2 cups sliced peeled tart apples
3 tablespoons brown sugar
1 teaspoon lemon juice
1/4 teaspoon ground cinnamon
1/3 cup all-purpose flour
1 tablespoon sugar
1 teaspoon baking powder
3 tablespoons milk
2 tablespoons butter, melted
Half-and-half cream, optional

Steps:

  • Gently toss the apples, brown sugar, lemon juice and cinnamon. Divide between two ungreased 10-oz. custard cups. , In a bowl, combine the flour, sugar and baking powder; stir in milk and butter just until moistened. Spoon over apples. Bake at 400° for 20 minutes or until top is golden. Serve warm with cream if desired.

4 pears, cored and cut into 1/2-inch slices
1 teaspoon lemon juice
⅓ cup maple syrup
2 tablespoons melted butter
1 cup rolled oats
1 cup brown sugar
½ cup melted butter
½ cup all-purpose flour
1 teaspoon ground cinnamon

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • Toss pears and lemon juice together in a bowl until coated; spread into a 9x9-inch baking dish. Pour maple syrup and 2 tablespoons melted butter over pear mixture; toss to coat.
  • Mix oats, brown sugar, 1/2 cup melted butter, flour, and cinnamon together in a bowl until crumbly; sprinkle over pear mixture.
  • Bake in the preheated oven until crust is golden and pears are tender, about 45 minutes.

This is our most popular pear cobbler recipe. A sweet cake-like batter tops a delicious cinnamon-spiced pear filling in this easy cobbler.

3 to 4 cups pears (sliced fresh)
1 1/2 cups sugar ( divided )
1 stick (4 ounces) butter
3/4 cup all-purpose flour
2 teaspoons baking powder
1 teaspoon ground cinnamon
1/4 teaspoon salt
3/4 cup milk (whole or low-fat)
1 large egg
Optional: ice cream, whipped cream (for serving)

Steps:

  • Gather the ingredients.
  • Pre heat oven to 325 F (165 C /Gas Mark 3), and place the rack in the middle. In a large bowl, mix the pears with 1/2 cup of the sugar and let stand.
  • Put the butter in a 2-quart baking dish and place in the oven until melted, about 5 minutes.
  • Combine the remaining sugar, flour, baking powder, cinnamon, and salt in a mixing bowl. Mix well.
  • Whisk together the milk and egg in a separate small mixing bowl.
  • Slowly combine the milk and egg mixture with the dry ingredients to make a batter.
  • Pour the batter over the melted butter. Do not stir.
  • Spoon the sliced pears over the batter. Do not stir.
  • Bake in the preheated oven for 50 to 60 minutes, or until nicely browned and the pears are tender. If the topping appears to be browning, cover the dish with foil and continue baking until the pears are tender.
  • Remove the cobbler from the oven and set it on a rack to cool slightly. Enjoy the cobbler hot or cold with a scoop of ice cream or whipped cream.

2 1/2 pounds ripe peaches, pitted and cut into large chunks
1 tablespoon cornstarch
1/2 cup plus 2 tablespoons sugar
3/4 cup all-purpose flour
2 tablespoons ground flax seed
1/4 teaspoon kosher salt
3 tablespoons cold unsalted butter, cut into small pieces
2 tablespoons reduced-fat buttermilk
Non-fat vanilla yogurt or frozen yogurt, for serving, optional

Steps:

  • Preheat the oven to 375 degrees F. Lightly coat eight 6-ounce ramekins with nonstick cooking spray and place on a rimmed baking sheet.
  • Toss the peaches with the cornstarch and 2 tablespoons sugar in a large bowl. Let stand until juicy, about 10 minutes. Divide the peaches and juices among the ramekins.
  • While the peaches sit, combine the flour, remaining 1/2 cup sugar, flax seed and salt. Cut in the butter, using a fork or pastry cutter, until the mixture forms medium-size crumbs. Stir in the buttermilk until well moistened and large clumps hold together.
  • Sprinkle the topping evenly over the peaches. Bake until the fruit is bubbling and the topping is golden brown and crisp, 40 to 45 minutes. Serve warm or at room temperature with vanilla yogurt or frozen yogurt if desired.

3 firm-ripe medium Bosc or Bartlett pears, peeled, cored and cut into 1/2-inch pieces
Squeeze lemon juice
2 tablespoons light brown sugar
1/2 teaspoon ground cinnamon
1/2 teaspoon vanilla extract
2 teaspoons plus 1/2 cup all-purpose flour
1/2 cup rolled oats
1/2 cup finely chopped pecans
1/4 teaspoon freshly grated nutmeg
1/8 teaspoon ground cloves
Pinch kosher salt
4 tablespoons unsalted butter, softened
1 cup low-fat plain Greek yogurt
2 tablespoons maple syrup
1/2 teaspoon finely grated orange zest, plus 1 tablespoon juice

Steps:

  • Preheat the oven to 375 degrees F.
  • For the pear crumbles: Toss the pears, lemon juice, brown sugar, cinnamon, vanilla and 2 teaspoons of the flour together in a medium bowl. Divide the mixture between 3 mini pie plates.
  • Stir together the remaining 1/2 cup flour, oats, pecans, nutmeg, cloves and salt in a medium mixing bowl. Add the butter and, with fingers, blend it into the dry ingredients until fully incorporated. Squeeze the mixture into clumps, then divide it among the pie plates, spreading it to cover the pears.
  • Set the pie plates on a rimmed baking sheet and transfer to the oven. Bake until the fruit is bubbling and the crumble mixture is golden brown, about 35 minutes.
  • For the maple yogurt: Stir together the yogurt, maple syrup, orange zest and juice until well mixed.
  • Serve the warm crumbles with a dollop of the maple yogurt.

This yummy peach cobbler was developed by my mom and me one night after dinner. It hits the spot if you are having a sweet craving, but it isn't super high in calories. This recipe will work in a 9x11-inch glass baking dish as well. Add a bit of ice cream if desired and enjoy!

8 cups diced fresh peaches
½ cup water
½ cup white sugar
1 pinch ground cinnamon
1 pinch ground nutmeg
2 tablespoons butter, cut into small pieces
1 (8 ounce) can refrigerated reduced-fat crescent roll dough
1 tablespoon water, or as needed
1 teaspoon brown sugar, or to taste

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • Place 1 cup peaches into 8 individual ramekins. Mix 1/2 cup water and white sugar together in a bowl; stir until sugar is dissolved. Evenly divide sugar mixture over peaches. Sprinkle peaches with cinnamon and nutmeg. Dot about 3/4 teaspoon butter onto each serving of peaches.
  • Unroll and separate crescent roll dough; completely cover peaches in each ramekin with 1 piece of dough. Cut small slits into each roll for ventilation during baking. Lightly brush each roll with water and sprinkle each with about 1/8 teaspoon brown sugar. Arrange ramekins onto a baking sheet.
  • Bake in the preheated oven until cobblers are browned, 11 to 13 minutes. Allow cobblers to cool for 20 minutes before serving.

Topping
1 1/2 cups all purpose flour
2 1/4 teaspoons baking powder
1/4 teaspoon ground nutmeg
6 tablespoons (3/4 stick) chilled unsalted butter, cut into 1/2-inch pieces
9 tablespoons half and half
9 tablespoons pure maple syrup
3/4 teaspoon vanilla extract
Melted butter
Sugar
Ground nutmeg
1 cup chilled whipping cream
Additional pure maple syrup

Steps:

  • For Filling:
  • Preheat oven to 425°F. Cut pears crosswise into 1/4-inch-thick slices. Combine in large bowl with maple syrup, flour, vanilla extract and ground nutmeg. Divide among six 2/3-cup custard cups of soufflé dishes. Dot tops with butter. Bake filling until hot and bubbling, about 18 minutes.
  • Meanwhile, Prepare Topping:
  • Mix first 3 ingredients in processor. Add 6 tablespoons chilled butter and cut in until mixture resembles fine meal. Transfer to large bowl. Mix half and half, 6 tablespoons syrup and vanilla in another bowl. Add to dry ingredients and stir until just combined. Working quickly, drop batter in three mounds, 1 heaping tablespoon per mound, atop hot filling in each cup. Brush topping with melted butter and sprinkle with sugar and nutmeg. Immediately return cups to oven and bake 8 minutes. Reduce temperature to 375°F. and bake until toppings are golden and just firm to touch, about 14 minutes. Let cool at least 15 minutes.
  • In medium bowl, beat 1 cup chilled cream with 3 tablespoons maple syrup to soft peaks. Serve cobblers warm with whipped cream. Drizzle additional maple syrup over.
