Steps:
- Puree 1/3 cup sliced pimientos (drained) in a blender or food processor until smooth. Transfer to a large bowl. Add 3 cups finely grated sharp cheddar and beat with a mixer until combined. Beat in 1/4 cup mayonnaise.

- 1. Grate cheeses or cut into small pieces. Allow to soften at room temperature.
- 2. Combine all ingredients and blend by using mixer, blender or food processor. (It may be necessary to divide ingredients into two batches unless you have a very large mixing container.)
- 3. Store leftovers in fridge. Can be frozen. Yields: 2 quarts.

- Heat oven to 350ºF.
- Do not separate rolls. Use long serrated knife to cut block of rolls horizontally in half; place bottom halves of rolls in 13x9-inch pan.
- Mix pimento spread, cheddar and pimentos until blended; spread evenly onto cut sides of rolls.
- Place ham on bottom halves of rolls; cover with tops of rolls.
- Mix remaining ingredients until blended; drizzle over sandwiches. Cover with foil. Let stand 20 min.
- Bake sandwiches (covered) 20 min. or until heated through.

INCREDIBLE PIMENTO CHEESE
Our favorite, from Southern Living Homestyle cooking 2002. This makes a lot, I often half the recipe. It freezes well for up to a month. I usually double the pimento. My mom makes it with light velvetta, reduced fat cheeses, lite mayo and splenda and it is still really good.
