LOAF PAN LASAGNA

Number Of Ingredients 17

Kosher salt
18 lasagna noodles
2 tablespoons extra-virgin olive oil
2 pounds bulk Italian sausage
1 pound ground beef
3 cloves garlic, minced
One 6-ounce can tomato paste
Two 14.5-ounce cans whole tomatoes
1 tablespoon dried basil
2 tablespoons dried parsley
1 1/2 cups cottage cheese
1 1/2 cups ricotta
2 large eggs beaten
1/2 cup plus 3 tablespoons grated Parmesan cheese
18 slices mozzarella
Ciabatta or baguette slices, for serving
Halved cherry tomatoes tossed with chopped fresh basil, for serving

Steps:

  • Cover a baking sheet with plastic wrap.
  • Bring a large pot of water to a boil and add some salt. Cook the lasagna noodles until al dente, 5 to 7 minutes. Drain, then lay out flat on the wrapped baking sheet until ready to assemble.
  • Meanwhile, heat the oil in a large skillet or saucepan set over medium-high heat. Add the sausage, beef and garlic and cook until the meat is browned completely, about 5 minutes. Drain off all but 2 tablespoons of the fat (if needed), add the tomato paste and fry for 1 minute. Add the tomatoes and crush with a spoon. Add the basil, 1 tablespoon of the parsley and 1 tablespoon salt. Bring to a simmer and cook for 25 to 30 minutes.
  • In a medium bowl, add the cottage cheese, ricotta, beaten eggs, 1/2 cup of the grated Parmesan, 2 teaspoons salt and remaining 1 tablespoon parsley and mix together well. Set aside.
  • Before or during assembly, cut or tear the lasagna sheets in half crosswise.
  • To assemble each loaf pan: Add just enough meat sauce (about 1/4 cup) to cover the bottom of each of three 8 1/2-by-4 1/2-by-2 1/2-inch aluminum foil loaf pans. Layer 4 half lasagna sheets, overlapping, over the sauce on each. Top with 1/2 cup of the cottage cheese mixture, spread evenly. Top with 3 slices mozzarella, then 1/2 cup meat sauce, then 4 half lasagna sheets, overlapping. Top with 1/2 cup cottage cheese mixture, spread evenly, 3 slices mozzarella and 1/2 cup meat sauce. Finish with 4 half lasagna sheets, overlapping, 1/2 cup meat sauce and 1 tablespoon grated Parmesan. The lasagnas can be baked right away, covered in foil and refrigerated for up to 2 days or wrapped in foil and frozen.
  • If baking right away, preheat the oven to 350 degrees F. Put the loaf pan on a baking sheet and bake until hot and bubbly, about 20 minutes. Serve with a couple of slices of ciabatta or baguette and cherry tomatoes tossed in basil.
  • If baking from frozen, put the loaf pan on a baking sheet, cover with foil and bake at 350 degrees F for 1 hour. Uncover and bake until hot and bubbly, an additional 20 to 25 minutes.

1 (28-ounce) can chopped tomatoes
2 cloves garlic, pressed
2 teaspoons dried oregano
2 teaspoons sugar
Few pinches salt
Few dashes red chili flakes
10 grinds fresh black pepper
1 small bunch fresh parsley, leaves coarsely chopped
2 cups ricotta
Few pinches salt
About 20 grinds black pepper
1/3 cup olive oil
Salt
1 large zuchinni, sliced into 1/8-inch thick rounds
1 large summer squash, sliced into 1/8-inch thick rounds
1 small eggplant, sliced into 1/8-inch thick rounds
1 package uncooked lasagna noodles
8 ounces shredded mozzarella

Steps:

  • Combine the sauce ingredients in a mixing bowl; stir well and let sit 30 minutes at room temperature.
  • Mix the ricotta together with the salt and the pepper until evenly distributed.
  • Preheat a grill pan over high heat. Whisk olive oil and salt together in a bowl. Rub the veggie pieces with the olive oil mixture all over and grill until soft and browned on both sides, about 3 to 4 minutes per side.
  • Preheat oven to 375 degrees F.
  • To assemble the lasagnas:
  • Line the bottom of a mini foil baking dish with a couple spoonfuls of sauce. Lay a single layer of raw lasagna noodles over that. Next scatter a mixture of the veggies over top, then an even layer of ricotta. Repeat once more and top it all of with plenty of mozzarella.
  • Place lasagna on a baking sheet to catch any dripping cheese. Bake for about 30 minutes or until bubbly and well browned on top.

3 jars (26 ounces each) spaghetti sauce
2 large eggs, lightly beaten
1-1/2 pounds ricotta cheese
6 cups shredded part-skim mozzarella cheese, divided
1 tablespoon dried parsley flakes
1 teaspoon salt
1/2 teaspoon pepper
1 cup grated Parmesan cheese

Steps:

  • Cook noodles according to package directions. Meanwhile, in a Dutch oven, cook beef over medium heat until no longer pink, breaking into crumbles; drain. Stir in spaghetti sauce; set aside. In a large bowl, combine the eggs, ricotta cheese, 4-1/2 cups mozzarella cheese, parsley, salt and pepper., Drain noodles. Spread 1 cup meat sauce in each of 2 greased 13x9-in. baking dishes. Layer each with 3 noodles, 1 cup ricotta mixture and 1-1/2 cups meat sauce. Repeat layers twice. Top with Parmesan cheese and remaining mozzarella cheese. , Cover and freeze 1 lasagna for up to 3 months. Cover and bake remaining lasagna at 375° for 45 minutes. Uncover; bake 10 minutes longer or until bubbly. Let stand for 10 minutes before cutting., To use frozen lasagna: Thaw in the refrigerator overnight. Remove from the refrigerator 30 minutes before baking. Cover and bake at 375° for 60-70 minutes or until heated through. Uncover; bake 10 minutes longer or until bubbly. Let stand for 10 minutes before cutting.

These Muffin Tin Lasagnas have all the flavor of regular lasagna but without all the calories. Wonton wrappers replace traditional pasta, and a ground turkey meat sauce combines with a ricotta cheese filling to make the perfect mini lasagnas.

1 pound lean ground turkey
1 onion (diced)
1/2 cup fresh mushrooms (diced)
1/4 teaspoon salt
1/4 teaspoon pepper
2 teaspoons minced garlic
1 (14.5 ounce) can crushed tomatoes
3 teaspoons dried oregano (divided)
1 1/2 cups ricotta cheese
1/2 teaspoon dried basil
24 square wonton wrappers
1 1/2 cups shredded Mozzarella cheese

Steps:

  • Preheat oven to 375 degrees F.
  • Heat a large skillet over medium heat.
  • Add turkey, onions, mushrooms, salt and pepper.
  • Cook for 8-10 minutes, or until turkey is browned and onions are clear. Drain grease.
  • Add minced garlic and cook for an additional 1-2 minutes.
  • Stir in crushed tomatoes and two teaspoons of oregano.
  • Reduce heat to low and let simmer for 10 minutes; remove from heat and set aside.
  • In a large mixing bowl, combine ricotta, remaining oregano and basil and mix until combined; set aside.
  • Spray a 12-cup muffin tin with nonstick cooking spray.
  • Place one wonton wrapper into each of the cups, pressing firmly in the bottom of the pan and up the sides.
  • Use half of the ricotta mixture and divide it evenly among muffin cups.
  • Top with half of the tomato sauce mixture divided evenly among muffin cups.
  • Sprinkle 2 teaspoons of Mozzarella cheese on top and repeat layers, starting with another wonton wrapper, cheese mixture, tomato sauce and shredded cheese.
  • Bake for 10-12 minutes, or until cheese has melted and wonton wrappers are golden brown on the edge.
  • Let cool for a few minutes, remove from muffin tin and serve.

1 cup pasta sauce
3 no-boil lasagna noodles, halved cross-wise

Steps:

  • Preheat oven to 375 degrees F.
  • Spray 2 (5-inch square baking dishes or 2 individual serving dishes) with Pam.
  • On a microwave dish or bowl mix vegetables (zucchini - mushrooms) together -- cover and microwave on high for 3-5 minutes or until veggies are crisp-tender, stirring once after about 2 minutes or so. Drain veggies and stir in 1/8 tsp salt.
  • In each baking dish layer in this order: 2 TB sauce, 1 half noodle, halt of the veggies, 1 half noodle, half of the ricotta cheese, 1/4 cup sauce and 1/2 TB Parmesan.
  • Cover with foil and bake for 30 minutes. Uncover and bake for another 10-15 minutes.
