bowl from the microwave and stir in a pinch or two of kosher salt. The oatmeal will thicken as it cools. If you prefer thicker oatmeal, scale back the water by 1 or 2 tablespoons. Add milk and maple syrup.

- In a large storage container or freezer bag, combine the oats, almonds, dried fruit, flaxseeds, coconut sugar, cinnamon, and salt. Stir to combine.
- Pour 2/3 cup water into a small saucepan and bring to a boil over high heat. Stir the oatmeal mix again to ensure that it’s evenly blended, then pour 1/3 cup of the oatmeal mixture into the boiling water. Stir to combine, reduce the heat to medium-low, and simmer, uncovered, stirring occasionally, until the oats have absorbed most of the water and are creamy in texture, 5 to 7 minutes.
- Stir the oatmeal mix again to ensure that it’s evenly blended. Combine 1/3 cup of the mix and 2/3 cup of the water in a microwave-safe bowl (use a slightly larger bowl than you think you’ll need, so the oatmeal doesn’t bubble over). Microwave for 1 1/2 to 2 1/2 minutes, pausing to stir if necessary to prevent overflow, until the oats have absorbed most of the water and are creamy in texture.
- The oatmeal will thicken up a bit more as it cools. Let the oatmeal rest for a few minutes, until it reaches a palatable temperature. Stir again, add any garnishes that you might like, and serve.
