INDIAN TURKEY CUTLETS

This is originally a recipe for outside grilling from Good Housekeeping July 2003. It works just as well inside in my broiler. Tastes like a Tandoori chicken recipe.

2 large limes
1/3 cup low-fat plain yogurt
1 tablespoon vegetable oil
2 teaspoons minced peeled fresh ginger
1 teaspoon ground cumin
1 teaspoon ground coriander
1 teaspoon salt
1 clove garlic, minced
6 turkey cutlets, about 1 1/2 pounds

Steps:

  • Preheat broiler.
  • Grate 1 teaspoon peel from 1 lime and squeeze 1 tablespoon juice.
  • Cut remaining lime into wedges.
  • Reserve for squeezing juice over cooked cutlets.
  • In a large bowl, mix lime peel and juice, yogurt, vegetable oil, ginger, cumin, coriander, garlic and salt.
  • Just before cooking add turkey cutlets to the yogurt mixture and stir to cover cutlets.
  • Do not let cutlets marinate more than 15 minutes or the texture will become mealy.
  • Broil 2 1/2 minutes on each side, 5 minutes total.
  • Serve with lime wedges and steamed rice.

Tandoori Turkey Cutlets with Lentils image

A common practice in India, juicy cuts of meat get marinated in a flavorful yogurt mix to deepen the flavors. Serve alongside garlicky lentils scented with garam masala.

Number Of Ingredients 12

1/2 cup 2% plain Greek yogurt
3 tablespoons extra-virgin olive oil
2 tablespoons tandoori paste
4 turkey cutlets (about 1 1/2 pounds)
1 1-inch piece fresh ginger, peeled and sliced
3 cloves garlic, crushed
2 tablespoons tomato paste
1 to 2 teaspoons garam masala
2 15-ounce cans low-sodium brown lentils, drained and rinsed
Kosher salt
1 5-ounce package baby kale (about 4 cups)
1 cup fresh cilantro

Steps:

  • Mix 1/4 cup yogurt, 1 tablespoon olive oil and the tandoori paste in a large resealable plastic bag. Add the turkey and shake to coat. Set aside to marinate, 20 minutes.
  • Meanwhile, pulse the ginger and garlic in a mini food processor to make a paste. Heat a large saucepan over medium heat. Add 1 tablespoon olive oil, then the ginger paste. Cook until the paste sizzles, 1 minute. Add the tomato paste and garam masala and stir until sizzling, 1 minute. Stir in the lentils. Add 1 cup water and season with 1/2 teaspoon salt. Bring to a simmer and cook until thickened, about 7 minutes. Stir in the kale and 3/4 cup cilantro; cook until the kale wilts, about 2 minutes. Keep warm over low heat.
  • Heat a large skillet over medium-high heat. Add the remaining 1 tablespoon olive oil. Remove the turkey from the marinade, letting the excess drip off, and add to the skillet. Cook, turning once, until just cooked through, 4 to 5 minutes. Serve over the lentils and top with the remaining 1/4 cup each yogurt and cilantro.

1 teaspoon poultry seasoning
1/2 teaspoon seasoning salt
1/4 teaspoon pepper, divided
1 (17 5/8 ounce) package turkey breast cutlets
2 tablespoons vegetable oil
2 tablespoons butter
1/4 cup all-purpose flour
2 cups chicken broth

Steps:

  • Combine poultry seasoning, seasoned salt and 1/8 teaspoon pepper; sprinkle on both sides of turkey.
  • Heat oil in large skillet; cook turkey for 2-3 minutes on each side or until juices run clear.
  • Remove turkey; cover and keep warm.
  • In same skillet, melt butter and whisk in flour until smooth.
  • Gradually stir in chicken broth; bring to a boil.
  • Cook and stir until thickened, about 2 minutes.
  • Stir in remaining 1/8 teaspoon pepper and serve over turkey.

Turkey:
1 12-14-pound turkey
1/4 cup kosher salt
5 black cardamom pods

1 medium red onion, chopped
2 celery stalks, chopped
4 garlic cloves
Marinade:
4 cups (1 quart) plain whole-milk yogurt
1/2 cup chopped peeled ginger
1/2 cup fresh lime juice

Steps:

  • For tandoori masala:
  • Toast spices in a skillet over medium heat, swirling often, until fragrant, about 2 minutes. Let cool. Working in batches, finely grind mixture in a spice mill. DO AHEAD: Can be made 1 month ahead. Store airtight at room temperature.
  • For garam masala:
  • Toast spices in a skillet over medium heat, swirling often, until fragrant, about 2 minutes. Let cool. Working in batches, finely grind mixture in a spice mill. Sift through a medium-mesh strainer into a small bowl; stir to combine. DO AHEAD: Can be made 1 month ahead. Store airtight at room temperature.
  • For turkey:
  • Pat turkey dry with paper towels. Rub inside and out with salt; transfer to roasting bag. Stuff turkey with cardamom pods and cumin seeds, then onion, celery, and garlic.
  • For marinade:
  • Purée all ingredients in a blender. Pour marinade into roasting bag. Smear all over turkey. Tie bag and arrange turkey, breast side down, in a large heavy roasting pan. Refrigerate overnight.
  • Let turkey stand in bag at room temperature for 1 hour. Turn breast side up. Create steam holes in bag if required by manufacturer's instructions.
  • Preheat oven to 400°F. Roast turkey for 30 minutes. Reduce heat to 350°F. Roast until an instant-read thermometer inserted into thickest part of thigh (puncturing bag with thermometer) registers 160°, about 1 1/2 hours longer. Cut top of bag open, being careful of steam and juices, and pull back over turkey. Roast turkey until breast is deeply browned but not burned and a thermometer inserted into thigh registers 165°F, 15-30 minutes longer.
  • Transfer to a platter. Let rest for at least 20 minutes before carving.
  • Meanwhile, strain juices into a large saucepan. Spoon fat from surface. Simmer over medium heat until sauce is reduced to 3 1/2 cups, about 20 minutes.
  • Carve turkey. Serve with accompanying gravy.

2 lbs ground goat meat or 2 lbs ground beef
5 eggs
3 tablespoons ginger-garlic paste
1/2 teaspoon jeera powder or 1/2 teaspoon cumin powder
1 1/2 teaspoons coriander powder
1/4 teaspoon turmeric powder
2 teaspoons indian chili powder
salt
1/2 teaspoon garam masala
5 large potatoes, mashed and salted (should not be watery)
seasoned dry bread crumb
ghee or oil (for frying)

Steps:

  • Place the ground meat in a pan and add to it the ginger garlic paste, chilli powder, garam masala, coriander powder, turmeric and salt and mix well.
  • Add ½ cup of water and cook until the meat is done.
  • Let it cool and then place the ground meat in a blender/ grinder and make a fine paste of it.
  • The paste should not be too liquid you should be able to make balls of the mixture.
  • Add an egg while grinding.
  • When done add salt to taste.
  • Now make 1-inch round balls from the dough and keep aside.
  • Also make 3" balls from the mashed potato mixture and keep aside.
  • Now flatten each potato ball into a flat disc.
  • Place a ground meatball in the centre and cover it with the mashed potato from the sides.
  • Shape them into balls and slightly press them flat shaping them like thick flat circular discs.
  • Beat the remaining eggs in a flat dish with salt according to taste.
  • Dip each potato cutlet in the egg mixture, then coat with breadcrumbs (shake off the excess) and fry on a hot pan with ghee or oil till it is golden on both sides.
  • Serve piping hot.
