3 cups fresh basil
¾ cup pine nuts
¾ cup vegetarian parmesan cheese
3 cloves garlic
¾ cup olive oil, divided
½ cup ricotta cheese
salt, to taste
pepper, to taste
2 medium zucchinis
2 medium yellow squashes
4 large carrots
1 large eggplant
1 tablespoon butter
1 sheet puff pastry, thawed
2 cups rice, uncooked
½ teaspoon dried oregano

Steps:

  • Combine the basil, pine nuts, Parmesan, garlic, ½ cup (120 ml) of olive oil, ricotta, salt, and pepper in a food processor and puree until blended and smooth. Set aside.
  • Using a vegetable peeler, peel the zucchini, yellow squash and carrots into ribbons.
  • Cut the eggplant lengthwise into thin slices, then slice in half lengthwise.
  • Preheat the oven to 350°F (180°C).
  • Grease a 9-inch (23 cm) tart dish with butter using a piece of parchment paper.
  • Lay the puff pastry in the tart dish and delicately press it flat against the bottom and up the sides. Crimp any dough hanging over the edges and prick the bottom all over with a fork.
  • Lay a piece of parchment paper over the pastry and pour the rice evenly on top. The rice helps keep the bottom of the crust from rising while baking.
  • Parbake the crust for about 15 minutes, until the puff pastry starts to cook.
  • Carefully lift the parchment paper to remove the rice (save for using in other recipes or discard). Increase the oven temperature to 400°F (200°C).
  • Spread the ricotta pesto mixture evenly on the bottom of the tart.
  • Starting from the outside, line the walls of the tart with the veggie ribbons, alternating veggies, until the entire shell is filled.
  • Sprinkle the oregano on top and brush with olive oil. Season with salt and pepper to taste.
  • Bake for 35-40 minutes, until the veggies are tender.
  • Let cool for a few minutes.
  • Slice and serve.
  • Enjoy!

Cook with Color and make this rainbow custard tart. This dish was inspired by Tasty's colorful cookware sets and is easy to make, with a sweet marshmallow and cereal crust, balanced custard filling in rainbow colors, and lots of fresh fruit on top.

¼ cup sugar
1 ¼ cups mini marshmallows
3 cups fruit flavored rice cereal
⅓ cup sugar
½ cup cornstarch
1 lemon, zested
½ teaspoon kosher salt
8 large egg yolks, room temperature
4 cups whole milk
½ stick unsalted butter, room temperature
2 teaspoons vanilla extract
natual food coloring, red, yellow, green and blue
strawberry, hulled and sliced
cherry, stemmed and pitted
mango, peeled, pitted, and cut into shapes with small cookie cutters
pine, peeled, pitted, and cut into shapes with small cookie cutters
green kiwi, peeled, pitted, and cut into shapes with small cookie cutters
blackberry, halved
red dragon fruit, peeled, pitted, and cut into shapes with small cookie cutters

Steps:

  • Make the tart crust: Generously grease a 10-inch tart pan with nonstick spray.
  • In a large nonstick skillet, melt the sugar over low heat, until dissolved, but not caramelized, about 2 minutes. Stir in the marshmallows until completely melted. Turn off the heat.
  • Using a heatproof rubber spatula, add the rice cereal to the marshmallow mixture and stir until completely coated and incorporated.
  • Carefully transfer the cereal mixture to the prepared tart pan. Generously grease your hands with nonstick spray, then use to spread and pat down the mixture into an even layer against the bottom and up the sides of the pan. Transfer the crust to the refrigerator to chill for about 20 minutes, or until ready to fill.
  • Make the rainbow pastry cream: In a medium saucepan, whisk together the sugar, cornstarch, lemon zest and salt.
  • In a large bowl, whisk together the egg yolks and milk. Add the mixture to the saucepan, along with the butter, and bring to a boil over medium heat, whisking constantly. Let boil for 2 minutes, then remove from the heat and stir in the vanilla.
  • Strain the pastry cream through a fine-mesh sieve into a large heatproof bowl.
  • Divide the pastry cream evenly between 6 medium bowls, approximately ¾ cups each. Dye each bowl of pastry cream as follows: to make red, add 10 drops of red food coloring. To make orange, add 10 drops of red and 12 drops of yellow. To make yellow, add 8 drops of yellow. To make green, add 12 drops of green. To make blue, add 10 drops of blue. To make purple, add 10 drops of blue and 10 drops of red. Stir each bowl with a clean whisk or small rubber spatula until evenly colored.
  • Assemble the tart: Fill the cereal crust with the colored pastry cream in even lines, starting with red, then orange, yellow, green, blue, and purple. Return the tart to the refrigerator to chill for at least 1 hour, or overnight.
  • Just before serving, decorate the tart with the color-coordinating fruits: strawberries and cherries over the red cream, mango over the orange, pineapple over the yellow, kiwi over the green, blueberries over the blue, and blackberries and dragon fruit over the purple.
  • Slice and serve.

1.5 kg apple, preferably Honeycrisp or Granny Smith
3 tablespoons water
½ cup sugar
3 tablespoons unsalted butter
vanilla ice cream, for serving

Steps:

  • Using a 9-inch (23 cm) flat-sided cake pan as a template, cut a circle out from the puff pastry. Using a fork, poke holes all over to provide ventilation. Set aside.
  • Peel and quarter the apples, using a spoon or melon baller to remove the cores.
  • Preheat oven to 375°F (190°C).
  • In a large saucepan over medium heat, distribute the water and sugar evenly and cook until light amber in color, stirring to help melt any lumps, 5-7 minutes. Add the butter, stirring constantly until the color is a creamy light brown. Add the apples, stirring until they are coated in a thick layer of caramel.
  • Cook for about 15-20 minutes, turning the apples constantly so that they bathe in the caramel. Remove from the heat when the caramel has reduced and little remains in the bottom of the pan. Be careful not to burn the caramel, tasting it from time to time to ensure it does not taste bitter.
  • Arrange the apple slices in concentric circles on the bottom of the cake pan. Press the apples tightly against each other, then pour the remaining caramel over the top.
  • Lay the circle of puff pastry on top. Tuck the puff pastry down the sides of the pan.
  • Bake for 45-50 minutes, until the pastry is golden brown and firm. Cool for about 1 hour, then invert onto a plate.
  • Slice and serve with vanilla ice cream.

½ cup butter, softened and cut into 1-inch (2 1/2 cm) cubes
⅔ cup sugar
2 cups flour
2 mangoes
2 oz cream cheese, softened
⅓ cup greek yogurt
½ teaspoon orange zest
2 tablespoons sugar
2 tablespoons orange juice
1 teaspoon vanilla extract

Steps:

  • Preheat the oven to 375˚F (190˚C).
  • In a large bowl, beat the egg.
  • Add the butter and sugar, and mix.
  • Add the flour and mix until combined. The dough will be crumbly in your hand.
  • Transfer the crust mixture into a greased 8-inch (20 cm) tart pan one handful at a time, pressing it down to create an even, thin layer over the entire pan, about ¼ inch (6 mm).
  • NOTE: Freeze and save remaining pie crust crumble for later.
  • Prick the crust with a fork to prevent it from puffing up in the oven.
  • Bake the crust for 30-40 minutes, or until golden brown.
  • On a cutting board, cut a half inch (1 cm) off the bottom and top off the mango to give it a flat base. Standing it upright, make exterior slices from the top to bottom to take the skin off.
  • Remove the meat from the sides and thinly slice.
  • In a medium bowl, combine the cream cheese, Greek yogurt, orange zest, sugar, orange juice, and vanilla extract. Mix thoroughly.
  • Transfer the yogurt mixture to the cooled tart crust.
  • Starting from the outer edge, place mango slices in a circular pattern, making full rotations all the way to the center.
  • Chill the fruit tart for at least an hour.

½ cup water
1 stick cinammon sticks
1 cup milk
½ cup double cream
5 egg yolks
1 egg
2 tablespoons vanilla extract
¼ cup corn flour
18 oz puff pastry

Steps:

  • Preheat oven to 220°C (425°F).
  • In a small pan, place the sugar, water, and cinnamon stick. Simmer for 3 minutes and set aside.
  • Combine milk and cream in a saucepan and place over a medium heat. Bring mixture to a boil, then remove from the heat and set aside.
  • To a large bowl, add the egg yolks, whole egg, vanilla extract, and corn flour. Whisk until fully combined and no lumps remain.
  • Temper the egg mixture by introducing the hot milk and cream in two 100 milliliter batches, then whisk.
  • Return mixture to the saucepan and place over a low-medium heat. Whisk continually until mixture thickens. Turn off heat.
  • Remove cinnamon stick from the syrup and slowly trickle into the custard, whisking continually.
  • Lightly flour a work surface and cut puff pastry into 12 equal pieces.
  • To a lightly greased muffin tin, push each piece of puff pastry down and up into the sides of the muffin holes until evenly distributed.
  • Pour custard into each muffin tin so each one is three quarters full. Bake for 16-20 minutes until golden and brown.
  • Serve warm with a dusting of icing sugar and a sprinkle of cinnamon.
