Even if you think you don't like asparagus you have to try this. It is a wonderfully easy quiche-like casserole to throw together for breakfast. This can be prepared the night before, covered, and put in the refrigerator overnight. Just be sure to allow extra cook time.

1 ½ cups chopped cooked ham
½ cup chopped onion
¼ cup chopped red bell peppers
1 (10 ounce) package frozen cut asparagus, thawed
8 eggs
2 cups milk
1 cup all-purpose flour
¼ cup grated Parmesan cheese
¾ teaspoon dried tarragon
¾ teaspoon salt
½ teaspoon black pepper
1 cup shredded Cheddar cheese

Steps:

  • Preheat oven to 425 degrees F (220 degrees C). Lightly grease a 9x13 inch baking dish.
  • Mix the ham, onion, red bell peppers, and asparagus in the prepared baking dish. In a large bowl, beat together the eggs, milk, flour, Parmesan, tarragon, salt, and pepper. Pour over the ham mixture.
  • Bake 20 minutes in the preheated oven, or until a knife inserted in the center comes out clean. Sprinkle with Cheddar cheese. Continue baking 3 to 5 minutes, or until cheese is melted. Let stand 5 to 10 minutes before serving.

Like most country cooks, I often bake a large ham so that I can use leftovers in tasty dishes like this. Fresh asparagus is wonderful in this soup's creamy broth.

1-1/2 cups cut fresh asparagus (1-inch pieces)
1 medium carrot, julienned
2 tablespoons butter
3 small onions, quartered
2 tablespoons all-purpose flour
1 cup milk
1 cup chicken broth
1 cup cubed fully cooked ham
1 jar (2-1/2 ounces) sliced mushrooms, drained
1 cup half-and-half cream
Salt and pepper to taste
Grated Parmesan cheese, optional
Chopped fresh parsley, optional

Steps:

  • Place asparagus in a large saucepan with enough water to cover; cook until crisp-tender. Drain and set aside. , In a large heavy saucepan, saute carrot in butter for 3-5 minutes; add onions and saute 2 minutes longer or until tender. Stir in flour; gradually add milk. Bring to a boil; boil and stir for 2 minutes. Add broth, ham, mushrooms and reserved asparagus. Reduce heat; add cream. Heat through but do not boil. Add salt and pepper. Garnish with Parmesan cheese and parsley if desired.

This just came in Penzey's Spring '08 catalog. We tried this and it was really yummy! I added the 1 more cup of asparagus and you could use Egg Beaters to reduce the cholesterol. I adjusted the seasonings just a bit.

2 cups cooked ham, chopped into 1/2-inch pieces
1/2 cup green onion, chopped
2 -3 cups fresh asparagus, cut into 1/2 to 1 inch pieces
2 tablespoons butter
8 eggs
2 cups skim milk
1/2 cup flour
1/4 cup parmesan cheese, grated
1/2 teaspoon salt
1/2-3/4 teaspoon dried thyme
1/2-3/4 teaspoon cracked rosemary
1/2 teaspoon granulated garlic or 1/2 teaspoon garlic powder
1/2 teaspoon ground black pepper
1/2-1 cup cheddar cheese, shredded

Steps:

  • Preheat oven to 425°F Lightly grease a 9x13-inch baking pan.
  • Melt butter in frying pan over medium heat; add the asparagus and green onions and saute until tender, about 8 minutes, stirring frequently.
  • If you like, add the ham to saute for the last 2 minutes.
  • When they vegetables are tender, add them to the baking pan along with the ham.
  • In a large bowl, beat together the eggs, milk mixed with flour, Parmesan cheese, salt, thyme, rosemary, garlic and pepper.
  • Beat until smooth and pour over the ham mixture.
  • Bake, uncovered, for 30 minutes or until a knife inserted in the center comes out clean.
  • Sprinkle with cheddar cheese. Bake an additional 3-5 minutes until the cheese is melted.
  • Let set a few minutes before cutting and serving.

Found in the magazine Cooking for Two Spring 2006. Another simple and delicious recipe. I am writing as posted but I generally mince some garlic and a few red pepper flakes (for some zing) and add to the onion when sauting in butter. I also season the fish with a little Old Bay Seasoning and use panko crumbs for the saltines.

6 medium fresh asparagus spears, trimmed and cut into 1-inch pieces
3/4 lb cod, haddock or 3/4 lb orange roughy fillet
1/3 cup chopped onion
2 tablespoons butter, divided
1 tablespoon flour
1/8 salt
1 dash pepper
3/4 cup 2% milk
1/3 cup shredded cheddar cheese
1/4 cup crushed saltine (about 7 crackers)
1/8 teaspoon dried parsley flakes

Steps:

  • Place the asparagus in a small saucepan and cover with water. Bring to boil;cook for 1-2 minutes. Drain and place in a 1-qt. baking dish coated with nonstick cooking spray. Top with fish; set aside.
  • In a small saucepan, saute onion in 1 tablespoon butter until tender. Stir in the flour, salt and pepper until blended. Gradually whisk in milk. Bring to a boil; cook and stir for 1-2 minutes or until thickened. Remove from the heat, stir in cheese until melted. Pour over fish.
  • Melt remaining butter; stir in crackers and parsley. Sprinkle over cheese sauce. Bake , uncovered, at 350 degrees for 20-25 minutes or until crumbs are golden brown and the fish flakes easily with a fork.

1-1/4 cups shredded Monterey Jack cheese, divided
1 cup cubed deli ham (1/2 inch)
1 cup cut fresh asparagus (1-inch pieces)

Steps:

  • In a large bowl, whisk the first six ingredients until blended. Stir in bread, 1 cup cheese, ham and asparagus. Transfer to a greased 8-in. square baking dish. Refrigerate, covered, several hours or overnight. , Preheat oven to 325°. Remove strata from refrigerator while oven heats. Bake, uncovered, 20 minutes. Sprinkle with remaining cheese; bake 40-50 minutes longer or until puffed, golden and a knife inserted in the center comes out clean. Let stand 5-10 minutes before serving.Freeze option: After assembling, cover and freeze strata. To use, partially thaw in refrigerator overnight. Remove from refrigerator 30 minutes before baking. Preheat oven to 325°. Bake strata as directed, increasing time as necessary for a knife inserted in the center to come out clean.

1 teaspoon dried tarragon
1 teaspoon dry mustard powder

2 eggs
1 ½ cups milk
2 pounds fresh asparagus, tough ends trimmed
1 cup cubed fully-cooked Black Forest ham
1 onion, diced
1 cup Parmesan cheese, divided

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • Grease a 9x13-inch baking dish.
  • Combine baking mix, tarragon, dry mustard, and black pepper in a bowl.
  • Whisk eggs and milk together in a separate bowl; pour the egg mixture into the baking mix and seasonings, and whisk until smooth.
  • Pour half the batter into the bottom of the prepared baking dish.
  • Arrange half the asparagus spears over the batter.

It is ideal for a brunch, luncheon entree or potluck occasion & also works for a dinner meal when combined w/a salad & crusty bread. Another popular variation skips the use of bread + the reserved liquids & combines the remaining ingredients to use as a filling for tartlet shells that can be served as a starter course or brunch & luncheon entree ... hence its versatility. 4 slices sandwich bread (white or wheat, lrg size & not thin-sliced, cut or torn in roughly 3/4 in pieces)
2 eggs
14 ounces cream cheese (softened)
1/2 lb ham (diced, Deli-type pkg is fine & a larger or smaller amt is fine as well)
4 tablespoons mayonnaise
1 (8 ounce) can mushrooms (stems & pieces, chopped, drained & liquid reserved)
1 (10 1/2 ounce) can asparagus (cut spears, drained & liquid reserved)
1 cup cheddar cheese (finely shredded)

Steps:

  • Preheat oven to 400°F (200°C) w/oven rack placed in the center position of the oven.
  • Lightly grease a 9-in rd baking dish (or spray w/PAM type spray) & set aside.
  • Place cut or torn bread pieces in a lrg mixing bowl & add liquid reserved from draining the mushrooms & asparagus.
  • Allow bread/liquid mixture to sit for a short time while liquid is absorbed & stir as needed (May add milk if more liquid is required to completely moisten the bread pieces, but it is unlikely to be needed.).
  • Add eggs to bread mixture & mix well.
  • Add cream cheese, ham, mayo, mushrooms & asparagus to the bread mixture & mix very well to combine (This will break up the asparagus pieces & is what you want to happen).
  • Pour mixture into baking dish. Sprinkle surface evenly w/shredded cheddar cheese & use your hand to press it lightly into the surface.
  • Bake for 30-40 min or till golden brown & tests done using a sharp knife in the center. Tent w/foil as needed during baking if browning faster than expected. Serve at once or set aside at rm temp & reheat in microwave as needed.
  • NOTE: Seasonings of choice can be added to suit individual preferences (esp pepper & garlic). My experience was the combo of canned mushrooms & asparagus + the reserved liquid used + the ham meant that no added salt was needed.
