Easy Chicken Ranch Casserole #RSC image

Ready, Set, Cook! Hidden Valley Contest Entry. I love chicken and pasta, but sometimes I don't feel like handling raw chicken and cooking it up. This recipe lets you skip that step, and you don't have to wait for the noodles to cook all the way! It's fast, easy, and delicious for kids and adults. You can also add in any veggies you like, or bacon bits to spice it up a little. This recipe feeds four, but is very easy to double for a bigger family.

0.5 (16 ounce) package macaroni noodles
1 (10 1/2 ounce) can cream of chicken soup
2 (5 ounce) cans cooked chicken breasts
1/2 cup mayonnaise
1/3 cup milk
1/2 cup shredded cheddar cheese
0.5 (1 ounce) packet Hidden Valley Original Ranch Seasoning Mix
1 cup breadcrumbs
1 1/2 tablespoons butter
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/4 cup parmesan cheese

Steps:

  • Boil the macaroni noodles 3-5 minutes short of the listed time, then drain well.
  • Mix the cream of chicken, chicken breast, mayonnaise, milk, shredded cheese, and ranch mix together in a bowl.
  • In a separate bowl, melt the butter, then add the bread crumbs, garlic powder, onion powder, and Parmesan cheese, and stir well.
  • Layer the cooked and drained noodles in a 8x8 or 9x9 baking dish. Add chicken mix on top, then use a spoon or spatula to slightly mix the sauce down into the noodles.
  • Sprinkle the seasoned bread crumbs on top.
  • Bake in a preheated 325 degree oven for 25 minutes.

1 large onion, finely chopped
2 celery ribs, finely chopped
1 medium green pepper, finely chopped
1 medium sweet red pepper, finely chopped
1 tablespoon canola oil
1 garlic clove, minced
3 cups cubed cooked chicken breast
1 can (10-3/4 ounces) reduced-fat reduced-sodium condensed cream of celery soup, undiluted
1 can (10-3/4 ounces) reduced-fat reduced-sodium condensed cream of chicken soup, undiluted
1 can (10 ounces) diced tomatoes and green chiles, undrained
1 tablespoon chili powder
12 corn tortillas (6 inches), cut into 1-inch strips
2 cups shredded reduced-fat cheddar cheese, divided

Steps:

  • In a large skillet coated with cooking spray, saute the onion, celery and peppers in oil until crisp-tender. Add garlic; cook 1 minute longer. Stir in the chicken, soups, tomatoes and chili powder., Line the bottom of a 3-qt. baking dish with half of the tortilla strips; top with half of the chicken mixture and 1 cup cheese. Repeat layers. Bake, uncovered, at 350° for 30-35 minutes or until bubbly.

This dish, inspired by a traditional recipe from the Parsis (a group of Zoroastrians from Persia who settled in India sometime between the 8th and 10th centuries), is possibly one of the most fragrant and vivid casseroles you'll ever see. It starts with a highly spiced tomato sauce flavored with mint, green chiles and ginger. The sauce is then poured over a layer of sliced cooked fingerling potatoes and baked. At the end of the cooking time, wells are made in the sauce and eggs cracked into them to finish baking. The result is a tomato-rich casserole with runny yolk over each pungent bite. Serve it for dinner or for brunch.

1 1/2 pounds fingerling potatoes
Kosher salt
1/4 cup vegetable oil
1 yellow onion, diced
1 poblano pepper, seeded if desired, finely chopped
2 jalapeño peppers, seeded if desired, finely chopped
2 tablespoons finely chopped peeled ginger
3 garlic cloves, finely chopped
1 teaspoon ground cumin
1 teaspoon ground garam masala
1/2 teaspoon ground coriander
1 28-ounce can whole peeled tomatoes
1/4 cup chopped fresh mint, more for garnish
2 tablespoons chopped cilantro or basil, more for garnish
6 eggs
Black pepper, as needed

Steps:

  • Place potatoes in a large pot and cover with generously salted water. Bring to a boil; cook until potatoes are tender, about 20 minutes. Drain. When just cool enough to handle, slice into 1/2-inch-thick rounds.
  • While potatoes cook, heat oil in a large skillet over medium-high heat. Add onion and cook until almost tender, 5 to 7 minutes. Stir in peppers and cook 3 minutes. Add ginger, garlic, cumin, garam masala and coriander; cook 1 minute. Stir in tomatoes and 1/2 teaspoon salt. Simmer over medium-low heat, breaking up tomatoes with a fork, 15 minutes. Stir in mint and cilantro or basil. Taste and adjust seasonings.
  • Heat oven to 375 degrees. Place potatoes in a single layer in a 9-inch-square baking dish. Pour the hot tomato sauce over potatoes. Transfer pan to oven and bake 20 minutes.
  • Make six wells in the tomato mixture. Crack eggs into wells and season with salt and pepper. Bake until egg whites are set but yolks are still runny, 8 to 13 minutes, depending on how much the potatoes and sauce cooled before baking. Serve garnished with herbs.

3 skinless, boneless, chicken breast halves, cut into 1-inch cubes
1 tablespoon extra spicy seasoning blend, or to taste
2 cups frozen fire-roasted corn, peppers, and onions blend, thawed
½ cup no-salt-added black beans, rinsed and drained
1 cup chopped fresh tomatoes, divided
1 (5.6 ounce) package Knorr® Fiesta Sides™ - Spanish Rice
Salt and black pepper to taste
4 tablespoons chopped fresh cilantro
½ cup tortilla strips, preferably chili-lime flavor

Steps:

  • Season chicken with seasoning blend. Heat skillet over medium-high heat and add oil. Carefully add chicken to oil; cook and stir until fully cooked and no longer pink inside, about 6 minutes. Transfer chicken to a bowl.
  • Stir vegetable blend, beans and half of the tomatoes into the same skillet. Cook until coated with oil and vegetables begin to soften, about 3 minutes. Transfer mixture to the bowl with chicken.
  • Stir together Knorr® Fiesta Sides™ - Spanish Rice and 2 cups water in the same skillet. Bring to a boil; stir. Reduce heat to low; cover and cook until rice is tender, about 7 minutes. Stir in chicken and vegetables. Cook until heated through. Season with salt and pepper.
  • Stir in remaining tomatoes and chopped cilantro. Top with chili-lime flavor tortilla strips and serve immediately.

1/2 cup butter
2 large onions, sliced
3 whole cardamom seeds
cinnamon stick
2 garlic cloves
1 teaspoon ginger
1 tablespoon ground cumin
1 tablespoon ground curry powder
1 1/2 teaspoons coriander powder
1 teaspoon turmeric
1/2 teaspoon Tabasco sauce
3/4 cup warm water (divided)
2 tomatoes, peeled and cut
1 (3 1/2-4 lb) roasting chickens, cut up

Steps:

  • Melt butter in deep saucepan.
  • Add onions, cardamom and cinnamon.
  • Cook until onion is tender and lightly browned.
  • Combine garlic, ginger, cumin, curry powder, coriander, tumeric, tabasco and 1/4 c water.
  • Stir to paste.
  • Stir into butter mixture.
  • Add tomatoes.
  • Simmer, covered 20 minutes.
  • Add chicken and remaining water.
  • Cook over low heat 1 and 1/2 to 2 hours or until chicken is tender.
  • Add salt to taste.
  • Serve with hot, cooked rice.
