3 tablespoons lime juice
3 tablespoons soy sauce
3 tablespoons stir-fry sauce
3/4 teaspoon ground ginger
1/2 teaspoon cayenne pepper
3 minced garlic cloves
1 lb pork tenderloin

Steps:

  • In a bowl, combine first six ingredients. Place pork in large resealable plastic bag. Add half the marinade, seal bag, turn to coat and then refrigerate for two hours, turning occasionally.
  • Cover and refrigerate remaining marinade for basting.
  • Drain and discard marinade, grill pork covered, over hot heat for 15-20 minutes or until meat thermometer reads 160°F and juices run clear, basting occasionally with reserved marinade.

1 lb pork tenderloin (silverskin removed)
1/4 cup apricot preserves
2 cloves garlic (minced)
1/2 tsp coriander
1/4 cup soy sauce
1 tbsp rice vinegar
2 tbsp peanut butter
1 lime (juiced)
1/4 cup orange juice
1/2 tsp crushed red pepper flakes
Freshly cracked pepper (to taste)
1 tsp vegetable oil
1 tbsp fresh cilantro (chopped)

Steps:

  • Combine the apricot preserves, minced garlic, coriander, soy sauce, rice wine vinegar, peanut butter, lime juice, orange juice, crushed red pepper, and freshly cracked black pepper in a bowl; whisk until well combined - make sure to break up the peanut butter. Remove the silverskin from the pork tenderloin (click here for instructions). Place pork tenderloin in a large Ziploc bag then pour the marinade on top. Squeeze out the air, and seal, using your hands to squish the bag and distribute marinade evenly. Place into the refrigerator and let marinate for at least a few hours up to 8 hours.
  • Preheat oven to 425 degrees. Heat the vegetable oil in a large OVEN PROOF skillet that has been coated in cooking spray over medium-high heat. Add the pork tenderloin, and sear on all sides, until it's nicely browned, about 5-7 minutes. Place the entire skillet into the preheated oven, and cook until a meat thermometer registers 150 degrees, about 15 minutes. Side Note: Because the marinade has sugar in it, the meat has a tendency to burn. While the pork bakes in the oven, turn it often so all sides are evenly browned without being burnt. Remove from oven and let sit for 10 minutes before slicing.
  • While the pork is cooking in the oven, pour the marinade into a small saucepan. Bring to a boil over medium-high heat, stirring often. Boil for 2 minutes, then turn off the heat. Pour sauce over the sliced tenderloin and sprinkle with chopped cilantro. Enjoy!

1 lb pork tenderloin
2 tablespoons low sodium soy sauce
2 tablespoons reduced-fat creamy peanut butter
1 teaspoon crushed red pepper flakes
2 cloves garlic (minced)
Vegetable cooking spray
1/4 cup mango chutney

Steps:

  • Preheat oven to 375°F.
  • Trim fat from tenderloin. Combine soy sauce, peanut butter, red pepper flakes and garlic, stirring well. Spread mixture over tenderloin. Place on a rack in a roasting pan coated with cooking spray. Insert meat thermometer into thickest part of tenderloin, if desired. Bake, uncovered, for 30 minutes.
  • Brush tenderloin with mango chutney and bake for an additional 10 minutes, or until meat thermometer registers 160°F, basting often with chutney. Remove from oven and let stand 10 minutes before slicing.

2 cloves garlic
½ cup chopped green onions
1 tablespoon chopped fresh ginger root
1 cup roasted, salted Spanish peanuts
2 tablespoons lemon juice
2 tablespoons honey
½ cup soy sauce
2 teaspoons crushed coriander seed
1 teaspoon red pepper flakes
½ cup chicken broth
½ cup melted butter
1 ½ pounds pork tenderloin, cut into 1 inch cubes

Steps:

  • In a food processor, process garlic, green onions, ginger, peanuts, lemon juice, honey, soy sauce, coriander, and red pepper flakes. Puree until almost smooth. Pour in broth and butter, and mix again.
  • Place pork cubes in a large resealable plastic bag, and pour mixture over meat. Marinate in the refrigerator for 6 hours, or overnight.
  • Preheat grill for medium heat. Remove pork cubes from bag, and thread onto skewers. In a small saucepan, boil the marinade for 5 minutes. Reserve a small amount of the marinade for basting, and set the remainder aside to serve as a dipping sauce.
  • Lightly oil preheated grill. Grill for 10 to 15 minutes, or until well browned, turning and brushing frequently with cooked marinade. Serve with dipping sauce.

While the pork is in the oven, pour the marinade into a small saucepan. If it seems too thick, add a splash or orange juice or water. Bring to a boil over medium-high heat, stirring constantly. Boil for 1 minute, then turn off heat. Pour sauce over the sliced tenderloin and sprinkle with chopped cilantro for garnish.

  • Trim the pork of excess fat and silverskin. Butterfly the tenderloins by splitting each one lengthwise almost, but not quite all the way through, so the halves remain attached.
  • Open each tenderloin like a book, cover with plastic wrap, and pound to an even 1/2-inch thickness with a meat mallet or the bottom of a small skillet. Put the pork tenderloins in the large, shallow bowl with the marinade and turn to coat. Let marinate for 10 to 20 minutes on the counter (or up to 8 hours in the refrigerator).
  • While the pork marinates, heat a BBQ on high. Remove the tenderloins from the marinade, letting the excess marinade drip back into the bowl (don’t discard the marinade). Grill the tenderloins, turning once, until just cooked through, 5 to 7 minutes total. Transfer to a carving board and let rest for 5 minutes.
