PERFECT PEACH COBBLER

Perfect Peach Cobbler image

Peach is my mom's original cobbler recipe which was passed down to me and it's perfect just the way it is so I didn't even have to tweak it! It can be made with different fruits to suit your taste, blackberries, blueberries, and even apple or sweetened cherry pie filling.

Provided by Donna Graffagnino

Categories     Other Desserts

Time 1h15m

Number Of Ingredients 9

1 stick butter
1 c self rising flour
1 c sugar
1 large egg
1 c milk
1 tsp vanilla extract
1 can(s) (29 oz) sliced peaches
half of the remaining peach juice
1 Tbsp ground cinnamon

Steps:

  • 1. Preheat oven to 350* F. Place a stick of butter in a 9 x 11 baking pan, (glass, stainless or disposable aluminum), and put in the oven to melt the butter. Remove from oven as soon as butter is melted and starts to foam, about 5-7 minutes.
  • 2. In a mixing bowl mix flour, 1 cup sugar, egg, milk and vanilla by hand until about smooth. There will be some lumps, that's okay. Remove pan with butter from the oven and pour batter into the hot butter - it will spread out on its own.
  • 3. Using a slotted spoon, scoop out peach slices and place into batter, spreading all around the pan. After all of the peaches have been added drizzle about half of the remaining peach juice over the top of the batter then sprinkle the top with cinnamon. Bake at 350* for 1 hour.
  • 4. The batter will rise up and surround the peaches during the baking process. Serve warm with ice cream or whipped cream if desired. Enjoy!

Peach Cobbler image

This homemade peach cobbler recipe is so easy to make. It combines fresh ripe peaches with a sweet biscuit topping that's baked to golden deliciousness.

Provided by Jen Sobjack

Categories     Pies, Tarts & Crisps

Time 1h5m

Number Of Ingredients 11

2 1/4 pounds (1020 g) peaches, about 4 large peaches, pitted and thinly sliced
1/3 cup (66 g) granulated sugar
1 cup (130 g) all-purpose flour
1/2 cup (100 g) granulated sugar
1/2 teaspoon baking powder
1/4 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/2 cup (113 g) unsalted butter, cold and cut into pieces
1/2 cup (120 ml) buttermilk

Steps:

  • Preheat the oven to 350°F. Lightly butter the bottom of a 3-quart casserole dish.
  • Toss the peaches slices with the sugar. Set aside while you make the topping.
  • In a medium bowl, whisk the flour, sugar, baking powder, baking soda, salt, cinnamon, and nutmeg together.
  • Using a pastry blender or fork, cut in the butter until the mixture resembles coarse crumbs.
  • Gradually add enough buttermilk to moisten the dough. It should resemble thick cake batter.
  • Spread the peaches evenly in the bottom of the prepared casserole dish.
  • Drop small spoonfuls of topping evenly over the top of the peaches.
  • Bake for 35-45 minutes, until the peaches are tender and the topping is golden brown.
  • Cool on a wire rack for 10 minutes before serving.

  • Start by preparing your peaches. Peel with a vegetable peeler if they are firm. If they are ripe, a vegetable peeler will bruise them so it's best to blanch: bring a large pot of water to a boil. Add the peaches a few at a time so that they are totally submerged. Let boil for 30-45 seconds. Remove from the boiling water. When they are cool enough to handle, use your hands to easily remove the peels. Slice the peaches. You should end up with about 9 cups of sliced peaches. Add your peaches to a 9x13 inch casserole dish (no need to grease the pan).

  • Preheat oven to 425°F. Place a large baking sheet covered in foil on the lowest rack in the oven. This cobbler overflows a bit almost every time I make it. The baking pan will catch the drips and prevent a mess in the oven.
  • In a large bowl, combine the peaches and the lemon juice and then add the rest of the filling ingredients. Stir to coat and then pour into a 9x13 baking dish.
  • Bake the peach mixture in the preheated oven for 10 minutes. While the peaches are baking, combine the dry topping ingredients and whisk to combine. Toss the grated butter in the flour mixture. Stir in the boiling water, just until combined, leaving plenty of little lumps of butter.
  • Remove the peaches from the oven and drop the topping over them in spoonfuls. (I like to use my smallest cookie scoop to do this.) Sprinkle the cobbler topping with the cinnamon sugar topping. Bake until the crust is golden and a toothpick inserted into the crust comes out clean, about 28 minutes. Serve warm or at room temperature. Enjoy!
