This no-fuss dish gets its zippy taste from Cajun seasoning and crushed red pepper flakes. Even those who don't like asparagus will enjoy these buttery spears.

2 tablespoons butter
1/2 teaspoon onion powder
1/2 teaspoon seasoned salt
1/2 teaspoon Cajun seasoning
Crushed red pepper flakes to taste
1-3/4 pounds fresh asparagus, trimmed

Steps:

  • In a large skillet, melt butter. Stir in the onion powder, seasoned salt, Cajun seasoning and red pepper flakes. Add asparagus spears, stir gently to coat. Cover and cook 5-7 minutes or until crisp-tender, stirring occasionally.

I love pickled asparagus but got tired of spending so much money on tiny little jars and decided to pickle my own. I also like it spicy but feel free to halve the crushed red pepper or omit it altogether if spice is not your thing.

1 pound thick asparagus spears, trimmed
1 tablespoon minced garlic
2 teaspoons crushed red pepper flakes
1 teaspoon mustard seed
½ teaspoon pink peppercorns
1 ¾ cups distilled white vinegar
1 cup water
1 tablespoon salt
1 teaspoon white sugar

Steps:

  • Place trimmed asparagus in a quart-sized canning jar. Add garlic, pepper flakes, mustard seed, and peppercorns.
  • Combine vinegar, water, salt, and sugar in a medium saucepan over medium heat; bring to a boil. Reduce heat and simmer for 5 minutes. Turn heat off.
  • Pour vinegar mixture over the asparagus. Screw on the lid and let sit until lid has sealed, about 1 hour.
  • Place in the refrigerator until pickled, at least 2 days.

1/2 cup Onions , cut into think long pieces
2 cups Asparagus , cut slantwise into about 1-1.25 inch
1/4 cup Spring Onion (Bulb & Greens) , chopped
Extra Virgin Olive Oil , (or any cooking oil) as required
3-4 cloves Garlic , cut into small pieces
1 Onion , thinly sliced
2 cups Soy sauce
2 tablespoons Red Chilli sauce
2 teaspoons Chilli vinegar , (or regular vinegar)
Salt , to taste

Steps:

  • To prepare Spicy Asparagus Stir Fry (Indo-Chinese Fusion Recipe) heat a large wok, take about 2 tablespoons of the olive oil (or cooking oil) and sauté the ginger garlic paste until the raw smell goes away.
  • Now add and onions until slightly soft. Don't soften it too much as we want the onions to retain some of their crunchiness.
  • Now add the asparagus pieces, some salt and cover the wok with a lid to cook them for about 5-7 minutes. This is where you want to be careful. Asparagus gets cooked very easily and you want the resulting dish to yet have a bright green colour rather than having a dull colour.
  • Once cooked, add the soy sauce and chili garlic and let the whole thing cook for about 2 minutes.
  • Do a taste test to make sure salt and spice is up to your taste. If you think it's too spicy you can add a little brown sugar to sweeten the dish.
  • Finally, garnish and serve with chopped spring onions.

  • In standard skillet, boil enough water to cover aspagus. Add asparagus to boiling water, boil for 3- 4 minutes and drain. In same skillet melt ghee and add spices, simmer under medium heat while stirring 2 minutes. Return asparagus to skillet and stir with the ghee/spice mixture to warm through.
