Coconut Ice image

A super soft and creamy coconut fudge infused with cardamom and topped with rich and tasty white chocolate.

3 cups desiccated coconut
1/4 cup condensed milk
1/2 cup heavy cream
1 teaspoon cardamom powder
300 gm white chocolate
2 tablespoon heavy cream
1 teaspoon rose syrup

Steps:

  • In a heavy bottom, pan add desiccated coconut, condensed milk, and heavy cream.
  • Cook until the mixture starts thickening and add cardamom powder. Remove and transfer it into the prepared baking tin.
  • Meanwhile, melt the chocolate in double boiler and add heavy cream in it. Let it cool and add rose syrup.
  • Pour it over the coconut layer and let it set in the refrigerator. Once cooled cut square pieces.
  • Store in airtight container in the refrigerator. Serve and enjoy.

4 tbsp ghee or clarified butter, plus extra for greasing
100ml milk
100ml double cream
6 green cardamom pods
175g golden caster sugar
200g desiccated coconut
200g gluten-free white chocolate
4 tbsp double cream
a few drops of pink food colouring

Steps:

  • Grease a 16cm square baking tin with ghee. Mix the milk and cream and set aside. Bash the cardamom pods, then remove the seeds and crush them in a pestle and mortar.
  • Melt the ghee in a non-stick pan over a medium heat. Add the caster sugar and coconut, stir for 2 mins, then add the cream and milk mixture, followed by the ground cardamom. Stir continuously over the heat for about 10 mins or until the mixture starts to thicken. Remove from the heat and spread evenly into the tin.
  • For the topping, melt the white chocolate in a heatproof bowl over a pan of simmering water or in the microwave. Warm the cream, then add to the melted chocolate and mix well. Remove from the heat and stir in the food colouring. Pour this mixture over the coconut layer and chill in the fridge for 2-3 hrs until set. Cut into squares to serve.

¼ cup white sugar
1 teaspoon vanilla extract

  • Mix coconut milk, evaporated milk, sugar, vanilla extract, and cinnamon together in a bowl or blender until sugar dissolves and mixture is thoroughly combined.

Coconut Ice Cooked Version image

This comes from Hilary Walden's The Complete Home Confectioner. It's for a more traditional, cooked coconut ice candy.

450 g sugar
150 ml milk
150 g desiccated coconut (a very finely ground dried shelf-stable coconut)
2 -5 drops red food coloring

Steps:

  • Grease a pan (8x6inches) with oil or butter.
  • Heat sugar and milk in large heavy saucepan over low heat. Stir with a wooden spoon until sugar has dissolved.
  • Bring to a boil, cover, and boil for 3 minutes exactly.
  • Uncover and place a prewarmed candy thermometer in the pan. Boil until it reaches 116C/240F, the soft ball stage.
  • Remove from heat and stir in coconut.
  • Quickly pour the mixture into the pan.
  • Add food colouring, stir in quickly and pour into pan on top of the white layer.
  • Cool until half-set, mark into squares or fingers with an oiled knife.
  • Leave until completely set then break or cut into pieces.
  • Wrap in waxed paper and store in an airtight container in a cool place for up to 7 days.

1 cup coconut milk
1 cup frozen shredded coconut, thawed
½ cup curry leaves
1 medium onion, quartered
4 peppers serrano peppers, stems removed
5 cloves garlic
1 (1 inch) piece fresh ginger, peeled
2 tablespoons lime juice
2 teaspoons unsalted natural peanut butter
1 teaspoon salt
1 teaspoon ground cumin
1 tablespoon peanut oil
1 teaspoon mustard seeds
4 curry leaves

Steps:

  • Combine coconut milk, shredded coconut, 1/2 cup curry leaves, onion, serrano peppers, garlic, ginger, lime juice, peanut butter, salt, and cumin in a blender; puree until smooth, 2 minutes or more.
  • Heat oil in a saucepan over medium heat. Add mustard seeds and cook until they pop, 10 to 20 seconds. Add 4 curry leaves and cook for 30 to 60 seconds. Add pureed mixture to the pan; it will sputter. Cook, stirring occasionally, for 5 minutes.
  • Remove and discard curry leaves. Allow chutney to cool before serving.
