Un-Stuffed Bell Pepper Casserole ( Crock Pot ) image

Easy to pack for lunches. I make a batch ahead of time, freeze them into servings, then take one to work for a good home-made lunch.

1 large onion, chopped
3 large green peppers, chopped
3 garlic cloves, chopped
1 lb hot sausage
1 lb sweet sausage
32 ounces stewed tomatoes or 32 ounces diced tomatoes
32 ounces tomato sauce
1 cup uncooked long-grain white rice
4 teaspoons Worcestershire sauce
1 teaspoon salt
1/2 teaspoon pepper
2 cups sharp cheddar cheese, shredded

Steps:

  • Brown sausage then place in slow cooker.
  • Add remaining ingredients, except for the cheese.
  • Cook, covered, 3 hours on high, or 6 hours on low.
  • Sprinkle cheddar cheese and cook another 5 minutes, or until the cheese has melted.

1 lb ground turkey
1/2 cup chopped onion
16 ounces stewed tomatoes, with juice, cut up
1 large green pepper, chopped
1/2 cup long-grain rice, uncooked
1/2 cup water
2 teaspoons Worcestershire sauce
1/2 teaspoon salt
1/4 teaspoon pepper
1 cup low-fat cheddar cheese, shredded

Steps:

  • Preheat oven to 350 degrees.
  • Brown the ground turkey and then place in a 2-quart casserole dish.
  • Combine the other ingredients, except for the cheese, and place on top of the ground turkey.
  • Cover and bake for 1 hour or until the rice is tender.
  • Uncover, sprinkle with cheese and bake another 5 minutes or until the cheese is melted.

1 lb ground beef (at least 90% lean)
2 cups diced bell peppers
1/2 cup diced yellow onion
1 teaspoon Italian seasoning
1/2 teaspoon salt
1/4 teaspoon pepper
3 cloves garlic, finely chopped
2 cups Progresso™ beef flavored broth (from 32-oz carton)
1 can (14.5 oz) Muir Glen™ organic diced tomatoes, undrained
1 can (8 oz) tomato sauce
1 tablespoon soy sauce
1 cup uncooked white basmati rice
1 1/2 cups shredded cheddar cheese or cheddar cheese blend (6 oz)

Steps:

  • In 5-quart Dutch oven, cook beef, bell peppers, onion, Italian seasoning, salt and pepper over medium-high heat 8 to 10 minutes, stirring frequently, until beef is brown and vegetables soften.
  • Add garlic. Cook and stir 1 minute longer.
  • Reduce heat to medium; add broth, tomatoes, tomato sauce and soy sauce. Stir until well combined. Heat to boiling.
  • Add uncooked rice. Return to boiling; reduce heat to low. Cover and simmer about 25 minutes or until rice is tender.
  • Remove from heat; stir in 1 cup of the shredded cheese. Sprinkle with remaining 1/2 cup cheese. Cover; let stand 3 to 5 minutes or until cheese melts.

Inside-Out Stuffed Bell Peppers image

This is a really great and easy recipe. My kids love it; and of course they don't like veggies! I received this through a recipe swap from a woman named Jeannie Lofland. I add fresh garlic to the beef and sprinkle seasoning between layers. I also like to use different cheeses; cheddar can be so oily. Try putting a bit of cheese on top of the beef before adding the other ingredients.

1 lb ground beef
1/2 cup chopped onion
1 (16 ounce) can stewed tomatoes
1 large green pepper, diced into small pieces
1/2 cup uncooked long grain rice
1/2 cup water
2 teaspoons Worcestershire sauce
1/2 teaspoon salt
1/4 teaspoon pepper
1 cup shredded cheddar cheese

Steps:

  • In a skillet, brown beef and drain.
  • Transfer to a greased 2-quart casserole dish.
  • Add the next eight ingredients right on top of the beef.
  • Cover and bake at 350 degrees for about 1 hour or until rice is tender.
  • Uncover and sprinkle with the cheese; return to the oven until cheese melts; about 5 minutes.
  • If the rice doesn't cook all the way; which sometimes happens, just cover with a bit more hot or boiling water and bake a little longer.
  • So the dish doesn't get washed out by the water; put some beef oxo cubes or just use beef broth to add more flavor.

This is a really good and easy alternative to traditional stuffed peppers. The addition of stuffing is good although you can make it without. I got this recipe from the Campbell's web site.

2 1/2 cups pepperidge farm herb seasoned stuffing mix
1 tablespoon butter
1 lb ground beef
1 medium onion, chopped
1 (14 1/2 ounce) can whole canned tomatoes, cut up (I use 2 cans)
1 (8 ounce) can whole kernel corn, drained
2 medium green peppers, cut lengthwise into quarters

Steps:

  • Mix 1/4 cup stuffing and butter. Set aside.
  • Cook beef and onion in skillet over medium-high heat until browned. Pour off fat.
  • Add tomatoes and corn.
  • Add remaining stuffing. Mix lightly.
  • Arrange peppers in 2-quart shallow baking dish. Spoon beef mixture over peppers.
  • Cover.
  • Bake at 400 degrees Fahrenheit for 25 minutes or until peppers are tender. Sprinkle with reserved stuffing mixture. Bake 5 minutes or until golden.

4 green bell peppers, tops removed, seeded
1 pound ground turkey
2 tablespoons olive oil
½ onion, chopped
1 cup sliced mushrooms
1 zucchini, chopped
½ red bell pepper, chopped
½ yellow bell pepper, chopped
1 cup fresh spinach
1 (14.5 ounce) can diced tomatoes, drained
1 tablespoon tomato paste
Italian seasoning to taste
garlic powder to taste
salt and pepper to taste

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Wrap the green bell peppers in aluminum foil, and place in a baking dish. Bake 15 minutes in the preheated oven. Remove from heat.
  • In a skillet over medium heat, cook the turkey until evenly brown. Set aside. Heat oil in the skillet, and cook onion, mushrooms, zucchini, red bell pepper, yellow bell pepper, and spinach until tender. Return turkey to the skillet. Mix in the tomatoes and tomato paste, and season with Italian seasoning, garlic powder, salt, and pepper. Stuff the green peppers with the skillet mixture.
  • Return peppers to the oven, and continue cooking 15 minutes.
