2 teaspoons finely grated ginger
3 cloves garlic, crushed
1 teaspoon garam masala
1/2 teaspoon ground cumin
1/4 teaspoon ground turmeric
1/2 teaspoon mustard powder
1/4 to 1/2 teaspoon cayenne pepper
2 tablespoons lemon juice
Coarse salt and freshly ground pepper
5 tablespoons unsalted butter, melted
4 fish fillets or steaks (6 ounces each) such as swordfish, halibut, haddock, tuna, or salmon

Steps:

  • In a small bowl, combine ginger, garlic, garam masala, cumin, turmeric, mustard powder, cayenne pepper, lemon juice, 3/4 teaspoon salt, and a pinch of black pepper. Stir in about 1 tablespoon warm water to form a very thick paste.
  • Brush a baking sheet or broiler pan with 1 tablespoon butter; place fish on top. Cover fish on both sides with marinade; set aside for at least 15 minutes but no more than 30 minutes.
  • Preheat broiler. Drizzle 2 tablespoons butter over fish; broil until nicely browned, 5 to 6 minutes. Turn over steaks, and drizzle with remaining 2 tablespoons butter; broil until browned and cooked through. Serve immediately.

1 cup fat-free plain yogurt
½ tablespoon cayenne pepper
6 cloves garlic, minced
2 (2 inch) pieces fresh ginger root, minced
2 tablespoons cilantro, finely chopped
1 tablespoon ground coriander seed
1 teaspoon ground cumin
1 teaspoon salt
¼ teaspoon ground turmeric
4 (6 ounce) skinless, boneless salmon fillets

Steps:

  • Combine the yogurt, cayenne pepper, garlic, ginger, cilantro, ground coriander, cumin, salt and turmeric in a resealable plastic bag. Close bag and mix everything together until evenly combined. Add the salmon and toss until well coated with the marinade; marinate overnight.
  • Preheat the oven broiler. Lightly grease a baking pan.
  • Remove salmon from marinade and shake off excess; discard remaining marinade. Place onto prepared baking pan and broil in preheated oven until salmon flakes easily with a fork, five to seven minutes per side.

4 white fleshed fish steaks (or a large fish, split, head removed), about 2 to 2 1/2 pounds, 1 1/2 inches thick
2 tablespoons coriander seed
4 cardomom seeds, peeled
1 small onion, coarsely chopped
1 clove garlic, coarsely chopped
1/2 teaspoon paprika
1/2 teaspoon aniseed
1 long green chili, seeded and coarsely chopped
1 cup lowfat yogurt
2 tablespoons fresh mint leaves
Freshly ground pepper to taste
Juice of 1 lemon
1 tablespoon safflower oil

Steps:

  • Wipe the fish steaks dry with paper towels.
  • Combine the remaining ingredients in the jar of a blender and puree until smooth. Coat the fish steaks with the mixture and leave for an hour.
  • Preheat broiler. Broil fish about 6 to 7 minutes on each side, basting with the marinade.
