SUPER EASY BREAKFAST SAUSAGE LOAF



Super Easy Breakfast Sausage Loaf image

I was searching for a quick and easy breakfast for a group of picky youngsters and came up with my own super easy breakfast sausage loaf from ingredients normally found in any fridge. This can be as basic as dinner rolls/sausage/eggs/cheese...or jazz it up a bit with onions and green peppers. This can be put together the night before, frozen or made on the fly.

1 serving cooking spray
1 pound bulk pork sausage
¼ cup brown sugar
1 tablespoon butter
4 large eggs large eggs
2 tablespoons milk
1 pinch salt and ground black pepper to taste
1 (8 ounce) package refrigerated crescent rolls
1 cup shredded Colby-Monterey Jack cheese

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Spray a 9x5-inch loaf pan with cooking spray.
  • Heat a large skillet over medium-high heat and stir in the sausage and brown sugar. Cook and stir until the meat is crumbly, evenly browned, and no longer pink. Drain and discard any excess grease. Transfer sausage to a bowl; wipe the skillet clean.
  • Melt the butter in the clean skillet over low heat. In a bowl, whisk together the eggs, milk, salt, and black pepper. Pour the eggs into the skillet. Allow the eggs to cook undisturbed until they begin to set, then gently stir the eggs until the curds are separate and set but not dry, 5 to 7 minutes.
  • Roll out the crescent roll dough, and line the bottom and sides of the prepared pan with 3/4 of the dough. Layer the sausage, scrambled eggs, and Colby-Monterey Jack cheese into the pan, then top with the remaining 1/4 of dough. Pinch the corners and sides of the dough together.
  • Bake in the preheated oven until golden brown, 25 to 30 minutes.

These individual meat loaves are topped with a sweet and tangy sauce. The sausage in this recipe yields a more complex flavor than your standard meat loaf.

2 eggs, beaten
¾ cup crushed buttery round crackers
½ cup milk
½ cup grated Parmesan cheese
½ cup chopped onion
1 teaspoon Worcestershire sauce
1 teaspoon dried Italian-style seasoning
1 teaspoon garlic salt
1 pound lean ground beef
1 pound ground sausage
1 cup ketchup
½ cup packed brown sugar
1 tablespoon Worcestershire sauce

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a large bowl, combine the eggs, cracker crumbs, milk, cheese, onion, Worcestershire sauce, Italian-style seasoning, garlic salt, ground beef and ground sausage. Mix this together well and form into individual loaves. Place the loaves in a 9x13 inch baking dish.
  • In a separate small bowl, combine the ketchup, brown sugar and Worcestershire sauce. Mix this together well and spoon some of this sauce over each loaf. Garnish each loaf with some Parmesan cheese and seasoning to taste.
  • Bake at 350 degrees F (175 degrees C) for 45 to 60 minutes.

1 tablespoon good olive oil
3 cups chopped yellow onions (3 onions)
1 teaspoon chopped fresh thyme leaves
2 teaspoons kosher salt
1 teaspoon freshly ground black pepper
3 tablespoons Worcestershire sauce
1/3 cup canned chicken stock or broth
1 tablespoon tomato paste
2 1/2 pounds ground chuck (81 percent lean)
1/2 cup plain dry bread crumbs (recommended: Progresso)
2 extra-large eggs, beaten
1/2 cup ketchup (recommended: Heinz)

Steps:

  • Preheat the oven to 350 degrees F. Heat the olive oil in a medium saute pan. Add the onions, thyme, salt, and pepper and cook over medium-low heat, stirring occasionally, for 8 to 10 minutes, until the onions are translucent but not brown. Off the heat, add the Worcestershire sauce, chicken stock, and tomato paste. Allow to cool slightly.
  • In a large bowl, combine the ground chuck, onion mixture, bread crumbs, and eggs, and mix lightly with a fork. Don't mash or the meatloaf will be dense.
  • Divide the mixture into 6 (10 to 11-ounce) portions and shape each portion into a small loaf on a sheet pan. Spread about a tablespoon of ketchup on the top of each portion. Bake for 40 to 45 minutes, until the internal temperature is 155 to 160 degrees F and the meat loaves are cooked through. Serve hot.

1 cup evaporated milk
1-1/2 cups graham cracker crumbs (about 22 squares)
1-1/4 pounds ground fully cooked ham

1 can (10-3/4 ounces) condensed tomato soup, undiluted
1 cup plus 2 tablespoons packed brown sugar
1/3 cup vinegar
1 teaspoon ground mustard

Steps:

  • In a bowl, combine eggs, milk and cracker crumbs; mix well. Add ham and sausage. Shape 1/2 cupfuls into individual loaves. Place in a greased 13-in. x 9-in. baking dish. Combine the soup, brown sugar, vinegar and mustard; mix well. Pour over loaves. Bake, uncovered, at 350° for 1 hour, basting after 30 minutes.

6 cups milk
6 cups soft bread crumbs
1-1/2 teaspoons pepper
4 pounds ground fully cooked ham

GLAZE:
6 tablespoons ground mustard
4 cups packed brown sugar
1-1/2 cups white vinegar

Steps:

  • In a several large bowls, combine the eggs, milk, bread crumbs and pepper. Crumble ham and pork over mixture and mix well. , Shape into four loaves; place each in a greased 13x9-in. baking dish. Bake, uncovered, at 350° for 45 minutes., In a large saucepan, combine the glaze ingredients. Bring to a boil; cook and stir until sugar is dissolved. Pour 1/2 cup over each ham loaf; bake for 30 minutes. , Pour remaining glaze over loaves; bake 5-10 minutes longer or until a thermometer reads 160°. Let stand for 5 minutes before slicing.

1/2 cup chopped onion
1/2 cup chopped green pepper
1/2 cup chopped carrot
1/3 cup fine dry breadcrumb
1/3 cup tomato based chili sauce
1 egg
2 tablespoons chopped parsley
1/4 teaspoon pepper
1/4 teaspoon garlic salt
1/4 teaspoon rubbed sage
1/4 teaspoon tomato based chili sauce or 1/4 teaspoon catsup (optional)

Steps:

  • Combine the sausage, carrots, green pepper, onion, bread crumbs, 1/3 cup chili sauce, egg, parsley, pepper, garlic salt and sage; mix until thoroughly blended.
  • Press sausage mixture into 12 greased medium sized (about 2& 1/2") muffin cups.
  • Cover and chill if made ahead.
  • Place muffin pan on a shallow rimmed pan to catch any drippings; then bake in a 350 degree oven about 35 minutes or until no longer pink when slashed in center with knife.
  • Remove sausage loaves from pans and serve hot with additional chili sauce, if desired, to spoon over individual servings.

2 loaves (1 pound each) frozen white bread dough, thawed
1/2 pound mild pork sausage
1/2 pound bulk spicy pork sausage
1-1/2 cups diced fresh mushrooms
1/2 cup chopped onion
3 large eggs, divided use
2-1/2 cups shredded mozzarella cheese
1 teaspoon dried basil
1 teaspoon dried parsley flakes
1 teaspoon dried rosemary, crushed
1 teaspoon garlic powder

Steps:

  • Cover dough and let rise in a warm place until doubled. Preheat oven to 350°. In a large skillet, cook sausage, mushrooms and onion over medium-high heat until sausage is no longer pink, breaking up sausage into crumbles, 6-8 minutes. Drain. Transfer to a bowl; cool., Stir in two eggs, cheese and seasonings. Roll each loaf of dough into a 16x12-in. rectangle. Spread half of the sausage mixture over each rectangle to within 1 in. of edges. Roll up jelly-roll style, starting with a short side; pinch seams to seal.
