This recipe uses fresh cranberries, pineapple, orange, grapes and apples. Delicious with turkey, chicken or ham. Pineapple juice is an excellent substitute for water if you would like a bit more flavor. Originally submitted to ThanksgivingRecipe.com.

2 (3 ounce) packages raspberry flavored Jell-O® mix
1 cup white sugar
2 cups boiling water
1 ½ cups cold water
1 pound cranberries
1 orange
1 ½ cups crushed pineapple, drained
2 cups seedless red grapes, halved
1 ½ cups diced apples

Steps:

  • Add the sugar to the gelatin. Stir in the boiling water and stir until the gelatin is dissolved. Stir in the cold water or the pineapples juice. Chill until gelatin is thick.
  • Finely grind the cranberries and the orange in food processor or run through the meat grinder.
  • Add the ground cranberry mixture, drained crushed pineapple, grapes and cubed apples to the thickened gelatin. Pour mixture into one 9 x 13 inch pan or a large bowl. Refrigerate overnight before serving.

2 (0.3 ounce) packages sugar-free cherry flavored Jell-O® mix
2 cups boiling water
1 (16 ounce) can jellied cranberry sauce
1 (20 ounce) can crushed pineapple, drained
½ cup chopped pecans

Steps:

  • Combine the gelatin and boiling water; stir until gelatin is dissolved. Mix in cranberry sauce and pineapple.
  • Transfer to glass serving dishes. Sprinkle with chopped nuts. Chill until set and serve.

My grandmother made this salad every Thanksgiving. It is delicious even without its creamy topping. This side dish is so yummy, I sometimes make it even when it's not Thanksgiving! Depending on your salad's shape, you can spread the topping in a layer over the Jell-O; or if you use a ring mold, put the topping in the center. Alternately, you could serve the topping in a bowl on the side, so it's optional.

1 (6 ounce) package raspberry flavored Jell-O® mix
2 cups boiling water
1 (16 ounce) can whole berry cranberry sauce
1 (8 ounce) can crushed pineapple, undrained
1 cup chopped celery
1 cup chopped pecans
1 teaspoon orange zest
1 (4 ounce) package cream cheese, softened
½ cup whipped topping

Steps:

  • Place the gelatin into a bowl, pour in the boiling water, and stir until the gelatin dissolves. Mix in the cranberry sauce, pineapple, celery, pecans, and orange zest until evenly blended. Pour the gelatin mixture into a mold or serving dish.
  • Chill in the refrigerator overnight, or up to 8 hours.
  • To make the topping, beat the cream cheese with half of the whipped topping. Fold in the remaining whipped topping until well blended. Unmold the gelatin, and spread with the topping mixture.

for the cranberry orange relish:
4 c whole cranberries
2 good quality seedless oranges, cut into 16 wedges, (peel and pulp intact)
2 c sugar
for the cranberry orange with cherry gelatin
2 - 3 oz pkgs, cherry gelatin
2 1/2 c boiling water
1 c crushed pineapple, juice and all
10 oz frozen, cranberry orange relish

Steps:

  • 1. For the Cranberry Orange Relish:
  • 2. Put cranberries and oranges in food processor and pulse until finely chopped. (A food grinder can be used instead of the food processor)
  • 3. Place cranberry orange mixture into large bowl and add sugar. Mix well, and let sit for 1 hr or so, until sugar has disolved.
  • 4. When sugar is disolved *pack in 10oz quantities to freeze. *Note: If using to make Cranberry Orange with Cherry Gelatin, you want to drain off most of the juice before packing and freezing.
  • 5. For the Cranberry Orange with Cherry Gelatin
  • 6. Disolve gelatin in boiling water. Stir in cranberry orange relish and pineapple. Pour into mold or serving dish. Refrigerate until firm.

  • Stir cranberries, sugar, and water together in a saucepan; cook over medium heat, stirring often, until most of the berries have popped open, about 20 minutes.

1 (1/4 ounce) package sugar-free raspberry gelatin (or any red gelatin)
1 cup boiling water
2 stalks raw celery, finely diced
2 oranges, juice and zest of
3 fresh apples (1.5 cup, chopped or ground)
2 cups cranberries, ground
1 (1/4 ounce) envelope unflavored gelatin
1/4 cup Splenda granular, artificial sweetener (to taste)
walnuts (all are nice, optional) (optional) or hazelnuts (all are nice) (optional)

Steps:

  • Before I begin, I refrigerate the celery, oranges and apples; and freeze the cranberries. Having all the produce cold will help the gelatin set up quickly.
  • Choose any red gelatin - raspberry, cherry, black cherry, etc. Bring 1 cup water to boil and dissolve gelatin in large bowl. Add 4-5 ice cubes and allow to cool.
  • While gelatin is cooling, chop, grate or grind produce. I use a meat grinder to run all the produce through; however a grater can be used or even a food processor.
  • I begin with the oranges - which produces mostly juice and will keep the apples from discoloring. Grind, chop or juice your oranges into a large bowl; next run the celery through, then apples and finally cranberries.
  • If you really like cranberries use a whole bag, if it is not a real favorite, use less.
  • Sprinkle the package of unflavored gelatin and sweetener (Splenda or other) over the chopped up produce and stir to dissolve.
  • Optional: Add chopped nuts, pecans, walnuts, hazelnuts and stir. Pour all the produce into the cooling gelatin, stir to taste and see if it is sweet enough for your taste, or if it is too sweet grind a few more cranberries inches.
  • When you are satisfied, pour into covered container and refrigerate until fully set.
