INDIAN BEEF MASALA FRY



Indian Beef Masala Fry image

This is a very traditional South-Indian preparation of beef...a slightly spicy dry side-dish. The flavour is more authentic when it is prepared using coconut oil instead of regular vegetable oil.Extremely simple,it tastes great when paired with pulao or even pita bread & hummus.

2 lbs beef, small cubes
1 red onion, sliced finely (big)
4 green chilies, minced
1/2 inch gingerroot, finely chopped
2 teaspoons coriander powder
1 teaspoon garam masala
1/2 teaspoon black pepper
1 teaspoon red chili powder
4 red chilies (dried,seeds removed)
8 -10 curry leaves
4 tablespoons shredded coconut (dried)
1/2 teaspoon ghee
salt

Steps:

  • Marinate the beef with half of the the sliced onions, green chillies, ginger, curry leaves, coriander powder, garam masala, pepper and red chili powder. Keep aside for at least half an hour.
  • Sauté the remaining half of the onions till golden brown. Add the red chilies and sauté for a few more minutes.
  • Next add the marinated beef and half a cup of water. Add salt to taste. Cover and cook on low heat till the beef is tender.
  • Once the beef is well cooked, stir-fry continuously till it turns dry and dark brown in colour.
  • Separately, heat the ghee and fry the shredded coconut till brown.
  • Add the coconut to the fried beef, stir on medium heat for 5 minutes till it is well mixed.

  • Dry grind the spices together (cinnamon, cloves, peppercorns, fennel seeds, turmeric, coriander powder and garam masala)
  • Marinate the beef in the freshly ground spices, spice powders, and vinegar preferably overnight or at minimum for 2 hours.
  • After the marination period, season with salt and cook the well-marinated beef in a pressure cooker, without adding any additional water to the same. Allow the beef to cook on a medium flame till you hear the first whistle.
  • Whilst the beef cooks or once the beef is cooked, sauté the onions, serrano peppers, ginger and garlic in a large saute pan or wok.

  • Crush dried red chilli. Cut beef into 1.5" cube pieces. Marinate cleaned beef pieces with ingredients listed under marination. Keep it aside for 30 minutes.
  • Add 3 tbsp of water to this and add it into the Instant Pot. Close the Instant Pot lid, move the valve to SEAL and cook on MANUAL HIGH-PRESSURE setting for 2 minutes. Refer the notes on time setting. Make sure that beef is not overcooked.
  • Once the timer goes off, either do a NATURAL PRESSURE RELEASE or a QUICK PRESSURE RELEASE after 10 minutes. Refer notes for instructions on natural and quick release.
  • To dry up the water, switch on SAUTE mode MORE setting. Before it starts sticking to the base, change the Instant Pot setting to SAUTE mode NORMAL setting. Refer notes on how to change the SAUTE setting. Once, water kinda dried up, switch it off.

  • In a small saute pan on medium-low heat, add all of the spices. Toast the spices just until warm and you can smell the aroma of the spices. Once the spices cool down, add the spices in a small spice grinder or blender. Grind until a slightly coarse powder forms. Store in an air-tight container.
  • In a large bowl or in the pot of your pressure cooker, add all of the ingredients under the marinade section, then mix together. Cover and refrigerate for at least an hour or overnight.
  • After the beef is marinated, pressure cook the beef on high for 10 minutes (about 4 whistles). You do not need to add water to this. Moisture will naturally extract from the beef as you pressure cook it. Do not discard the moisture from the pressure cooked beef.
  • In a wide/deep pan (or uruli) on medium high heat, add the coconut oil. Once the oil is hot, add in the shallots, garlic, and curry leaves. Saute until lightly golden then add in the cooked beef along with its juices. Continue to stir the beef around in your pan so that it evenly fries and encourages the moisture to reduce. This usually takes 15-20 minutes. About halfway through, sprinkle in about 1-2 tsp of meat masala over the beef and then continue frying. The beef is done frying when all the moisture is gone and a gravy/spice coating has formed on the beef. That's it!
