Imperial Stout Bread image

The easiest bread you will ever make--if you can stir, you can have fresh bread in an hour! The dark beer gives it a great flavor not commonly found in beer bread (please please please do not use light beer in this!!!). For variation, try adding caraway or fennel seeds, fresh grated nutmeg, finely chopped orange zest, or finely grated cheese. You can also make this into biscuits, just bake at same temp on parchment lined sheet for 10-14 minutes depending on the size of the biscuits.

Number Of Ingredients 5

3 cups wheat flour (also works well with whole rye flour, just add 2 T. extra flour)
3 tablespoons sugar
1 tablespoon baking powder
1 1/2 teaspoons salt
12 ounces imperial stout beer (or other dark beer)

Steps:

  • Combine dry ingredients in a medium bowl; whisk gently till completely mixed. (Or if you're not a lazy cook like me, sift your dry ingredients together into the bowl--I prefer to whisk, however!).
  • Add beer and stir with wooden spoon till flour is totally incorporated.
  • Pour batter (it will be rather thick) into a well-greased bread pan.
  • Bake at 375 deg. F. for an hour, or till loaf is nicely browned and tests done when tapped.
  • Cool on wire rack slightly before serving. Will keep about a week wrapped up in the fridge.

  • In a medium saucepan over medium heat, bring the stout to a boil. Remove from heat and carefully add baking soda (the mixture will foam). When the foaming subsides, add molasses, granulated sugar, and brown sugar and mix to combine. Set aside.
  • In a large bowl, sift together flour, baking powder, salt, ground ginger, cinnamon, cloves, nutmeg, and cardamom. Set aside.
  • Add eggs, oil, and grated ginger to the stout mixture and whisk until combined. Add stout mixture to flour mixture in 3 additions, whisking between each addition, until smooth.

  • Pour off all but 2 tablespoons of fat from the pot, then stir in the onion and garlic and cook, stirring occasionally, until golden, about 6 minutes. Stir in the potatoes, stock, stout, Worcestershire and the beef with any accumulated juices. Simmer the stew, covered, until the meat is very tender, about 3 hours. Season with salt and pepper to taste, then serve sprinkled with the parsley leaves.
