Chicken Makhani is a dish I always loved before becoming vegan. It is my absolute favorite Indian dish, so I knew I had to try to make it so I could curb my cravings. The sauce tastes amazing with naan and white rice. The seitan is an excellent substitute for meat in many dishes. You can buy store-bought seitan, which can be expensive, or you can make your own.

1 tablespoon peanut oil
1 shallot, finely chopped
¼ cup onion, chopped
2 tablespoons vegan margarine
2 teaspoons lemon juice
1 teaspoon ground ginger
2 cloves garlic, minced
2 teaspoons garam masala
2 teaspoons curry powder
1 teaspoon chili powder
2 teaspoons ground cumin
1 bay leaf
1 cup tomato puree
1 cup soy milk
¼ cup plain vegan yogurt
¼ teaspoon cayenne pepper, or to taste
1 pinch salt and black pepper to taste
1 ½ teaspoons peanut oil
1 (16 ounce) package chicken-style seitan, cut into strips or cubes
2 teaspoons garam masala
1 pinch cayenne pepper
1 tablespoon cornstarch
¼ cup cold water

Steps:

  • Heat 1 tablespoon peanut oil in a saucepan over medium heat. Stir in the shallot and onion; cook and stir until the onion has softened and turned translucent, about 5 minutes. Add the margarine, lemon juice, ginger, garlic, garam masala, curry powder, chili powder, cumin, and bay leaf. Cook and stir for 1 minute. Stir in the tomato puree and cook for 2 minutes more.
  • Reduce the heat to low, and mix in the soy milk and soy yogurt. Simmer for 10 minutes, stirring frequently. Season to taste with cayenne, salt, and black pepper; remove from heat and set aside.
  • Heat 1 1/2 teaspoons of peanut oil in a heavy skillet (preferably cast iron) over medium heat. Add the seitan and cook, stirring constantly, for 10 minutes. Reduce the heat to low and season the seitan with 2 teaspoons garam masala and a pinch of cayenne. Stir in about a 1/4 cup of the tomato-yogurt sauce and simmer for 2 to 3 minutes. Transfer the seitan mixture to the saucepan.
  • Mix the cornstarch and cold water. Return the saucepan to the stove over medium-high heat. Stir the cornstarch mixture into the sauce. Bring to a boil; reduce the heat and simmer until the sauce has thickened, about 5 to 10 minutes.

Here's an easy homemade seitan recipe for this high-protein plant-based meat alternative.

2 tablespoons soy sauce, tamari, or Bragg Liquid Aminos
1 cup water
2 1/4 cups vital wheat gluten; I like Bob's Red Mill®
1 teaspoon baking powder
2 tablespoons nutritional yeast, optional
1 to 2 tablespoons seasoning or spice blend (good options: BBQ seasoning, jerk seasoning, vegan poultry seasoning or rub spices), optional
Water
1 large or 2 regular-sized vegetable bouillon cubes
2 tablespoons soy sauce, tamari, or Bragg Liquid Aminos
3 to 4 slices fresh ginger or a good squeeze of bottled ginger

Steps:

  • Combine the soy sauce with 1 cup of water in a small mixing bowl and stir together.
  • Combine the gluten flour, baking powder, and optional nutritional yeast and/or seasoning blend in a medium mixing bowl.
  • Gradually add the liquid to form a stiff dough, stirring with a spoon at first, and then working together with your hands. Drizzle in a little more water if need be; you want all the dry ingredients to be moistened, while making sure the dough remains stiff.
  • Turn out onto a floured board (you can use additional gluten flour for this) and knead for 2 to 3 minutes. It's not going to be completely smooth, but really work it!
  • Return the dough to one of the bowls you used, then cover with a clean tea towel. Let it rest for 15 minutes.
  • Meanwhile, fill a soup pot about 2/3 full with water. Add the bouillon cubes and ginger. Start heating.
  • Once the dough has rested, divide it into two more or less equal pieces and pull into long, narrow loaves the shape of miniature French breads. This dough isn't easy to work with; it tends to spring back to whatever shape it's in, but do the best you can - it will come out fine.
  • With a sharp, serrated knife, cut each section of dough crosswise into slices no thicker than 1/2 inch.
  • When the water comes to a slow boil, gently drop in each slice of dough. Within a couple of minutes, the dough is going to puff up and look like it's threatening to escape the cooking pot! It will settle back; keep pushing the pieces down into the water. I like to reach in with kitchen sheers and cut pieces that have expanded crazily, but this is optional.
  • Simmer gently and steadily for 30 minutes. Scoop out pieces of seitan to use in recipes (usually about a third to a half of the amount made with this recipe is what you'll need for an average recipe). Set on a plate or cutting board until cool enough to handle, then cut into smaller slices or chunks.

3 tablespoons tomato paste
1/4 teaspoon ground fennel
1 teaspoon minced ginger
1 1/2 teaspoons coriander
1 teaspoon minced garlic
1 teaspoon chili powder
1 teaspoon curry powder
1/4 teaspoon ground turmeric
2 tablespoons lemon juice
1 teaspoon salt
1 1/4 cups water
1 tablespoon vegetable oil
1 large onion, diced
2 green chilies, seeded and chopped

Steps:

  • Mix the tomato paste, fennel seeds, ginger, coriander, garlic, chilli powder, curry powder, turmeric, lemon juice, salt, and water in a bowl.
  • Heat the vegetable oil in a pan and cook the onions until they are softened.
  • Pour the spice mixture into the pan and let simmer.
  • Break the seitan into pieces and add to the pan.
  • Let the seitan simmer for about 10 minutes, until much of the liquid has been absorbed by the seitan or has evaporated.
  • Remove the pan from the heat, stir in the chopped chiles, and serve.

1 tablespoon peanut oil
2 onions, chopped
2 tablespoons butter
1 teaspoon chopped garlic
1/2 teaspoon chopped ginger
1 tablespoon cumin
1 teaspoon cinnamon
1 teaspoon chili powder
1 teaspoon coriander
1 tablespoon lemon juice
2 (15 ounce) cans tomatoes
1 (16 ounce) package frozen chopped broccoli (or small florets)
2 (16 ounce) packages seitan, cut in 1 inch cubes
1/2 teaspoon salt (or to taste)
1 (5 1/3 ounce) container plain Greek yogurt

Steps:

  • Heat oil in large pot. Add onions and cook until they are starting to brown.
  • Meanwhile, poke a hole in the bag of broccoli. Heat for 3 min in the microwave to speed up cooking.
  • Add butter to pot and stir until melted and sizzling.
  • Add spices (garlic through coriander), stir and cook a couple minutes to bloom flavors.
  • Add lemon juice, tomatoes, seitan (drained) and broccoli. Mix and bring to a boil. Add a little water if there is no liquid on the bottom.
  • Lower heat, cover pan and cook until broccoli is done to your liking.
  • Turn off heat. Mix in yogurt and add salt to taste.
