A sweet, cake-like take on traditional blackberry cobbler that pairs well with fresh sweetened cream or vanilla ice cream.

1 stick butter
1 1/4 c. sugar
1 c. self-rising flour
1 c. milk
2 c. blackberries (frozen or fresh)

Steps:

  • Melt butter in a microwavable dish. Pour 1 cup of sugar and flour into a mixing bowl, whisking in milk. Mix well. Then, pour in melted butter and whisk it all well together. Butter a baking dish.
  • Now rinse and pat dry the blackberries. Pour the batter into the buttered baking dish. Sprinkle blackberries over the top of the batter; distributing evenly. Sprinkle ¼ cup sugar over the top.
  • Bake in the oven at 350 degrees for 1 hour, or until golden and bubbly. If you desire, sprinkle an additional teaspoon of sugar over the cobbler 10 minutes before it's done.

Steps:

  • Preheat oven to 350 degrees F.
  • Into a buttered shallow baking dish place blackberries. Sprinkle with 1/3 cup sugar.
  • In the bowl of a food processor combine flour, baking powder and salt. Add butter and pulse to create lumpy mixture. Add cream and pulse until dough forms. Dough will be soft. Spoon dough over blackberries.
  • Melt remaining 2 tablespoons butter and drizzle over mounds of dough. Sprinkle with remaining 1/3 cup sugar.
  • Bake about 30 to 40 minutes or until dough and fruit are cooked through and dough is lightly browned.
  • Serve with whipped sweetened cream.

Steps:

  • Start by preheating your oven to 400 degrees F.
  • Line a baking sheet with foil. Set aside.
  • In a large mixing bowl, combine flour, 1/2 cup sugar, salt, and baking powder. Whisk to combine.
  • Next, you want to add the butter to the flour mixture and stir lightly to combine.
  • Add boiling water to the flour-butter mixture to melt the butter, then stir to combine. Set aside.
  • In a separate mixing bowl, combine the cold water and cornstarch. Mix well. Add the blackberries, the remaining 1/2 cup sugar, vanilla, and cinnamon. Stir well.

1 cup all-purpose flour
1/3 cup granulated sugar
1/4 cup light brown sugar, lightly packed
1/2 teaspoon kosher salt

1/4 pound (1 stick) cold unsalted butter, diced

Steps:

  • Preheat the oven to 350 degrees F.
  • Immerse the peaches in boiling water for 30 seconds to 1 minute, until their skins peel off easily. Place them immediately in cold water. Steps:

  • First you should take care of the blackberry and sugar mixture because it needs to sit for a while. Stir together just the berries and sugar in a large bowl and let it sit out for 25 to 30 minutes. This will coax out the juices of the blackberries so that they can be sweetened up by the sugar, and we can taste the full spectrum of the fruit-this process is called macerating. After about 20 minutes, you should turn on the oven to about 375ºF and start preparing your batter. Stir together the flour, baking powder, salt, and milk with a wooden spoon. Next, stir in the melted butter and hand-mix it until the ingredients are well incorporated and you have few clumps. Pick out a clean baking dish, a smaller one will do, like a 9x9-inch pan, pour in the batter and smooth it out. You can choose to line it with parchment paper or not, but don't grease the pan (there is enough butter in there already!). Finally, pour the macerated blackberries on top with all the sugar included and evenly distribute it over the batter. Bake this promising pan of happiness in the oven for 45 minutes to an hour, depending on how golden you prefer it to be. Let it set up for a good 15 minutes so it will hold its shape. 2 cups fresh blackberries

  • Preheat an oven to 350 degrees F (175 degrees C). Grease a 9x9-inch baking dish.
  • Whisk 1/2 cup sugar together with the flour and baking powder in a mixing bowl. Stir in the milk and margarine until a batter forms. Scrape into the prepared baking dish. Add the blackberries, and sprinkle with 1/2 cup sugar. Pour in the water.

4 -5 lbs firm ripe peaches (10 to 12 large peaches)
1 orange, zest of
1 1/4 cups granulated sugar (divided use)
1 cup light brown sugar, packed (divided use)
1 1/2 cups all-purpose flour, plus
2 -3 tablespoons all-purpose flour (divided use)
1/2 pint raspberries
1/4 teaspoon salt
1 cup quick-cooking oatmeal
1/2 lb cold unsalted butter, diced

Steps:

  • Preheat oven to 350 degrees. Butter the inside of a 10-by-15-inch oval baking dish.
  • Immerse the peaches in boiling water for 30 seconds, then place them in cold water. Peel the peaches and slice them into thick wedges and place them into a large bowl.
  • Add the orange zest, 1/4 cup granulated sugar, 1/2 cup brown sugar and 2 tablespoons of flour. Toss well. Gently mix in the raspberries. Allow the mixture to sit for 5 minutes. If there is a lot of liquid, add 1 more tablespoon of flour. Pour the peaches into the baking dish and gently smooth the top.
  • Combine 1 1/2 cups flour, 1 cup granulated sugar, 1/2 cup brown sugar, salt, oatmeal and the cold butter in the bowl of an electric mixer fitted with a paddle attachment. Mix on low speed until the butter is pea-sized and the mixture is crumbly. (Note: May mix by hand or with a pastry blender.) Sprinkle the topping evenly over the peaches and raspberries.
  • Bake the crisp for 1 hour, until the top is browned and crisp and the juices are bubbly. Serve immediately or store in the refrigerator and reheat in a 350-degree oven for 20 to 30 minutes until warm.
