This is the salad for people who might not think a main-course salad is really a thing. (And if you've ever ordered Chinese Chicken Salad on a menu, this is for you.)

½ cup creamy peanut butter (preferably natural)
¼ cup rice vinegar
1 clove garlic (finely minced)
2 tablespoons soy sauce (low-sodium or tamari (which is gluten-free))
2 tablespoons lime juice
2 teaspoons finely minced fresh ginger
1 teaspoon Sriracha or other hot sauce
Kosher salt and freshly ground pepper to taste
4 cups thinly sliced green cabbage (preferably Napa)
4 cups thinly sliced romaine (iceberg is another possibility
2 carrots peeled and grated
1 red yellow or orange bell pepper (or a combo of half of two different colored peppers, cored, seeded and very thinly slivered)
4 cups shredded cooked chicken
4 scallions (trimmed and sliced (white and green parts))
½ cup crushed roasted peanuts
¼ cup fresh cilantro leaves (optional)
Lime wedges to serve

Steps:

  • Make the Dressing: In a food processor combine the peanut butter, rice vinegar, garlic, soy sauce, lime juice, ginger, Sriracha and salt and pepper - you can also which this all together in a bow of you prefer.
  • Make the Salad: In a large bowl combine the lettuce, cabbage, carrots, bell pepper and chicken. Pour oven the dressing and toss to combine. Pile into a shallow serving bow and top with the scallions, peanuts and cilantro leaves. Serve with the lime wedges.

1 cup uncooked long grain white rice
2 cups water
1 pound fresh green beans, trimmed and snapped
2 teaspoons olive oil
1 pound skinless, boneless chicken breast halves - cut into chunks
¾ cup low-sodium chicken broth
⅓ cup smooth peanut butter
2 teaspoons honey
1 tablespoon low sodium soy sauce
1 teaspoon red chile paste
2 tablespoons lemon juice
3 green onions, thinly sliced
2 tablespoons chopped peanuts

Steps:

  • Bring the rice and water to boil in a pot. Reduce heat to low, cover, and simmer 20 minutes.
  • Place green beans in a pot fitted with a steamer basket over boiling water, and steam 10 minutes, or until tender but crisp.
  • Heat the oil in a skillet, and cook the chicken 5 minutes on each side, or until juices run clear.
  • Mix the chicken broth, peanut butter, honey, soy sauce, chile paste, lemon juice in a saucepan over medium heat. Cook and stir 5 minutes, until slightly thickened. Mix in the green beans. Serve over rice. Garnish with green onions and peanuts.

Recipe video above. Fun to say, delicious to eat, the Gado Gado peanut sauce will make any vegetables into a big, healthy, tasty meal! Use any veg you want - the ones I've used are in the spirit of traditional Indonesian Gado Gado. Using Thai Red Curry Paste is an effective shortcut - it uses a lot of the ingredients used in Gado Gado sauce. Saves time, effort and money!All the veg can be warm or at room temp, so cook them first. Tempeh/tofu is best hot and crispy fresh out of the skillet.

1/3 cup natural peanut butter, smooth or crunchy (your choice) (Note 1)
4 tsp red curry paste (, store bought (Maesri brand best, Note 2))
3 tsp Kecap Manis ((Indonesian sweet soy sauce, Note 3))
1 tsp sambal oelak or other chilli paste ((adjust spiciness to taste))
1/2 tsp salt
1 large garlic clove (, pressed using garlic press (~ 3/4 tsp))
1 1/2 tbsp lime juice ((Note 4))
1/2 cup coconut milk (, full fat (Ayam brand best))
1/2 cup water
1 bunch spinach (, roots trimmed)
4 cups beansprouts
200g / 7 oz potato ( - small halved, large peeled chopped 2 cm / 1" cubes OR 1.5cm / 1/2" slices)
1 cucumber (, sliced on the diagonal ( or 1/2 long cucumber ie Telegraph/English))
2 - 3 boiled eggs (, peeled and halved)
15 prawn crackers (, optional (Note 6))
2 tbsp vegetable or peanut oil
200g / 7 oz tempeh ((or firm tofu, Note 7))
1 tbsp finely chopped peanuts ((highly recommended))
Red chilli (, finely sliced, optional (small = spicy, large = less spicy))

Steps:

  • Mix all ingredients in a small saucepan over medium low heat. Bring to simmer then cook for 5 minutes, stirring regularly so the bottom doesn't catch, until it thickens. If too thick, just add more water - should be able to drizzle it (see video for thickness).
  • Taste and adjust as follows: lime for more sour, salt, sugar for sweet.
  • Cover and keep warm.
  • Bring a saucepan of water to the boil.
  • Add potatoes and cook for 5 minutes or until cooked through. Use a slotted spoon to transfer to colander to drain.
  • Cook beansprouts for 3 minutes or until just wilted. Transfer to colander, press out excess water.
  • Add spinach, push under to submerge - will instantly wilt. Remove, transfer to colander, press out excess water.
  • Slice into 0.75 x 5 cm / 1/3 x 2" slices (or thereabouts).
  • Heat oil in a skillet over medium high heat. Cook tempeh 2 min on each side until deep golden and crispy. (Tofu ~ 1 1/2 min)
  • Either make one platter for sharing, or individual. Vegetables and egg can be served warm or at room temp, sauce should be served warm (it thickens when cool).
  • Place vegetables and tempeh on serving plate, top with egg.
  • Pour sauce into serving bowl.
  • Serve Gado Gado Salad with peanut sauce, peanuts for sprinkling, fresh chillies and prawn crackers on the side.

1 whole chicken breast or 2 boneless skinless breasts, poached and shredded about 4 cups shredded chicken

1 bunch scallions, white part and green, thinly sliced
1/4 cup slivered fresh mint leaves
1/4 cup chopped cilantro
1 small red bell pepper, cut in thin strips
1 serrano pepper, finely chopped seeded if desired
2 cups mung bean sprouts or sunflower sprouts
1 romaine lettuce heart, leaves separated, washed and dried
1/4 cup chopped roasted peanuts
1/4 cup freshly squeezed lime juice
2 teaspoons finely chopped fresh ginger
1 garlic clove, minced
1 tablespoon Southeast Asian fish sauce
Pinch of cayenne
2 tablespoons crunchy or smooth natural peanut butter (more to taste)
1/3 cup buttermilk

Steps:

  • Place the chicken in a large bowl, and season with salt and pepper. Add the white part of the scallions, the mint, cilantro, red pepper, minced chile pepper and sprouts. Toss together.
  • Combine the lime juice, ginger, garlic, fish sauce and cayenne. Stir together. Add the peanut butter, and combine well. Whisk in the buttermilk. Taste and adjust seasonings.
  • Line a platter with the lettuce leaves. Toss the chicken mixture with the dressing, and arrange over the lettuce. Sprinkle the peanuts and the scallion greens over the top, and serve.

Living in Alabama, where lots of peanuts are grown, I've learned to fix many different dishes using this locally raised crop. This is one of my family's favorites.

1/4 cup cider vinegar
1-1/2 teaspoons vegetable oil

1 green onion, thinly sliced
1 cup chow mein noodles

Though Satay Chicken is better known as Thai or Malaysian food, it actually originated from Indonesia and the Indonesian version is by far the simplest. The Peanut Sauce is my own - refer to the notes for why I prefer this to the authentic version. It is thick so it is great for dolloping, rather than a thin dipping sauce. Satay Chicken is fabulous for outdoor BBQ's, parties and for fast midweek meals! They also reheat really well in the microwave. They can be cooked on the outdoor grill, on the stove or under the grill/broiler.

1 lb / 500g chicken thigh fillets ((skinless and boneless))
2 1/2 tbsp kecap manis ((thick sweet soy sauce - see Note 1))
1 tbsp unsalted butter (, melted)
12 - 14 small bamboo skewers (, soaked in water for at least 30 minutes)
1 tbsp cooking oil ((peanut, canola, vegetable))
2 garlic cloves (, minced)
1 small or 1/2 large onion (, diced (red, brown, yellow or white))
3 birds eye chillis (, sliced (or sub with hot sauce))
1/2 cup peanut butter ((smooth or crunchy))
1 cup coconut milk ((full fat is better, but light is ok))
2 1/2 tbsp kecap manis ((Note 1))
1/2 tbsp soy sauce
1/2 tsp salt
1/4 cup crushed unsalted roasted peanuts ((buy crushed or chop your own))
1 - 2 tbsp fresh lime juice
Crushed peanuts
Lime wedges
Sliced shallots/scallions

Steps:

  • Cut the chicken into 1.5cm/0.5" cubes. Thread onto skewers - 4 to 5 pieces per skewer.
  • Combine kecap manis and butter, then brush onto chicken.
  • Cook the skewers on a hot BBQ (outdoor grill) or on the stove in a large non stick fry pan (add a splash of oil, and make sure the skewers will fit in the pan). Grill/broiler would also work.
  • Serve, garnished with crushed peanuts, shallots and with lime wedges and Peanut Sauce on the side.
  • Heat oil in a small saucepan over medium high heat. Add garlic, onion and chillis and cook for 3 minutes until onion is translucent.
  • Turn heat down to medium, then add peanut butter, coconut milk, kecap manis, soy sauce and salt. Simmer for 10 minutes, whisking occasionally.
  • Use a handheld stick to puree (so the onion and chilli blends throughout the sauce - this is key). (See Note 2 for blending instructions) Stir through crushed peanuts and lime juice and simmer for 2 minutes. Allow to cool slightly before serving or to room temperature - it will thicken.

3/4 teaspoon salt
1/2 teaspoon pepper
2 tablespoons vegetable oil
1 medium onion, chopped (1/2 cup)

1/4 cup chili sauce
1/2 teaspoon ground red pepper (cayenne)
1 cup water
1/4 cup chopped salted peanuts
1/4 cup chopped red bell pepper

Steps:

  • Sprinkle chicken with salt and pepper.
  • Heat oil in 12-inch skillet or 4-quart Dutch oven over medium heat. Cook chicken in oil about 15 minutes, turning occasionally, until brown on all sides. Cover and cook over low heat about 20 minutes or until juice is no longer pink when centers of thickest pieces are cut. Remove chicken from skillet with tongs.
  • Drain all but 1 tablespoon drippings from skillet; heat over medium heat. Cook onion in drippings, stirring occasionally, until tender; reduce heat. Stir in peanut butter, chili sauce and red pepper. Gradually stir in water, stirring constantly, until peanut butter is melted.
  • Add chicken. Spoon sauce over chicken. Heat to boiling; reduce heat. Simmer uncovered about 5 minutes, spooning sauce frequently over chicken, until sauce is slightly thickened. Serve sauce over chicken. Sprinkle with peanuts and bell pepper.

Steps:

  • Heat the oil in a sauce pan over medium-high heat and cook the onions until soft and translucent, 5 minutes. Add the garlic and ginger and cook for another 2 minutes. Add the chicken and cook for 3-4 minutes. Add the sweet chili sauce, tomato sauce or ketchup, chili powder, peanut butter, and sugar and stir to combine. 24 wooden skewers

Steps:

  • Combine chicken thighs, 3/4 teaspoon salt, white pepper, and sunflower seed oil in a bowl. Cover and refrigerate for 1 to 2 hours.
  • Soak wooden skewers in water to prevent burning during cooking.
  • Bring water, peanut butter, kecap manis, brown sugar, garlic, and 1/2 teaspoon salt to a boil in a small saucepan; stir to combine. Remove from heat and add lime juice.

1/3 cup soy sauce
3 tablespoons minced garlic
3 tablespoons peanut butter
1/4 cup minced fresh cilantro
1/2 teaspoon hot pepper sauce
4 boneless skinless chicken breast halves (4 ounces each)
4 cups torn mixed salad greens
4 small tomatoes, seeded and chopped
4 green onions, chopped
1 cup shredded cabbage
1 medium cucumber, sliced
1 cup honey-roasted peanuts
1 cup ranch salad dressing
2 to 4 drops hot pepper sauce

Steps:

  • In a large saucepan, combine the soy sauce, garlic, peanut butter, cilantro and hot pepper sauce; cook and stir until heated through and blended. Cool to room temperature. , Pour soy sauce mixture into a large resealable plastic bag; add chicken. Seal bag and turn to coat; refrigerate for 1 hour., Drain and discard marinade. Grill chicken, uncovered, over medium heat for 3 minutes on each side. 4 cloves garlic
50 gram palm sugar (Indonesian: gula Jawa)
1 to 10 Thai chilies (Indonesian: cabe rawit), seeded - use as much or as little as you like

1 teaspoon shrimp paste (Indonesian: terasi, Malaysian: belacan), toasted, omit to make a vegetarian sauce
1 teaspoon tamarind pulp, soaked in 2 tablespoon of warm water to get the juice
juice of 1 lime
1 tablespoon sweet soy sauce (Indonesian: kecap manis)
2 cup hot water
4 potatoes, peeled, cubed, and boiled

Steps:

  • Using a food processor, grind peanuts, garlic, palm sugar, chilies, terasi/belacan/shrimp paste, and salt. Try to stop when the peanuts still have some chunks and not completely turned into a smooth paste.
  • Transfer the peanut mixture into a mixing bowl, add tamarind juice, lime juice, and sweet soy sauce.
  • Then add enough hot water to the mixture while stirring to get the consistency of the peanut sauce that you like.
  • Arrange all gado-gado ingredients in a plate/bowl, the carbs, the protein, and the vegetables. Garnish with fried shallots and crackers. Serve the peanut sauce in a separate bowl.
  • Just prior to eating the salad, pour the peanut sauce and mix well.

1 large zucchini, cut into thin sticks
3 celery stalks, cut into sticks
6 oz unsalted or salted peanuts, i used salted
2 cooked chicken breasts fillets, diced
DRESSING
6 Tbsp peanut butter, crunchy
6 Tbsp olive oil
2 Tbsp light or regular soy sauce, i used regular
1 red chili,
2 tsp sesame oil
4 tsp lime juice
1 tsp salt...i added this since it is bland

Steps:

  • 1. Cut potatoes into small dice.
  • 2. Cook the potatoes in a pan of boiling water for 10 minutes or until tender. Drain them and let cool.
  • 3. Transfer the cooked potatoes into a salad bowl.
  • 4. Add the pineapple, carrots, bean sprouts, scallions, zucchini, celery, peanuts, and sliced chicken to the potatoes. Toss salad ingredients together.
  • 5. To make the dressing, put the peanut butter into a small mixing bowl and gradually whisk in the olive oil and soy sauce.
  • 6. Stir the red chili, sesame oil, and lime juice. Mix well.
  • 7. Pour the spicy dressing in the salad and toss lightly to coat all the ingredients. Serve immediately.

Cut each tofu slice crosswise into 1/2-inch-thick strips. Combine cornstarch, curry powder, and 1/4 teaspoon salt; gently toss with tofu to coat.
