A WEST INDIAN CHRISTMAS FRUIT CAKE



A West Indian Christmas Fruit Cake image

Number Of Ingredients 15

1 lb raisins
1 lb prunes
1 lb currants
lemon, lime, orange zest (optional)
1 750ml bottle of port wine
1 lb butter
1 lb sugar
1 lb flour
9 eggs
1 tsp vanilla
4 tsp baking powder
1/2 tsp nutmeg (add 1tsp if you like a lot of nutmegs)
1 tsp cinnamon
1 lemon, zested
3 1/2 cups of blended fruit mixture

Steps:

  • Empty all the dried fruits into a bowl and rinse then dry with paper towels.
  • A little at a time, add fruit and wine to a blender until it has blended into big chunks. You do not want a puree here! You can also do this in a food processor, just be sure to blend the fruits slightly.
  • Pour fruit mixture into a large container and let it soak for at minimum 3-4 weeks to one year.
  • Cream butter and sugar together. Add eggs a few at a time.
  • Add 3 1/2 cups of the fruit mixture, the vanilla and lemon zest (and whatever other zests you would like to use). Mix together.
  • Sift all dry ingredients together and add to the batter a little at a time.
  • Your spatula or a small spoon should be able to stand up in the batter, this is how you will know it is ready.
  • Pour into a 9 in a square pan, and bake for 55 minutes at 300 degrees. You can check the cake after 40 minutes. The toothpick should come out clean.
  • Keep checking the cake after 40 min and in 10-minute increments thereafter.
  • This cake is a very moist and wet cake, it is not supposed to be dry, if your cake comes out dry then you have over baked it.
  • Let the cake cool completely before cutting and tasting, tasting it hot will mislead you to the actual taste.

20 ounce can of crushed pineapple, in its own juice
2 cups flour
2 cups sugar
2 tsp. baking soda
2 eggs
1 1/2 cup chopped walnuts or pecans
2 tsp. vanilla

Steps:

  • 1. Grease and flour 13 x 9 baking pan and preheat the oven to 350*F. Mix all the cake ingredients together by hand and then pour the mixture into the pan. Bake for 40 minutes, when the top of the cake springs back when lightly touched.
  • 2. Mexican Wedding Cake Cream Cheese Frosting: 1 cup sugar 1 stick of butter, softened 8 ounces of cream cheese 1 tsp. vanilla Cream the icing ingredients together, and then ice the cake when it is cooled. This recipe makes one sheet cake with 20 to 24 servings.

3 cups white sugar
7 eggs
1 tablespoon vanilla extract
3 cups all-purpose flour
¼ teaspoon baking powder
¼ teaspoon baking soda
1 cup sour cream

Steps:

  • Preheat oven to 325 degrees F (165 degrees C). Grease and flour a 9x13 inch pan or a 10 inch Bunt pan.
  • In a large bowl, cream together the butter and sugar. Beat in the eggs, one at a time, mixing well after each. Then stir in the vanilla. Combine the flour, baking soda and baking powder, add to the creamed mixture and mix until all of the flour is absorbed. Finally, stir in the sour cream. Mix for 1 or 2 minutes just to be sure there are no lumps. Pour the batter into the prepared pan.
  • Bake in the preheated oven for 45 to 60 minutes, or until a toothpick inserted into the center of cake comes out clean. For Bunt cakes, allow the cake to cool in the pan for 10 minutes before inverting onto a wire rack.

This is a recipe my Mom got from a lady at a Square dance party. Her and Dad loved to Square Dance, they even took a boat cruise just for dancers. Those were the days. This is in memory of my Mother, she loved to cook and laugh.

2 c sugar
2 eggs, beaten
2 tsp baking soda
1 tsp salt
1 tsp vanilla
2 can(s) 8 oz. canned crushed pineapples, juice and all
FROSTING
1 c powder sugar
1 stick butter, unsalted, soften
1 8 oz. creams cheese, soften

Steps:

  • 1. mix all cake ingredients together.
  • 2. Put into a greased and floured 9x13 pan
  • 3. bake at 350 degress for 30 to 35 minutes
  • 4. Cool cake and split in half. put frosting in between layers and on top. Don't frost the sides.
  • 5. Frosting: Beat soften butter and cream cheese together, blend in powder sugar.

Using a handheld or stand mixer fitted with a paddle or whisk attachment, beat the butter and sugar together on high speed until smooth and creamy, about 3 minutes.
