- Preheat your oven to 375.
- In a large skillet over medium heat, add the onions, carrots, thyme and mushrooms. Season with a pinch of salt and sauté for about six minutes, until the veggies start to brown and soften. Add the garlic and sauté another 30 seconds to a minute, until wildly fragrant.
- Move the veggies out of the skillet and into a bowl while you brown the ground beef. Once the beef is cooked through, season it with a pinch of salt and add the veggies back in. Sprinkle the flour over the beef/veggie mix and stir in the beef stock. Stir until it's glossy and slightly thickened, just about a minute. Add the peas and stir to combine.
- Spoon the beefy mix into six ramekins or mini pots. Cut the thawed puff pastry into six even squares and place over each pot. Lightly brush each pastry with the egg wash. Place all the ramekins on a large baking sheet and bake anywhere from 25-35 minutes, until the pastry is puffed and golden brown.
- Let rest for about five minutes, and serve immediately!

- For the pastry, put the butter, lard and 150ml water in a pan and bring to the boil, making sure the lard and butter have melted. Meanwhile, sift the flour and salt into a bowl and make a well in the centre. Add the 2 beaten eggs to the well and sprinkle over enough flour to cover the egg. Pour the just-boiled butter and water mixture around the edge of the flour and mix quickly with a wooden spoon until combined and smooth. Knead briefly, then wrap in cling film and rest in the fridge for at least 30 minutes.
- Meanwhile, gently heat 1 tbsp of the oil in a large pan and cook the onion and garlic for 10 minutes until soft but not coloured. Remove with a slotted spoon and set aside. Toss the steak in the flour, add to the pan along with the remaining oil, increase the heat and brown all over, in batches if necessary.
- Return the softened onion and garlic to the pan with all the steak. Add the thyme and bay leaf, pour over the ale and stock, then stir in the mustard and Worcestershire sauce. Bring to the boil, cover, then simmer gently for about 1 hour 45 minutes until the meat is tender. Remove and discard the bay leaves and thyme sprigs. Transfer the pie filling to a bowl and cool completely.
- Preheat the oven to 200°C/fan180°C/gas 6. Reserve one-third of the pastry for lids, re-wrap in cling film and keep in the fridge. Divide the rest into 6 equal pieces. Roll or press the dough out on a lightly floured surface into 17cm circles. Lightly grease 6 x 220ml metal pudding basins with oil. Line each one with a pastry circle, using your fingers to press it evenly around the sides - work the pastry up over the edge. Chill uncovered in the fridge for 40 minutes to harden.
- Divide the cooled filling among the cases. Take the reserved pastry and divide into 6. Press each piece out to a circle large enough to make a lid. Make a hole in the centre of each (for steam to escape). Dampen the edges of the pastry with water. Lay the circles over the cases and seal all around the edge with your fingers. Crimp the edges and brush the tops all over with beaten egg.
- Bake for 40 minutes (covering with foil if the pastry browns too quickly) until the pastry is golden and crisp, and the filling is piping hot. Remove from the oven and rest for 5 minutes. Carefully remove from the moulds. Serve with mash.

- 1. Use two six-inch pie pans, or individual baking dishes. Preheat oven to 400 degrees. Note: Use top and bottom crust for each pie. If using individual baking dishes, you can use just a top-crust for each.
- 2. Remove pie crust from package and let sit fifteen minutes to come to room temperature or easily handled without breaking. Lay it out on a floured surface, and cut 4 circles bigger than the pie pan diameter (two for each) If making top crusts only, make each a bit larger than the baking dish diameter, and crimp around the inside of the dish.
- 3. Meanwhile peel and chop potatoes and carrots, and steam for about fifteen minutes. This can be done earlier in the day or the day before using. Divide the two vegetables evenly in the baking containers of choice, I made three pies the first time, but you can make more if you choose, just increase amounts of vegetables and beef.
- 4. I quickly stir-fried the beef, just a little in a small amount of oil. Divide it evenly into each pie pan or baking dish where you've already placed the vegetables. To the meat and vegetables, spoon about 2 Tbs. gravy into each.
- 5. Top each pie pan or baking dish with a second cut-out pastry round, and press around the edge inside the container to seal tightly. Cut slits in the top of each to vent the pies as they bake. Put in the oven on the center rack to bake, time about 40 minutes. *Place them on a baking pan with sides, to make it easier to remove from the oven if using individual baking dishes.

- Boil prepared potatoes and carrots in a Dutch oven until tender, about 20 minutes.
- Meanwhile --.
- Melt butter in large saucepan over medium to medium low heat.
- Add chopped onions and cook until onions are soft and translucent.
- Sprinkle flour over butter/onion mix, stirring constantly, about 4-5 minutes.

- Heat olive oil in a large stockpot over medium heat; cook and stir stew meat until browned, 2 to 3 minutes. Add onion; cook and stir until onion is lightly browned, 3 to 4 minutes. Add potatoes, carrots, celery, and garlic; cook and stir until slightly tender, 3 to 4 minutes.

- Melt the butter in a large skillet over medium-high heat, then add the onion, carrots and celery. Cook, stirring the vegetables around, until they start to soften, about 3 minutes. Sprinkle the flour over the veggies and stir to combine. Cook the flour-coated veggies for 1 minute, then pour in the chicken broth (and wine, if using!) and stir to combine. Let it heat up and start to bubble and thicken, about 3 minutes.
- Stir in the chicken, then add the turmeric and thyme, then season with salt and pepper. Add the half-and-half, then stir the mixture and let it bubble up and thicken, about 3 minutes. If it seems overly thick, splash in a little more broth. Turn off the heat and let the filling cool to room temperature.
- Meanwhile, roll out the pie crusts slightly and cut out 8 dough circles just a bit larger than the pie pans (if using a muffin tin, you'll need sixteen 3 3/4-inch circles). Press a dough circle into each pie pan (or 8 muffin cups), making sure the dough comes almost to the top of each pan. Fill the pies with the chicken mixture. Lay a second round of dough over the top of each pie. Press the dough so that the edges meet, then use a fork to seal the edges. Mix the egg with 2 teaspoons water and brush it all over the surface of the crust. (Discard any extra egg wash.) Cut small vents in the surface of the crusts.
- If you're baking the pies right away, preheat the oven to 350 degrees F, place the pies on a baking sheet and bake 25 to 30 minutes, until the crust is deep golden brown and the filling is bubbly. Serve them straight out of the pie pans or turn them out of the pan and serve them upside down!

- Melt the butter with the olive oil in a heavy pot. Sear the meat over medium-high heat in batches until brown, 4 to 5 minutes; remove to a plate.
- Add the carrots, celery and shallots and saute until the vegetables start to wilt, about 5 minutes. Reduce the heat to medium low, add the mustard, garlic and 1 tablespoon of the flour and saute for 1 minute. Add the mushrooms and cook for 2 minutes. Pour in the wine, beef broth and 1 cup water. Add salt and pepper to taste and stir. Bring to a boil. Return the browned meat to the pot and reduce the heat to low. Add the bay leaves and thyme sprigs, then cover and simmer for 30 to 45 minutes.
- After 45 minutes, mix the remaining 2 tablespoons flour with a little water and pour into the stew. Cook and thicken for 10 more minutes. Remove from the heat and set aside to cool completely.
- Preheat the oven to 425 degrees F.
- On a lightly floured work surface, roll out the puff pastry sheets one by one to get rid of the creases. Set a 6- to 8-inch ovensafe skillet upside down on a pastry sheet and cut a circle around it, making it 1/2 inch larger than the dish. Repeat with the remaining 5 skillets using all of the pastry sheets; discard the scraps.
- Put the 6 skillets onto 2 baking sheets and fill the skillets with the cooled beef mixture. Sprinkle over some chopped bacon and 1/2 teaspoon chopped parsley on each.
- Top each skillet with a pastry circle, pressing along the edges to seal. Mix together the egg and 1 tablespoon water in a small bowl to make an egg wash. Brush each pastry lid with the egg wash. Bake until the pastry is puffed and golden brown, 20 to 25 minutes.

- Assemble the ingredients: frozen puff pastry, olive oil, beef sirloin or chuck roast, salt, pepper, mushrooms (I used Baby Bellas), tomato paste, garlic, thyme, rosemary, dry sherry, beef broth, red potatoes, frozen pearl onions, frozen peas/carrots, cornstarch, parsley, egg.
- Prepare the top crust. I didn't use a bottom crust, making the recipe easier and healthier. I used frozen Pepperidge Farm Puff Pastry for a light, crispy, flaky crust.
- Gently unfold a sheet of thawed puff pastry. The 2 sheets each measure approx. 9-1/2 inches square. On a lightly floured surface, I rolled them out to a 10" square so that I could cut two crusts to a sheet.
- I used Corning Wear 16 oz. covered baking dishes. This recipe makes enough to fill 7 of these. Invert the bowl on top of the pastry sheet, and cut around it with a knife.
- (optional) Use a small cookie cutter to cut shapes from the leftover pastry. These are used to decorate the top of the pie--it really makes the pies look special.
- After cutting the pie crusts and shapes, move them to a parchment or wax paper covered tray. Put plastic wrap or more parchment/wax paper between layers.
- Slice or chop the mushrooms. I like my mushrooms chopped up pretty small so they distribute well throughout to flavor the beef stew.

- Heat the oil in a large frying pan on a moderate heat. In a large plastic bag add the flour, paprika and seasoning. Add the beef and toss in the seasoned flour.
