(TInsalata caprese (literally, the salad from Capri) is the perfect summertime dish for cooks in a hurry; slicing is the hardest part. Can be prepared in 45 minutes or less.

2 pounds vine-ripened tomatoes (about 4 large), sliced 1/4 inch thick
1 pound fresh mozzarella, sliced1/4 inch thick
1/4 cup packed fresh basil or arugula leaves, washed well and spun dry
1/4 teaspoon dried oregano, crumbled, if using arugula instead of basil
3 to 4 tablespoons extra-virgin olive oil
fine sea salt to taste
freshly ground black pepper to taste

Steps:

  • On a large platter arrange tomato and mozzarella slices and basil leaves, alternating and overlapping them. Sprinkle salad with oregano and arugula and drizzle with oil. Season salad with salt and pepper.

For the best flavor be sure to use fresh whole-milk mozzarella it puts the packaged varieties to shame. You can find fresh mozzarella in Italian delis, gourmet markets, cheese shops and some grocery stores.

4 ripe tomatoes, cut into wedges
14 ounces fresh mozzarella cheese, diced
1 red onion, sliced
⅓ cup extra virgin olive oil
⅓ cup balsamic vinegar
¼ cup chopped fresh basil

Steps:

  • In a large bowl, combine the tomatoes, cheese, onion, oil, vinegar, basil, and salt and pepper to taste. Toss and chill for 1 hour. Serve on large platter.

Summer salad of fresh mozzarella and heirloom tomatoes, over mixed greens with a fresh basil vinaigrette.

3 - 5 heirloom tomatoes, different colors and sizes, thickly sliced
1 - 2 balls, fresh mozzarella, drained and thickly sliced
Mixed baby lettuces
½ cup good quality extra-virgin olive oil
1½ tablespoons red wine vinegar
1 tablespoon water
1 garlic clove, chopped, preferably heirloom from the farm stand
1 teaspoon Dijon mustard
½ teaspoon kosher salt
2 cups loosely packed fresh basil leaves

Steps:

  • Scatter a serving platter with mixed baby lettuces. Arrange overlapping layers of tomatoes and mozzarella on top of the lettuces. Sprinkle with salt and fresh cracked pepper.
  • Put olive oil, vinegar, water, chopped garlic, mustard and salt into a blender. Coarsely chop the basil leaves and add to the blender. Mix on high for about 30 seconds until smooth. If necessary, add a little more water or olive oil to thin. Transfer to a jar.
  • With a spoon, drizzle basil vinaigrette all over tomato and cheese salad. Garnish with a few torn basil leaves and serve. Leftover vinaigrette will keep covered in the fridge for several days, bring to room temp for serving.

2 lbs. Mozzarella Cheese (whole milk, sliced )
4 Tomatoes (washed and sliced)
6 oz. Basil (Fresh)
1/4 cup Balsamic Vinegar
2 tbsp extra-virgin olive oil
Salt
Black Pepper (freshly ground)

Steps:

  • Starting in the middle of the plate begin arranging the slices like so: one slice of mozzarella, one slice of tomato one large leaf (or two small) of fresh basil.
  • Continue in a circle until all the ingredients are used and you have filled the plate in a spiral.
  • Season with Salt and Pepper to taste.
  • Pour the balsamic vinegar glaze and olive oil evenly over the salad. (This is optional because Classic Caprese Salad does not include a dressing or vinegar.)
  • Serve and enjoy immediately.

  • Slice tomatoes and mozzarella with a very sharp knife into 1/4-inch (0.5 cm) slices. Mozzarella slices the best when it is straight out of the fridge.
  • Layer tomatoes and mozzarella on a plate, placing a slice of tomato, then a slice of mozzarella until you run out of them.
  • Place some basil leaves around or on top of the salad. Drizzle the Caprese salad with extra virgin olive oil and sprinkle with salt and freshly ground black pepper to taste. Drizzle with balsamic reduction (optional).
