1 cup all-purpose flour
1 cup white sugar
¼ teaspoon salt
2 cups cranberries
½ cup chopped walnuts
½ cup butter, melted
2 eggs
1 teaspoon almond extract

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease one 9 inch pie pan.
  • Combine the flour, sugar, and salt. Stir in the cranberries and the walnuts, and toss to coat. Stir in the butter, beaten eggs, and almond extract. If you are using frozen cranberries, the mixture will be very thick. Spread the batter into the prepared pan.
  • Bake at 350 degrees F (175 degrees C) for 40 minutes, or until a wooden pick inserted near the center comes out clean. Serve warm with whipped cream or ice cream.

2 cups cranberries, rinsed with stems removed
1/2 cup sugar
1/2 cup chopped nuts
2 eggs
1 cup sugar
1 cup flour
1/2 cup butter or 1/2 cup margarine, melted

Steps:

  • Heat oven to 325°F.
  • Grease a 10-inch pie plate.
  • Spread cranberries over bottom of pie plate. Sprinkle with 1/2 cup sugar and nuts.
  • Beat eggs well. Add 1 cup sugar gradually and beat until thoroughly mixed. Add flour, melted butter to egg and sugar mixture. Beat well. Pour batter over the top of cranberries.
  • Bake for 1 hour.

1 1/2 cups chopped cranberries
1 teaspoon grated orange peel
1/2 cup chopped walnuts
1/2 cup buttermilk
1/4 cup orange juice
1/3 cup melted butter
1 teaspoon vanilla
4 eggs
1 1/2 cups sugar
3/4 cup original Bisquick baking mix

Steps:

  • Preheat oven to 350 degrees F. Spray a 10-inch pie plate with nonstick baking spray containing flour.
  • Mix cranberries, orange peel, and walnuts and sprinkle evenly into pie plate.
  • Combine remaining ingredients in a large bowl and beat until smooth. Carefully pour over cranberries in pie plate.
  • Bake 35-40 minutes in preheated oven or until knife inserted in center comes out clean. Chill for 6 hours before serving. Garnish with ice cream or whipped cream.

CRANBERRY CURD PIE WITH MERINGUE TOPPING

This is cranberry curd pie made easy with the addition of one surprisingly convenient ingredient - canned cranberry sauce. The curd has the ideal balance of tart and sweet, and once it's topped with a pillowy mound of meringue, the pie is a real show stopper. For extra flair, use a kitchen torch to brulee the meringue before serving. What's more, the pie can be made a day before serving, for a perfect make-ahead dessert when entertaining.

1 sheet refrigerated pie dough, thawed if frozen
6 large eggs
1 teaspoon grated orange zest plus 1/4 cup fresh orange juice
2/3 cup sugar
Pinch kosher salt
Two 14-ounce cans jellied cranberry sauce
10 tablespoons unsalted butter, cut into 1/2-inch cubes
1/4 teaspoon cream of tartar

Steps:

  • Preheat the oven according to the pie-dough package instructions for "Baked Shell." Unroll the pie dough, fit it into a 9-inch pie plate and crimp or decorate the edges as desired. Prick the bottom and sides of the dough with a fork and bake as directed. Let cool completely on a wire rack.
  • Preheat the oven to 350 degrees F.
  • Separate 4 of the eggs, reserving the egg whites for the meringue. Add the egg yolks, remaining 2 whole eggs, orange zest and juice, salt, 1/3 cup of the sugar and the jellied cranberry sauce to a medium pot. Add the butter, set the pot over medium heat and cook, whisking continuously, until the butter is melted and the curd has thickened and reached a temperature of 170 degrees F on an instant-read thermometer, about 10 minutes. Strain the mixture into a large bowl, then pour into the cooled pie crust. Bake until the curd is just starting to set but still jiggly in the center, 10 to 12 minutes.
  • Let the pie cool to room temperature, about 1 hour, then refrigerate until the curd is chilled and completely set, at least 6 hours or up to overnight.
  • When ready to serve, make the meringue. Beat the reserved 4 egg whites in a medium bowl with an electric mixer on medium speed until frothy, 2 to 3 minutes. Whisk in the cream of tartar and then gradually add the remaining 1/3 cup sugar, a spoonful at a time. Whisk on medium-high speed until the meringue is glossy and holds a stiff peak when the whisk is lifted, 8 to 10 minutes.
  • Dollop the meringue over the pie in an even layer. Use a kitchen torch if desired to brulee the top.

1 (29 ounce) can peach slices in heavy syrup
1 (12 ounce) package cranberries (fresh or frozen, 3 cups)
1 1/4-1 1/2 cups sugar
1/4 cup cornstarch
2 cups all-purpose flour
1/2 teaspoon salt
2/3 cup shortening
6 -7 tablespoons cold water

Steps:

  • Preheat oven to 375°F Drain peach slices, reserving 1/2 cup syrup. Cut the peach slices crosswise into thirds; set aside. In a large saucepan, combine reserved syrup and cranberries. Bring to boiling; reduce heat to medium. Cook, uncovered, until the cranberry skins pop, stirring occasionally (about 2 minutes).
  • In a small bowl, stir together sugar and cornstarch. Add sugar mixture to the cranberry mixture. Cook and stir until thickened and bubbly. Remove from heat; stir in the peaches. Set aside and keep warm.
  • In a medium bowl, stir together flour and salt. Using a pastry blender, cut in shortening until pieces are pea-size. Sprinkle 1 tablespoon of the water over part of the mixture; gently toss with a fork. Push moistened dough to side of the bowl. Repeat moistening dough, using 1 tablespoon of the water at a time, until the dough is moistened. Divide in half. Form each half into a ball.
  • On a lightly floured surface, flatten one dough ball. Roll from center to edges into a 12-inch circle. To transfer pastry, wrap it around the rolling pin; unroll into a 9-inch pie plate. Ease pastry into pie plate, being careful not to stretch pastry. Trim bottom pastry to 1/2 inch beyond edge of pie plate.
  • Roll out remaining pastry to a 12-inch circle and cut into 1/2-inch-wide strips. Fill pastry-lined pie plate with cranberry mixture. Lay half of the pastry strips 1/2 inch apart on top of the filling. Arrange remaining strips 1/2 inch apart on top of the first strips in a diamond-shaped pattern. Trim ends of strips even with edge of bottom pastry. Press ends of strips into crust rim. Fold edge of bottom pastry over edge of strips; seal and crimp edge as desired.
  • Bake for 40 to 45 minutes or until filling is bubbly and pastry is golden brown. Cool on a wire rack at least 2 hours. Serve warm, or to store, cover and let stand at room temperature for up to 24 hours.

4 eggs
1/2 cup Bisquick
3 tablespoons butter, melted
1/4 teaspoon salt
1 1/2 cups sugar
1 teaspoon vanilla
1 cup milk
powdered sugar (for garnish)

Steps:

  • Heat oven to 375 degrees.
  • Grease 10" pan, put fruit in pan.
  • Blend all remaining ingredients (except Powdered Sugar) for 3 minutes.
  • Pour over Fruit. Let set for a few minutes. Bake 40 to 45 minutes.
  • After Pie is cooled, dust with Powdered Sugar.

i found this recipe in my sister in law's high school cook book. it really is impossible in everything, impossibly easy to make, impossibly tasty. it has got me out of a fix more than once when i had guests coming over within an hour's notice. this recipe is originally eaten cold, but just last week we had it warm and it still rocked. hope you like as much as we do. Sorry about the temp, the first reviewer was right it does bake at 350*F, corrected it now. Thanks for the reviews.

  • pour into a greased 25cm backing dish.
