ILLAWARRA PLUM SPAREIBS
Illawarra Plum is the fruit of the Illawarra plum pine tree. The plums look like bunches of blue grapes grouped along a thick stalk. They have a high vitamin C content and a pine and grape taste. You can find the sauce online for a small fee, plus shipping. A great Aussie recipe!

Steps:
- In a very hot pan brown the ribs, then lower the heat and continue to cook the ribs till they are done.
- Pour port wine and wine vinegar into hot pan and reduce heat by half.
- Add the Illawarra plum sauce, rosella syrup and honey.
- Bring to the boil and add the Illawarra plums, simmer for approximately 5 minutes.
- Pour the sauce onto the plate, place the ribs on the sauce and then place the plums on the ribs.
- Enjoy!

Steps:
- Mix butter, sugar, flour, baking powder, and salt.
- Add milk 1/2 at first up to 3/4 cup you need stiff dough.
- Roll dough out on floured board to 3/8 inch thick; cut into 3 inch squares.
- Place a blue plum with a teaspoon sugar and sprinkle of cinnamon on each square.
- Bring the corners to the top and seal all edges.
- Drop in boiling water and boil 10 to 12 minutes. Their plums could have been smaller.
- Remove to a platter.
- Serve with melted butter, sprinkled with cinnamon and sugar, and surrounded with cottage cheese.
KUDZU TEA
Kudzu blooms the end of July through September. It has attractive bunches of delicate purple flowers with a fragrance reminiscent of grapes. Choose only the smallest, most tender leaves. Fresh and tender, the leaves have a flavor similar to that of a green bean as it belongs to the legume family. Make sure picking area has not been sprayed with chemicals to kill the kudzu. I have made this recipe for years, and the ribs are always tender inside with a slightly sweet fruit glaze.

Steps:
- Place spareribs in a pot large enough to cover all of them.
- Cover with water.
- Stick onion with cloves, add to pot along with garlic cloves and salt.
- Bring to a boil over high heat, reduce heat and simmer for 45-60 minutes (or until meat will no longer be pink).
- Meanwhile, prepare plum marinade.
- Open can of plums and or fresh, discard pits.
- Place plums and syrup in food processor or blender.
- Add brown sugar, soy sauce and garlic powder.
- Process mixture until completely smooth.
- Drain spareribs.
- Place in a large, flat glass or plastic container.
- Marinate in refrigerator overnight for best flavor.
- If you are in a hurry, marinate at room temperature for 2 hours.
- Ribs are now ready for the grill.
