PEANUT BUTTER SANDWICH COOKIES
A very rich, very addicting cookie. Tastes best when cookies are stored in a tight container with several pieces of bread at the bottom. You may need a little extra milk to get the filling to the right consistency.

- Preheat oven to 375 degrees F (190 degrees C).
- In a large mixing bowl, cream the shortening, 1 cup creamy peanut butter and white and brown sugars. Add vanilla and then eggs, one at a time. Beat well after each addition. In a small bowl, combine flour, baking soda and salt. Add slowly to creamy mixture.
- Shape into 1 inch balls and place on an ungreased cookie sheet, 2 inches apart. Flatten balls with a fork.
- Bake for 7-8 minutes depending on size (I tend to keep a close eye on them and remove them as soon as they start to get golden. This helps to make them chewy.) Cool on wire racks.
- To Make the filling: Combine 1/2 cup creamy peanut butter, confectioners' sugar, vanilla extract, and milk in a small bowl adding enough milk to make for a creamy, frosting like texture. Spread frosting on one cookie and top off to make "sandwich".

- Heat oven to 375°F. Line cookie sheets with cooking parchment paper. In large bowl, stir cookie mix, vegetable oil, water, egg and flour until soft dough forms.
- Shape dough into 20 (1 1/2-inch) balls. Flatten each ball to form 2 1/2-inch circle. Press 1 milk chocolate into center of each circle, making sure to form dough around chocolate to enclose; reshape into balls. Roll in sugar. Place 2 inches apart on cookie sheets. Discard remaining sugar.
- Bake 8 to 10 minutes or until edges are set. Cool 2 minutes; remove from cookie sheets to cooling rack. Cool completely, about 20 minutes. Store covered in airtight container.

- Heat oven to 350 degrees. Line 2 baking sheets with parchment paper.
- Whisk flour, baking powder and salt in a small bowl. In a large bowl, using a wooden spoon or spatula, smash and mix butter and both sugars together until smooth and creamy. Add peanut butter and stir until incorporated. Add egg and vanilla, and stir until well combined. Add flour all at once and fold gently until dry bits disappear, then fold in the peanut butter chips and peanuts, if using, until evenly dispersed.
- Using a small cookie scoop or a measuring tablespoon, drop rounds of dough on a prepared sheet, spacing 1½ inches apart. Bake until just dry on top and set along the edges, 10 to 11 minutes. Do not overbake. Scoop and drop dough onto the second sheet while the first bakes, then slide into the oven when the first comes out.
- Place the baking sheets on racks to cool completely. The cookies will keep in an airtight container at room temperature for up to 1 week or in the freezer for up to 2 months.

Place butter, sugar, and peanut butter in the bowl of a large stand mixer, fitted with a paddle attachment. Beat on medium speed until creamy, then beat in eggs, yogurt, and vanilla. In a separate medium bowl, combine flour, baking soda, and salt. Add to liquid mixture, and beat on medium speed until a cookie dough forms.
- Roll dough into 1-in balls and place on prepared baking sheet. Use a fork to make a criss-cross pattern on cookie balls, flattening slightly. Bake cookies at 350F 10-11 minutes, or until edges of cookies are golden. (middles will still seem a little soft---this is ok) Cool cookies on baking sheet 5 minutes, before transferring to a wire cooling rack to cool completely.
- Make the filling: Place butter, peanut butter, sugar, and vanilla in a medium bowl. Beat on medium speed with an electric mixer until creamy. Beat in milk until filling reaches a creamy, spreadable consistency.
- Assemble the sandwiches: Divide filling between half of cookies, placing 1-2 tablespoons on the bottom of each. Top with remaining cookies and gently press to spread filling, creating a sandwich. Enjoy sandwiches immediately or place in refrigerator to chill until ready to serve.
