IMPOSSIBLE PIE
This is an old recipe that came from the Amish. This is a pie you'll make over and over again.

Steps:
- Cream eggs, sugar, butter and vanilla with mixer.
- Add nutmeg, flour and milk and continue mixing until all ingredients are wet. Stir in coconut with a spoon.
- Spray a 10 inch deep dish pie plate with cooking spray and pour in pie ingredients. Bake in a preheated 350 degree oven 55 to 60 minutes until brown on top.
IMPOSSIBLE PUDDING
A one dish coconut custard which can be eaten hot or cold and is impossible to muck up! Great with fruit and/or ice cream.

Steps:
- Lightly beat eggs in large bowl.
- Add milk, melted butter, coconut, sugar, flour and vanilla.
- Mix well to combine.
- Pour into an 18cm (7 or 8 inch diameter) oven proof pudding bowl.
- Bake in a moderate oven (180C)(360F)for 35 to 45 minutes until custard is set and top is golden.
- Can be eaten hot or cold.

LEMON IMPOSSIBLE PIE
Lemon Impossible Pie! Incredibly easy to make and the flavor is amazing! This taste best if made ahead and chilled overnight

Steps:
- Mix all ingredients in a bowl using a spoon or hand whisk.
- Pour into a greased and floured pie plate (about 8 - 9 inches size) and bake 350 F or 180 C or Gas 4 oven for 45 minutes. I place my pie in a baking tray in case of spills.
- When done, the pie will be slightly wobbly in the center. Remove from the oven and allow to cool, then refrigerate overnight if possible.
- Serve on its own or with a blob of vanilla ice cream!

IMPOSSIBLE RICE PUDDING
Another recipe I received over 20 years ago. Its called impossible because with this amount of rice to liquid ratio it shouldn't work, but it has worked like a charm for me. Very creamy indeed. with an old fashioned taste.

Steps:
- Heat milk and water together on stove top to barely boiling.
- Add rest of ingredients, except for spices and stir.
- Cover and reduce heat to very low and cook for 45-50 minutes.
- Check rice to make sure it is tender and liquid is creamy and thickened, if not, cover again and cook another 5-10 minutes.
- Will thicken even more upon standing.
- Sprinkle with Nutmeg or Cinnamon.
