As the weather changes, I want a light meal, but I also want to feel like I ate something.

1 tablespoon butter
6 yellow squash blossoms
4 fresh basil leaves, chopped
4 fresh oregano leaves, chopped
4 fresh thyme leaves, chopped
1 clove garlic, minced
2 tablespoons white wine
6 ounces green chile sauce (such as Coyote Trail®)

Steps:

  • Melt butter in a large skillet over medium heat. Add squash, basil, oregano, thyme, and garlic; cook and stir until fragrant, about 1 minute. Pour in wine; cook for 1 minute more.
  • Remove skillet from heat and stir in green chile sauce. Let stand, covered, until flavors combine, about 5 minutes.

This recipe was my Grandmother's and it actually won a Blue Ribbon in the Tennessee State Fair! Be sure to use fresh squash, I use butternut but other squash would also be good.

6 pounds butternut squash - peeled, seeded and sliced
1 egg, beaten
½ cup milk
½ cup all-purpose flour
½ cup cornmeal
1 pinch salt
1 pinch ground black pepper
1 pinch garlic salt
1 cup oil for frying

Steps:

  • Combine egg and milk together in a small bowl, mix well.
  • In a second bowl, combine flour, cornmeal, salt, pepper and garlic salt. Dip squash slices first in the egg mixture, then dredge the squash in the dry mixture.
  • Heat 1/2 inch of oil in a deep skillet over medium heat. Fry squash until golden brown.

  • Roughly chop the basil, parsley, carrot tops (if using and mint. Remove the cooked vegetables from the heat and toss with the zucchini blossoms and herbs until they wilt. Taste for seasoning.
  • When the pasta is cooked, drain well and toss with the zucchini blossom and herb sauté. Serve warm or at room temperature topped with the parmesan cheese, if desired.
