INSOMNIA COOKIES
Steps:
- Preheat the oven or toaster oven to 350 degrees F.Combine all wet ingredients, including dates, in the blender and blend until smooth.Combine all dry ingredients including walnuts, flax seed, and cherries in a large mixing bowl.Combine wet and dry ingredients to form dough.Fold in white chocolate chunks.Scoop about 2 tbs of dough and place on parchment-lined cookie sheets. Press down dough with your fingers to about ½ inch thick rounds.Place in oven and bake for 20 minutes.Remove from oven and let cool on cooling rack.
SALTED CARAMEL COOKIES
Salted Caramel Cookies. Soft chewy caramel cookies with sea salt and drizzled with salted caramel.

- Heat oven to 390 degrees (unless you are chilling your dough). In a large mixing bowl, cream together butter, brown sugar, and sugar for at least 4 minutes, scraping the sides of the bowl often.
- Add egg, egg yolk, and vanilla and mix for 1 minute longer. Stir in caramel.
- Fold in flour, baking powder, baking soda, and salt. If sprinkling sea salt flakes on the top of cookies, reduce salt to 1/2 teaspoon. If you have time, I suggest chilling the dough for at least 30 minutes. This reduces the spreading of the cookies. I suggest a 24-hour chill time, if you can wait.
- If possible, use a light-colored baking sheet. Roll cookies into light balls and place on parchment paper-lined baking sheet. Bake for 8-11 minutes or until lightly golden on the sides. Remove from the oven and let set up for several minutes.
- Drizzle caramel all over each cookie before serving. If so desired, sprinkle with sea salt flakes.
DISNEYLAND'S PEANUT BUTTER COOKIES
A copycat of one of my favorite cookies of all time: Disneyland's Bakery-Style Peanut Butter Cookies!

- Preheat oven to 375 degrees F.
- In a large bowl, cream together butter, peanut butter, 1 cup sugar, and brown sugar.
- Add vanilla and mix.
- Add the eggs in one at a time, mixing well after each one.
- In a separate bowl mix the flour, baking soda and salt together. Add to mixture in mixing bowl and stir until completely combined.
- Fold in peanut butter chips.
- Roll dough into 1 1/2" balls.
- Place 1/4 cup sugar into a small bowl and roll each ball of dough in the sugar until completely covered.
- Place rolled dough on a baking sheet lined with parchment paper or sprayed with nonstick cooking spray and gently press each dough ball down to 1/2 inch thick.
- Bake the cookies for 7-9 minutes.
- Remove cookies and allow them to cool on their cookie sheet for about 5 minutes, then move to a wire rack to finish cooling.
- These cookies are very soft - you don't want them to over bake or turn brown at all. They will continue to set-up as they cool.

- Place oats in a small food processor or blender and grind until they turn powdery. Place them in a medium sized bowl and whisk in the flour, baking soda, salt, and cinnamon. Set aside.

- Line a cookie sheet with wax or parchment paper or a silicone baking mat. Scoop 1/4 cupfuls of the dough into balls and place on the cookie sheet. You do not need to space them; this is just for chilling. Cover well with plastic wrap and chill at least 4 hours or overnight before baking.
- Preheat oven to 350°F. Place cookies well spaced on cookie sheets lined with parchment paper or silicone baking mats. Slightly depress each ball with the palm of your hand.
