IDAHO FRY SAUCE

What is it? Fry sauce is commonly found in Utah, southern Idaho, and rural Oregon...I am trying to spread the word! This is an amazing recipe and after tasting this you will NEVER again settle for plain ketchup with fries.

1 cup mayonnaise
2 tablespoons mayonnaise
¼ cup white sugar
½ teaspoon salt
⅛ teaspoon paprika
¼ teaspoon ground mustard
½ teaspoon onion powder
½ cup ketchup
2 tablespoons red wine vinegar
1 ½ teaspoons Worcestershire sauce

Steps:

  • Whisk together 1 cup mayonnaise plus 2 tablespoons mayonnaise, sugar, salt, paprika, ground mustard, and onion powder until smooth. Stir in the ketchup, vinegar, and Worcestershire sauce until well blended. Cover and refrigerate until chilled, about 30 minutes. Store covered in refrigerator.

4 (5 ounce) idaho potatoes, scrubbed
1 tablespoon olive oil or 1 tablespoon vegetable oil
1/4 teaspoon salt
1/4 teaspoon fresh ground pepper

Steps:

  • Adjust the oven rack to the lowest position in the oven. Preheat oven to 450°F.
  • Cut the potatoes lengthwise into eights to form wedges. Toss the potatoes with the oil on a heavy baking sheet or jelly-roll pan, and arrange them flat in a single layer.
  • Bake the potatoes without turning, until the bottoms are golden and crisp, about 20 minutes; turn potatoes to the other side. Bake 10 minutes more until crisp. Remove from the oven and sprinkle with salt and pepper.

15 red potatoes
1 red pepper
1/8 c. olive oil
1/2 cup Caesar dressing
1/2 cup Parmesan cheese flakes

Steps:

  • Scrub (but don't peel) potatoes and cut each into 4 quarters, then place all the pieces in a large plastic bag.
  • Take the red pepper, cut it in half and core out the seeds in the middle, then dice it into small pieces. Add the red pepper pieces in the bag with the potatoes. Add about 1/8 cup olive oil to the bag and shake it around until the oil is coating all the potato and red pepper pieces.
  • Pour the contents of the bag out onto a cookie sheet. Arrange the potatoes so they are laying flat.
  • Bake at 450 degrees for 25 to 30 minutes, or until they begin to look lightly toasted.
  • Use a spatula to move the potatoes and peppers into a large bowl. Pour in the caesar dressing and toss to coat then top with parmesan cheese flakes.
