- Preheat oven to 350 degrees F.
- Lay the chicken breast between 2 pieces of plastic wrap. Using the flat side of a meat mallet, gently pound the chicken to 1/4-inch thickness. Remove the top sheet of plastic and lay 2 slices of prosciutto neatly over the top to cover the breast and sprinkle a quarter of the cheese over the prosciutto. Tuck in the sides of the breast and roll up tight like a jellyroll inside the plastic wrap. Squeeze the log gently to seal and twist both ends tight to form a nice log. Repeat with remaining chicken.
- Season the flour with salt and pepper. Mix the bread crumbs with thyme, garlic and kosher salt, pepper, and melted butter. The butter will help the crust brown. Beat together the eggs and season so the flour, the eggs and the crumbs are all seasoned.
- Remove the plastic wrap. Lightly dust the chicken with flour, dip in the egg mixture and gently coat in the bread crumbs. Lightly coat a baking pan with olive oil and carefully transfer the roulades onto it. Bake for 20 to 25 minutes until browned and cooked through.
- Cut into pinwheels and serve on top of Brussels Sprout Hash with Chicken Jus and Cranberry Chutney, if desired.
ORIGINAL CHICKEN CORDON BLEU
This classic French chicken dish, adapted from Jane and Michael Stern's book "American Gourmet," more than lives up to its name ("cordon bleu" means "blue ribbon"). It's also far easier to make than you may think. A chicken breast is pounded thin (we've been known to cheat by using pretrimmed cutlets), then wrapped around a slice of smoked ham and a bit of Swiss cheese, and secured with toothpicks. The roulade is coated in egg and bread crumbs, then pan-fried until golden brown, and a simple white wine cream sauce finishes it off.

- Lay the chicken breasts between pieces of wax paper and use a mallet to pound them to 1/4 inch to 1/8 inch thick. Take care not to pound holes in the chicken. Layer each breast with the ham, then place a finger of cheese in the center. Roll up to completely enclose the ham and cheese and secure with toothpicks.
- In a medium bowl, combine the flour, salt and pepper. Lightly dredge the chicken in the seasoned flour, then dip in the egg and coat with bread crumbs. Place on a baking sheet and chill at least 15 minutes and up to 4 hours.
- In a large skillet over medium heat, heat the butter. Add the chicken and cook, turning carefully with tongs, until browned, about 8 to 10 minutes. Add 1/2 cup of the stock to the skillet, reduce the heat to medium-low, cover and simmer until the chicken is cooked through, 10 to 15 minutes. Move the chicken to a warm platter.
- Add the remaining 2 tablespoons of stock to the skillet, raise the heat to high, and cook, stirring up browned bits clinging to the bottom, for 1 minute. Add the wine (or heavy cream or additional stock), lower the heat and simmer, uncovered, until the consistency of gravy, about 45 seconds. Pour over the chicken breasts and serve.

- Preheat oven to 375 degrees. Melt butter in glass baking dish.
- Lightly flatten chicken breasts between plastic wrap with mallet. Lay 1 slice of ham and 1 piece of cheese on flattened breast, fold in half and seal close with toothpicks. Repeat process for remaining chicken breasts.
- Coat each piece with flour, then eggs and then bread crumbs. Place chicken pieces in glass baking dish. Turn to coat with butter.
- Bake for 40-45 minutes or until golden brown. Serve with parselyed rice and steamed broccoli.
CHICKEN CORDON BLEU MEATLOAF
I made this one up after not being able to find boneless thighs for a proper ckicken cordon blue recipe.(I was dining with someone who doesn't care for breasts! So when i saw the ground chicken this came to mind. I thought same taste, just a little twist. I serve with ready made chicken gravy drizzled on top, and usually with a vegetable to round out the meal. It is probable going to be around in my kitchen forever! Once a week my family wants this! So will yours! Enjoy!

- mix ground chicken, bread crumbs, eggs, 1 cup parmesan, minced garlic,garlic salt, black pepper, cayenne pepper, onion powder, mix well.
- take half of meat mixture and put in bottom of large loaf pan. then we layer the middle. 1 cup parmesan cheese, 2 oz. gouda, 3 oz. ham, 3 oz. french fried onions. then repeat same layer agian.
- top with remaining meat mixture and press around sides of pan to enclose the layers.
- bake in preheated oven at 375 degrees for about 1 hour. use meat thermometer if possible.

- Butterfly the chicken breasts, and pound it super thin between a folded piece of Saran wrap. Salt and pepper both sides.
- Add a shmear of Dijon, 2 slices of swiss, two slices of ham to each and roll breast tightly. I set up my station with salt and pepper already mixed, the cheese, ham, and Dijon all on a plate, and keep it close by so I don't cross contaminate my ingredients. By having everything ready on a plate before assembling, it really made everything easier.
- Once the chicken is assembled, roll it tightly. Roll it up in the Saran wrap like a burrito OR, roll it and twist the ends until tight. Let cool in the fridge for about 30 minutes so it stays in the form you made it in. You can also fasten it together with toothpicks. I have done this in the past with a lot of success, but I saw them do it with Saran wrap on one of those cooking videos all over Facebook and decided to try it this way. Much to my surprise, the Saran wrap trick really worked! I didn't have to dig out a bunch of toothpicks before serving either! The steps up until now can be done up to 3 days in advance.
- *Unfortunately, I didn't snag a picture because "little chef" (my three year old) kept trying to steal cheese and bread crumbs to feed a mouse outside. She hasn't seen a mouse, but has decided she is going to catch one (with a lasso because duh) and keep it in her bed as a pet. To her, holey cheese (Swiss) is a mouse's favorite cheese so naturally me buying Swiss gave her the go-ahead to find a new pet. Look up a video or two and I'm sure you'll find the technique I explained in step 3.

- Place a rack in middle of oven; preheat to 375°. Trim any fat around edges of chicken. Working one at a time, place chicken between sheets of parchment paper and pound with a mallet or rolling pin until about ¼" thick. Season chicken all over with salt and pepper.

- Prepare the four chicken breasts by rinsing them, trimming any fat and then slicing lengthwise to create 8 uniform chicken fillets. Place two breasts in a gallon size ziploc bag and use a meat mallet to pound them to a uniform thickness of approximately 1/4".
- Place a slice of ham on the chicken and then a slice of cheese over the ham. Roll the chicken to create bundles and then secure with toothpicks or kitchen twine. Mix the flour, paprika, salt and pepper in a small bowl and then use the flour mixture to coat the chicken bundles on all sides.
- Preheat the oven to 350. While the oven is heating, heat half the butter in a large skillet over medium high heat. Cook four chicken bundles at a time, turning as needed, until the chicken is browned on all sides. Remove browned chicken to an oven-proof baking dish and set aside.
- Add the remaining butter to the skillet. Cook the rest of the chicken and then transfer it to the baking dish. Bake until the chicken is cooked through and no longer pink. Be careful not to overcook it. This took about 10 minutes for me. When the chicken is finished in the oven, tent with foil and set aside until ready to eat.
