- Add the lemons 2 cups of the water, and agave nectar to a blender. Pulse on low 1 to 3 times until the flesh of the lemons have broken down – large chunks of lemon rind should remain (see photo in post). How many times you pulse your blender depends on how high powered your blender is, you don’t want to break the lemons up too much.
- Place a fine mesh siv over a bowl. Pass the lemonade through the siv and use a spatula to help push any liquid through, discard the lemon rinds. you may have to work in batches and empty the lemon rinds a few times.
- ; Transfer the lemonade to a pitcher and stir in the remaining 4 cups filtered water. Stir to combine and taste. Stir in more agave nectar or water to adjust the lemonade to your liking. Keep in mind that I kept my lemonade pretty tart to compensate for ice when when it’s served. Store the lemonade in the fridge until ready to serve.
- Fill glasses with ice and garnish glasses and the pitcher with lemon slices if desired. Pour the lemonade into each glass and serve immediately. The lemonade will keep in the fridge for 2 to 3 days.

- In a blender, combine the lemon juice, water, mint and sugar. Blend until the sugar has completely dissolved into the liquid.
- Add the ice. Blend on low speed to break up the ice, then increase the speed and blend until you’ve reached a uniformly slushy texture. (If the mixture is too thick to blend, let it rest for 5 minutes, stir by hand, and try again.) Pour into glasses and place a sprig of mint in each. Serve immediately.
