EASY BAKED INDIAN SAMOSAS
This has all the flavor and heartiness of a great samosa without the frying. Although this is an easier, healthier version of the fried samosa, it tastes very authentic. This recipe has the added advantage that you can make ahead and freeze uncooked samosas, simply skip the egg brushing, freeze until you're ready and cook at 350 degrees F (175 degrees C) for 25 to 30 minutes. Serve warm, plain, or with chutney.

Steps:
- Place potatoes into a large pot and cover with salted water; bring to a boil. Reduce heat to medium-low and simmer until tender, about 20 minutes. Drain and transfer potatoes to a bowl; coarsely mash.
- Preheat oven to 400 degrees F (200 degrees C).
- Heat oil in a skillet over medium-high heat; cook and stir onions, coriander seed, curry powder, ginger, salt, turmeric, cumin, allspice, cayenne pepper, and cinnamon until onion is lightly browned, about 5 minutes. Remove skillet from heat and stir tomatoes and peas into onion mixture; pour into mashed potatoes and thoroughly mix. Cool completely.
- Cut each pie crust into 8 even triangles. Spoon filling onto the wide end of each triangle; fold corners over filling creating a triangular 'hat' shape. Pinch the dough together to form a seal. Brush egg white over each samosa and arrange on a baking sheet.
- Bake in the preheated oven until samosas are golden brown, about 15 minutes.

HOW TO MAKE EASY INDIAN SAMOSAS WITH WONTON WRAPPERS
Indian Samosas can be easy to make with the help of wonton wrappers. These can be baked, steamed, shallow fried or deep fried. Dip these beauties into savory chutneys or eat them plain. Make these ahead of time and cook them later or freeze them. Enjoy!

INDIAN SAMOSA WRAPS
From: http://www.thehealthseekerskitchen.com/2011/02/indian-samosa-wrap.html I had purchased Amy's Indian Samosa Wraps from the frozen section at Whole Foods and knew I could create these in my own kitchen. Amy's Samosa Wraps were half the size of mine with more than double the fat. I made my own whole wheat tortillas which were a blend between a tortilla and naan bread.

Steps:
- In a large skillet add 1/2 tablespoons olive oil. Add garlic and cook for 30 seconds stirring constantly. Add potatoes, onion and carrots and cook for 10 minutes, stirring as needed.
- Add 1 cup vegetable broth, sun-dried tomato, jalapeno, peas, salt, seasonings and lemon juice.
- Cover and let simmer until all liquid has been absorbed. Use a potato masher to mash your potato mixture somewhat. Leave some chunks.
- Divide mixture into 4 parts and put each part on each of the 4 tortillas. Roll by bringing in the sides of the tortilla and rolling. Warm if needed before serving. Slice in half and serve with spinach salad and orange slices.
- Whole Wheat Tortillas.
- Mix together the flour, baking powder and salt. Work in Earth Balance Butter with a hand pastry blender.
- Slowly add warm coconut milk. Stir until a loose, sticky ball is formed.
- Knead for two minutes on a floured surface. Dough should be firm and soft. Place dough in a bowl and cover with a damp cloth for 30 minutes. This stage is very important.
- After the dough has rested, divide into 4 equal parts. Make each section into a ball and roll out to about a 10" - 12" circle.
- Heat griddle to high. Add first tortilla. Flip after a minute. Push tortilla down with spatula to produce air pockets. Keep moving spatula around the tortilla to produce more air pockets. Flip tortilla and continue with process until tortilla is lightly browned in a few areas of tortilla. If desired you can brush tortilla lightly with Earth Balance Butter on one side.
- Store tortillas under damp cloth until ready for use.

Steps:
- Make the samosa dough:
- In a large bowl, whisk together the flour, salt, and baking powder. Add the shortening and use a pastry blender or 2 forks to cut the shortening into the flour mixture until it resembles a coarse meal. Gradually add the water in 3 batches and use the pastry blender or forks to gently work it into the dough (the dough will be shaggy at first). Transfer to a work surface, and knead the dough until it's hydrated and starting to smooth out, about 5 minutes (the surface of the dough will still appear shaggy; it will smooth out during resting). Wrap the dough in plastic wrap and let it rest at room temperature for 2 hours.
- While the dough is resting, make the samosa filling:
- In a heavy large saucepan over moderate heat, melt the butter. Add the onion, garam masala, mustard seeds, cumin seeds, and curry powder and sauté, stirring occasionally, until the mustard seeds begin to pop and the onion is translucent, about 3 minutes. Add the garlic and sauté, stirring occasionally, until fragrant, about 30 seconds. Remove the pan from the heat and add the turkey, mashed potatoes, peas, and hot chiles and stir to combine. Adjust the seasoning as needed with salt and set aside to let cool before filling the samosas.
- Fill the samosas:
- Divide the samosa dough into 6 equal parts and roll each into a ball. On a lightly floured surface using a lightly floured rolling pin, roll each ball into a circle that measures about 8 inches across and is about 1/8 inch thick. DO AHEAD: The circles of samosa dough can be made ahead, layered between sheets of wax paper, wrapped in a double layer of plastic, and refrigerated for 24 hours or frozen up to 3 months. Defrost before using.
- Cut the dough circles in half, so that there are 12 semicircles. Use a pastry brush to lightly brush the flat edge of 1 semicircle with water then fold 1 corner up and over middle. Fold the second corner over to make a triangle, and pinch the corners of the triangle to seal (leave the rounded side open). Hold the triangle in your hand with the open rounded side facing up and let dough fall open to make a cone. Fill with 1/4 cup filling, lightly brush the remaining open edge of the dough with water and then pinch along the rounded side to seal. Repeat with the remaining dough and filling. DO AHEAD: Filled samosas can be frozen, well wrapped in plastic, up to 3 months. Fry them from a partially defrosted state.
- Fry the samosas:
- Line a large baking sheet with paper towels.
- In a heavy large saucepan or Dutch oven over moderate heat, heat the oil until a deep-fry thermometer registers 325°F. Working in batches, fry the samosas until dark golden brown, about 4 minutes. Transfer as done to the paper-towel-lined baking sheet to drain and cool. Continue to fry the remaining samosas, returning the oil to 325°F between batches. Serve hot with the Cilantro-Mint Chutney and/or the mango Chutney, if desired.

- To start making the samosa dough or pastry, mix together flour and salt and add oil. Rub the oil with the flour till it resembles bread crumbs. Start by adding 1/2 cup water and knead it into a firm dough. You may need a few extra teaspoons of water but add as you go. The consistency of the dough should be firm and smooth. Cover the dough with a damp cloth and set aside while you make the filling.
- Heat oil in a pan. While the oil is heating, crush the coriander seeds, saunf (fennel seeds) and methi (fenugreek seeds) roughly and add it to the pan. Fry the spices till aromatic but be careful not to burn them. Add ginger, garlic and green chilies and stir fry for a minute or two. Add the remaining spices, mashed boiled potatoes and salt. I like to use a potato masher to just mash everything together and then mix it. Add the curry leaves right at the end, give it one more good mix and then set the mixture aside to cool.
- Take a lime sized bowl of dough, roll it between your palms till smooth and dust it with flour. Roll it out into a circle which is less than 1 mm thickness and about 6 inches in diameter. Cut the rolled dough in half. Pick up one half and brush it with a little water along the straight edge of the pastry.

- In another small bowl mix 1/2 cup water and 1 tsp. cornstarch. and set aside. You will use this to seal the wrappers.
- To prepare yogurt dip, place an 8 oz. container of plain yogurt in a small bowl and add the chopped chives. Mix thoroughly. Sprinkle with a dash of chili powder.
- In a large skillet over medium heat saute onion and garlic in oil until translucent. Add the potatoes, cilantro and the spices and mix well until potatoes are cooked (about 10-12 minutes) or until soft. Add 1/2 cup of water. Remove from heat and allow to steam covered for about 10 minutes; this will help soften the potatoes and make them easier to break down. Place potato mixture into a large bowl and mash with a fork. The mixture should have the appearance of lumpy mashed potatoes. Add the peas and mix again.

- Boil the cubed potatoes until very tender, about 15-20 minutes; then drain. Also, if you haven't already, press the tofu using a tofu press or by wrapping it in a clean towel and placing a heavy object on top.
- Meanwhile, gather the rest of the ingredients and then heat the oil in a large skillet (nonstick works best). Add the coriander seeds and cook just until fragrant and golden, about 30-60 seconds. Add the ginger, garlic and jalapeno, and cook for another 60 seconds until slightly softened. Add the ground cumin, cayenne, garam masala, and turmeric, and cook for 30 seconds more until fragrant.
- Stir in the salt and diced tomatoes. Take the pressed tofu and crumble it into the pan. Cook, stirring frequently, for about 3-5 minutes or until the tofu is well incorporated with the spices.
- Mash the cooked potatoes well and add them to the pan along with the green peas and 1/4 cup of water. Stir well, reduce the heat to medium-low, and continue cooking until everything is heated through, about 5 more minutes. Stir in the cilantro and the rest of the water. Season to taste with more salt and heat.
