This is an old recipe that came from the Amish. This is a pie you'll make over and over again.

Steps:
- Cream eggs, sugar, butter and vanilla with mixer.
- Add nutmeg, flour and milk and continue mixing until all ingredients are wet. Stir in coconut with a spoon.
- Spray a 10 inch deep dish pie plate with cooking spray and pour in pie ingredients. Bake in a preheated 350 degree oven 55 to 60 minutes until brown on top.
BEST EVER IMPOSSIBLE PIE
Really easy and tasty dessert. The flour sinks to form a crust, the middle is a custard and the top is coconut. Serve chilled with a dollop of Cool Whip.

- Preheat oven to 400.
- Grease pie plate, 10x1 1/2", or square baking dish, 8x8".
- Cook and stir the ground beef and onion in 10" skillet until beef is brown; drain.
- Stir in seasoning mix; spoon into pie plate. Beat baking mix, milk and eggs about 1 min with wire whisk or hand beater or until almost smooth.
- Pour into pie plate. Bake about 25 min or until knife inserted in center comes out clean.
- Sprinkle with cheese. Bake about 2 min longer or until cheese is melted.
- Cool 5 minute.
- Garnish with lettuce, tomato and olives.
- FOR 1/2 RECIPE; Use 1 qt square or round casserole. Decrease baking mix to 1/2 cup, milk to 3/4 cup and eggs to 2.
- Divide remaining ingredients amounts in half.
- Decrease beat time to 10 sec. in blender or 30 sec. with wire whisk or hand beater Increase bake time to 30-35 minute.
- High Altitude For the 1/2 recipe only use 1 1/2 qt round or 1 quart square casserole. no other adj necessary.

Don't let the name fool you, it's not impossible!! A recipe that I got from one of my Aunt's. Very easy and delicious.

Steps:
- 1. Brown ground beef; drain and add chopped onion and taco seasoning (with water as package directs) but remember you want this pretty dry not real wet.
- 2. Take above meat mixture and spread on the bottom of a deep dish pie pan, sprinkle green chilies & small can of drained corn.
- 3. Beat Bisquick, milk, eggs until smooth. Pour over the meat mixture and bake at 400 degrees for 35 mins
- 4. Once this is done remove from oven and sprinkle cheese on the top and place back in oven until cheese melts and is golden brown. Once cheese melts insert a knife to make sure it comes out clean so you know your bisquick topping is done.
- 5. Cool for 5 min and service with diced tomatoes; sour cream and lettuce. You can always put some corn chips on the side.
