TURKEY TIKKA MASALA

This twist on the Punjabi-style curry gives a new life to leftover turkey. The turkey is marinated overnight in yogurt, turmeric, garam masala and garlic paste, imparting deep flavors and moisture. Tomatoes and cream add warmth, while serrano peppers give the tikka masala its kick. Serve it alongside steamed basmati rice for a deeply satisfying meal.

2 teaspoons garam masala
2 teaspoons ground coriander
2 teaspoons ground cumin
1 tablespoon paprika
4 teaspoons ground turmeric
1 teaspoon kosher salt
6 cloves garlic, finely grated or pounded in a mortar and pestle
4 teaspoons finely grated fresh ginger
1 cup whole-milk yogurt
4 cups cooked turkey (about 1 pound), cut into 1 1/2-inch pieces
4 tablespoons ghee or neutral-tasting oil
1 large onion, thinly sliced
6 cardamom pods, crushed
1 bay leaf
1 teaspoon paprika
1/2 teaspoon red pepper flakes (optional)
1 teaspoon garam masala
1 1/2 teaspoons kosher salt, plus more to taste
2 tablespoons finely grated fresh ginger
4 cloves garlic, finely grated or pounded in a mortar and pestle
2 serrano peppers, finely chopped
2 tablespoons tomato paste
1 (28-ounce) can whole peeled tomatoes
2 cups heavy cream
3/4 cup coarsely chopped fresh cilantro, plus a few sprigs for garnish
Juice of 1 small lemon
Steamed basmati rice, for serving

Steps:

  • Make the marinade: In a medium bowl, stir together garam masala, coriander, cumin, paprika, turmeric, kosher salt, garlic, ginger and yogurt. Fold in the turkey. Cover and chill for 4 hours or overnight.
  • Make the masala: On the stove top, heat a Dutch oven or similar pot over medium-high heat. Add 3 tablespoons ghee or neutral oil, then add onion, cardamom, bay leaf, paprika, pepper flakes (if using), garam masala and a pinch of salt. Reduce heat to medium and cook, stirring occasionally, until onions are brown and tender, 10 to 15 minutes, adjusting temperature as needed so the onion doesn't burn.
  • Make space among onions in center of pot, and add 1 tablespoon ghee or neutral oil. When ghee has melted or oil begins to shimmer, add ginger, garlic and serrano peppers, and sizzle for about 10 seconds. Combine that mixture with the spiced onions. Stir in tomato paste. Add tomatoes and their juices, crushing them with your hands as you add them. Bring to a boil, then reduce heat and simmer, stirring often, until the liquid is almost gone, 8 to 10 minutes.
  • Add cream and chopped cilantro to the pot. Season with 1 1/2 teaspoons kosher salt, then taste and adjust seasoning as needed. Simmer over low heat, stirring occasionally, until sauce thickens, about 40 minutes. Discard bay leaf.
  • In the meantime, line a baking sheet with foil, turn on oven broiler, and arrange an oven rack about 6 inches from broiling unit. Lay the marinated turkey on the foil in a single layer. Stir any remaining marinade into the sauce. Broil until turkey begins to blacken in spots, 6 to 8 minutes. Set aside.
  • Use a hand-held blender (or blender) to purée the sauce, then add turkey and return the sauce to a simmer for 5 to 10 minutes, stirring occasionally, until just warmed through. Just before serving, stir in lemon juice. Taste and adjust salt as needed.
  • To serve, garnish with cilantro sprigs. Serve hot, with steamed basmati rice. Cover and refrigerate leftovers for up to 3 days, or freeze for up to 2 months.

1/3 cup panko crumbs
1/4 cup diced red pepper
1/4 cup chopped cilantro
1 Tbsp curry powder *
1 tsp sweet chili sauce (optional)
1/2 tsp finely chopped fresh ginger
1 clove garlic (minced)
salt & pepper to taste
4 hamburger buns (toasted if desired)
mango chutney (found in most grocery stores and lettuce to garnish if desired)
Curry Sauce
1/2 cup plain yogurt
2 Tbsp mayonnaise
1 Tbsp curry powder
1/2 tsp cumin
1/2 tsp garlic powder
1/2 tsp onion powder

Steps:

  • In a large mixing bowl combine turkey, panko, red bell pepper, cilantro, curry powder, chili sauce, ginger, garlic and salt and pepper. Form into 4 patties.
  • Heat a large non-stick skillet over medium heat. Add patties and cook 3-5 minutes on each side until fully cooked. Alternatively you can cook the burgers on the stove in a grill pan or cook patties on an outside BBQ grill.
  • Toast hamburger buns if desired. Place one patty on each hamburger bun and garnish with mango chutney and lettuce. Top burger with curry sauce and serve.

1 teaspoon extra-virgin olive oil
1 small onion, diced small
2 cloves garlic, minced
1 lb. lean ground turkey (I use 93% lean)
1 tablespoon curry powder or garam masala
1 teaspoon ground cumin
1 teaspoon ground coriander
3/4 teaspoon kosher salt
1/2 teaspoon turmeric
1/2 teaspoon ground ginger
1 (14.5 oz.) can diced tomatoes (undrained)
1 cup frozen peas
1/4 cup chopped fresh parsley or cilantro
Steamed brown rice

Steps:

  • Heat a large skillet over medium heat and add olive oil.
  • Add onion and sauté for 4-5 minutes, until softened. Add garlic and cook another minute.
  • Add ground turkey the pan and and cook until browned through, about 7-8 minutes.
  • Add the curry, cumin, coriander, salt, turmeric and ginger and stir well to combine.
  • Stir in the tomatoes and peas until warmed through, 2-3 minutes.
  • Serve the curried turkey and peas over steamed rice. Sprinkle with fresh parsley or cilantro and enjoy!

1/2 c onion, finely chopped
1/2 c celery, finely chopped
1/4 c butter
1/3 c all purpose flour
1 Tbsp curry powder
2 c chicken broth
1 c tomato juice
1 tsp worcestershire sauce
pepper, to taste
3 c cooked turkey, cubed
hot cooked rice
CONDIMENTS:
chutney, optional
golden raisins, optional
chopped peanuts, optional
flaked coconut, optional

Steps:

  • 1. In a medium saucepan cook the onion and celery in butter until tender. Stir in the flour and curry powder. Add chicken broth, tomato juice, and Worcestershire sauce. Cook and stir over medium heat until thickened and bubbly. Season with pepper.
  • 2. Stir in turkey, heat through and serve over the rice. Pass condiments along with entree.

Steps:

450g halved new potato
2 tbsp vegetable oil
1 onion , finely chopped
2 garlic cloves , crushed
450g minced turkey
5 tbsp Madras curry paste
400g can chopped tomato
300ml/½ pt chicken stock
150g bag baby spinach

Steps:

  • Boil the new potatoes until tender. Drain. Heat the vegetable oil in a large pan and cook 1 finelythe chopped onion for 5-6 minutes. Add the garlic cloves and minced turkey and cook for 4-5 minutes. Stir in the Madras curry paste and cook for 1 minute. Stir in the chopped tomatoes and chicken stock, cover and cook for 20 minutes. Stir in the potatoes and baby spinach and heat through for 3-4 minutes.

½ teaspoon ground cinnamon
1 onion, chopped
2 cloves garlic, minced
1 tablespoon minced fresh ginger root
½ teaspoon ground tumeric
¾ cup water
2 green chile peppers, halved lengthwise
1 pound cubed cooked turkey
1 teaspoon spicy red chili powder
½ tablespoon garam masala
salt to taste

Steps:

  • Heat oil over medium heat in a large skillet. Sprinkle the cinnamon into the oil and stir until fragrant. Stir the onion into the cinnamon oil and cook for 5 minutes, until softened and golden in color. Stir in the garlic, ginger, and turmeric, and continue to cook for 3 additional minutes. Pour in 1/4 water and cook for 2 minutes, adding a bit more water if mixture is too thick.
  • Stir the green chilies, turkey, chili powder, garam masala, and the rest of the water into the sauce. Cover and cook for 10 minutes until mixture has thickened to sauce consistency, adding additional water if mixture looks dry. Taste the curry and add salt if needed.
