INDIAN POTATO SALAD

Steps:
- Heat oven to 400°F. Spray cookie sheet with cooking spray.
- Place potato pieces in single layer on cookie sheet. Drizzle with olive oil. Sprinkle with mustard seed, kosher salt, cumin and garam masala; toss to coat well.
- Bake 35 to 40 minutes or until potatoes are brown and beginning to crisp. Cool completely.
- In medium bowl, mix cooled potatoes, yogurt, cilantro, salt and pepper.

INDIAN POTATO SALAD WITH CILANTRO OMELET
The potato salad is delicious on its own, and so is the omelet. Together? Divine.

Steps:
- To cook the potatoes, bring a pot of salted water to a boil. Lower the potatoes into the hot water and cook until tender but not falling apart, about 5 minutes after the water returns to a boil. While the potatoes cook, warm the oil in a saucepan on medium heat. Sizzle the cumin seeds for a few seconds and then stir in the salt, curry powder, and cayenne. Remove from the heat. Drain the cooked potatoes and place them in a bowl. Pour the hot seasoned oil over the potatoes and add the scallions, bell pepper, and cilantro. Stir gently and set aside.
- To make the omelet, whisk the eggs in a small bowl until frothy. Heat the oil in a skillet on medium heat. Pour the eggs into the skillet. When the bottom is set, sprinkle on the cilantro and a little salt and fold the omelet in half. Cook covered until the eggs are set and the bottom is browned. Slice into wedges.
- Serve each wedge of warm omelet with potato salad topped with a dollop of yogurt.
- Replace the salt with 1 1/2 teaspoons Cumin Salt (page 241) and keep or omit the cumin seeds.
- In this potato salad, we love the flavor of our homemade Curry Powder.
- This is a satisfying meal as is, but if you want to indulge, serve one of our chutneys on the side (pages 229, 231). Have a cup of Red Lentil Soup with Greens (page 121) to start, and for dessert, Mango Coconut Sorbet (page 271) or Lemon Coconut Tapioca Pudding (page 276).
INDIAN-SPICED POTATO SALAD

Steps:
- Bring large pot of salted water to boil; add potatoes. Cook until potatoes are tender when pierced with knife, about 25 minutes. Cover and refrigerate until very cold, at least 3 hours. (Can be made 1 day ahead. Cover and chill.)
- Puree shallots, mayonnaise, ginger, and lemon juice in processor. Transfer to small bowl. Stir in 1 1/2 cups cilantro. Season to taste with salt and pepper.
- Peel potatoes; cut into 1/2-inch cubes. Place in large bowl, add dressing, and toss to coat. Refrigerate until cold, about 4 hours. Season to taste with salt and pepper. Garnish with remaining cilantro and serve.
INDIAN SPICED OMELET
This is one of the best omelets you get from vendors on the streets to have between bread slices with maybe some ketchup and green chutney applied to each slice. Have a bite of our street cuisine.

- Heat the oil in frying pan (I use a non stick pan) and fry the onion, chilli, ginger, garlic until translucent.
- Add turmeric and saute for a minute more.
- Add the other spices and cook for a few minutes more stirring now and then.
- Take them off the flame.
- Beat the eggs lightly and add salt to taste.
- Now add the cooked mix to the eggs.
- Add the green leaves chopped, (cilantro and mint).
- Now add it back to the pan which will have some grease in it.
- Cook for a few minutes and then flip over after sprinkling some lemon drops on the first side.
- You can also place this under a grill to do the second side.
- This goes very well with chapatis/ rotis too.

- Combine yogurt, lime juice, tamarind paste, garam masala, cumin, hot sauce, and sugar in a bowl with a whisk until combined. Taste and adjust as needed; mix in water as needed to reach desired consistency.
- Layer chips, jalapeno, bell pepper, red and green onions, potatoes, mint, cilantro, and yogurt sauce as desired for individual portions, or this can be served salad bar-style and everyone can make their own plate. Squeeze lime juice from halves over top.

AMANDA'S DELICIOUS CILANTRO POTATO SALAD
My neighbor served this at a baby shower and everyone wanted a copy of the recipe. This was addictive and had a unique, fresh taste. Don't leave out the bacon at the end..it is an essential ingredient, as is the chopped cilantro and lime juice.

Steps:
- Cook potatoes in boiling water to cover along with 1 tsp of the salt until fork tender, about 15 minutes or so (will vary based on size of potatoes).
- Drain and cool.
- Cut potatoes into bite sized chunks.
- Stir together the mayonnaise, chilies, chopped cilantro, green onions, lime juice, garlic, black pepper, and remaining 1 teaspoons salt in a large bowl.
- Add potatoes and toss to coat.
- Cover and chill at least 4 hours.
- Just before serving, stir in bacon crumbles and garnish with additional fresh cilantro.

- Scrub the potatoes and put into a large pot of salted water. Bring to a boil and lower to simmer. Cook, partially covered, until the potatoes are tender when pierced with a fork,a bout 25 minutes. Drain and let cool slightly.
- While the potatoes are still warm, slice them about 1/4 inch thick (there's no need to peel, but discard any pieces of skin that come off on their own).
- Put half the potatoes in a large serving bowl. In a small bowl whisk the oil, lemon zest, lemon juice, 1 tsp salt and several grinds of pepper. Drizzle on half the dressing. Add the remaining potatoes to the bowl, drizzle on the rest of the dressing and toss gently with a large rubber spatula to combine well.
- Add the cilantro and green onions and toss gently again. Taste and adjust seasonings as needed. Serve warm or at room temperature.
