MICROWAVE BROWNIES

Steps:
- In a bowl, beat sugar, eggs, vanilla and salt on medium speed for 1 minute. Add butter; beat until blended. Combine flour and cocoa. Gradually add to sugar mixture; mix well. Stir in walnuts. Transfer to a greased microwave-safe 8-in. square dish. Microwave, uncovered, on high for 3-4 minutes, rotating every 1 minute or until a moist area about 1-1/4 in. in diameter remains in the center (when touched, brownie will cling to your finger while area underneath will be almost dry). Cool on a wire rack. Cut into bars.

MICROWAVE BROWNIES
Steps:
- Put the butter and chocolate into a microwave safe bowl and heat on high for 1 to 2 minutes, stirring every 30 seconds to melt the chocolate. Set aside.
- In another bowl, whisk together the eggs and sugar.
- In a large bowl sift the flour with the baking powder and salt. Add the egg and chocolate mixtures along with the vanilla and stir well to combine.
- Spray an 8 by 8 by-2-inch microwave safe glass pan with cooking spray. Pour the batter into the pan, spread it out evenly, and scatter the chocolate chunks on top. Cook on high for 5 minutes. Remove from the oven and let rest for 3 minutes before cutting and eating.
MICROWAVE CHOCOLATE MUG BROWNIE
This makes a delicious brownie for one in about a minute. 60 seconds makes a molten center brownie. 75 seconds make a uniformly done brownie. Be careful not to overcook.

Steps:
- In a coffee mug, add water/milk, melted butter/oil, a dash of salt and vanilla extract. Whisk well.
- Add cocoa powder, whisk well. Add sugar, whisk well. Add flour, whisk well.
- Microwave for 60 seconds. Center should be slightly molten. Careful not to overcook.
- Enjoy with a spoon. Careful, brownie will be hot.
MICROWAVE BROWNIE CAKE
Created this in a dorm room when all the mug cake recipes I found were terrible. It's super easy to make and to memorize, and if you only use one mug, a tablespoon measure, and a spoon, you have a lot fewer dishes to do. Easy to make in under 5 minutes with minimal mess, so enjoy! And never feel bad about eating the entire thing yourself.

- Microwave chocolate chips and butter in a microwave-safe mug until melted, about 20 seconds. Add brown sugar, white sugar, salt, baking soda, and vanilla extract; mix together until combined. Stir in egg yolk. Add flour; mix until batter is blended and smooth.

INDIVIDUAL MICROWAVE BROWNIES (VEGAN)
This is adapted from vegweb.com. Instead of using the full amount of oil, you can replace the oil with 1/2 tbsp applesauce (or any mashed fruit i.e. pumpkin puree, mashed banana) and 1/ 2 tbsp oil mixed together. You could even use melted butter.... just don't use light margarine. I also think this is a bit sweet, so you can reduce the sugar to 1.5 tbsp or even 1 tbsp if you'd like. I like to drizzle peanut butter on top of this and swirl it in. Add in nuts, chocolate chips, whatever you want. Make sure you watch the microwave, it's super easy to burn!

Steps:
- Combine the dry ingredients in a bowl.
- Make a flax egg by combining flax and boiling water. Stir and let it stand until it becomes sticky and egg-like (20 - 30 sec). This is optional.
- Combine the wet ingredients in a separate bowl.
- Combine wet and dry ingredients.
- Add to microwaveable bowl. Grease bowl with oil or butter for easy clean up. PAM won't work! It will make batter stick to bowl!
- Scrape down sides of bowl, smooth over the top of batter. Microwave for 2 - 3 minutes until it's done (high power I think, most microwaves nowadays are high power). If your microwave has a low power, you might have to microwave it longer. It's done when the center of the brownie is dry and toothpick comes out clean when inserted down the middle.

EASY MICROWAVE BROWNIES
Make these easy, fudgy brownies in under 15 minutes in the microwave. They're ideal when you need a quick and indulgent dessert.

- Cut the butter into small pieces. Put in a 20 x 20cm microwavable glass or ceramic dish and cook in 20-second bursts in the microwave until melted. Remove, swirl it around the dish to coat the sides, then tip it into a mixing bowl.
- Add the sugar to the bowl and, using a hand or electric whisk, whisk vigorously until the mixture is creamy and fully incorporated into the melted butter.
- In a jug, stir the vanilla extract into the milk along with the beaten eggs. Whisk this, a little at a time, into the sugar and butter mixture, ensuring it's thoroughly incorporated before adding more.
- Sift the flour and cocoa powder together, then fold gently into the cake batter. Finally, stir in the milk chocolate chips.
- Tip the whole mix into the buttered dish and smooth using a spatula to fill the dish. Cook for 5 mins or until the brownies are well-risen and slightly firm to touch. Don't worry if they're still a bit soft in the centre; they will continue to cook for several minutes once out of the microwave.
- Put the hot dish onto a cooling rack and leave for at least 20 mins to firm up. Cut into 8 squares. Will keep in an airtight container for three days.
