SOUTH INDIAN SWEET POTATO CURRY RECIPE
Sweet potatoes are my very favorite dirt candy! In this South Indian style sweet potato curry, bold spices are simmered with carrots, cauliflower, spinach, and (of course!) sweet potatoes!

Steps:
- Place the onion, garlic, ginger, oil, garam masala, cumin, cardamom, and chili in the bowl of a food processor and puree until a paste forms. Transfer the mixture to a large pot and set the burner to medium heat. Cook, stirring often, for 10 minutes until the mixture darkens and becomes aromatic. Add the tomato paste and cook for another 1-2 minutes.
- Add the broth, brown sugar, and lime leaf to the pot. Scrape the brown bits up from the bottom of the pot and simmer for 10 minutes.
- Add the yams, cauliflower, carrot, tomatoes, salt and pepper to the pot. Allow it to come to a boil over medium heat, and then reduce heat to medium low. Cover and simmer until vegetables are tender, stirring occasionally, about 8-12 minutes. Add spinach and cook until wilted, about 1 minute. Discard the lime leaf and season with additional salt and pepper as needed. Garnish with fresh cilantro leaves and serve with cooked basmati rice.

CURRY ROASTED SWEET POTATOES

Steps:
- Preheat the oven to 200°C/400°F.
- Place the cubed sweet potatoes in a large mixing bowl.
- Pour over the oil and spices. Transfer to a large sheetpan.
- Place in the oven and roast for 30-45 minutes, turning half way, until the sweet potatoes are soft and starting to caramelize.
- Remove from the oven and serve.

INDIAN SPICED SWEET POTATOES

- Preheat the oven to 350 degrees F. Roast the whole sweet potatoes on a baking sheet until tender, about 1 hour. Let cool for 10 minutes, then halve lengthwise and scoop out the flesh into a bowl. Mash to an even consistency. Season with salt and pepper.
- Heat the clarified butter in a small saucepan over medium-high heat until shimmering, about 2 minutes. Add the coriander seeds, cumin seeds, mustard seeds, turmeric and curry leaves if using and shake the pan over the heat, taking care as the spices sizzle and pop. Remove from the heat once the spices become fragrant, about 1 minute. Pour over the sweet potatoes and fold in the cilantro and lime juice. Serve hot.;

- Place the sweet potato in a pan of boiling water and cook for 15 mins, or until tender.
- Meanwhile, heat the oil in a pan and fry the onion and carrot, for 2 minutes, then add the garlic and ginger and cook, stirring for 1 min more. Tip in the curry powder, stir round the pan then add 750ml of the boiling water with the stock cube, tomato purée and lentils. Cover the pan and boil for 20 mins until the vegetables are tender and the liquid has been absorbed. Stir in the chopped coriander.
- When the sweet potatoes are cooked, drain and mash them with the yogurt and seasoning.
- Spoon the lentil mix into one big or two individual dishes then top with the sweet potato mixture, scatter with the coriander and serve with broccoli, if you like.

INDIAN-SPICED SWEET POTATO STEAK FRIES

- Peel the sweet potatoes. If they are average size, cut them in half lengthwise. Lay each half flat on the cutting board and cut it into four slices. These should be between 1/4 and 1/2-inch slabs.
- Put the sweet potatoes in a large mixing bowl. Sprinkle on the seasonings and then pour on the olive oil.
- Use your clean hands to toss the potatoes with the other ingredients until all is evenly distributed.
- Set aside and allow the potatoes to marinate for 1/2-hour or more, depending upon the timing of your meal.
- When you are ready to cook, spray a shallow sheet pan with a light coat of oil to prevent sticking and then pour out the potatoes, distributing them evenly and avoiding any stacking.
- Place the pan on the middle rack of an oven preheated to 400 degrees Fahrenheit. Bake for about 30 minutes or until the fries are looking crisp. Serve hot.

- Boil and mash sweet potatoes. Set aside.
- In a medium stock pot melt butter over medium-high heat.
- Add cinnamon stick, black cardamom, green cardamom and bay leaf.
- Stir whole spices until pods burst open.
- Remove whole spices from butter.
- Add ginger/garlic paste and sautéuntil golden brown.
- Add sweet potatoes and mix together.

- Preheat an oven to 425 degrees F (220 degrees C).
- Place the sweet potato chunks into a large mixing bowl. Drizzle with the olive oil, then sprinkle the brown sugar, paprika, black pepper, onion powder, garlic powder, poultry seasoning, chili powder, and cayenne pepper overtop.
