PERFECT ICED TEA

- Hot-Brewed:
- Bring 8 cups water to a simmer; remove from the heat and add 3 tablespoons loose tea or 6 tea bags. Let steep about 4 minutes, until it's the strength you like. Strain loose tea with a fine-mesh sieve or remove the tea bags. Let cool, then transfer to a pitcher, cover and refrigerate.
- Cold-Brewed:
- Combine 8 cups cold water and 6 tablespoons loose tea or 10 tea bags in a pitcher. Cover and refrigerate 15 to 36 hours, until it's the strength you like. Strain loose tea with a fine-mesh sieve or remove the tea bags.
- Sweet Teas:
- Combine 3/4 cup each sugar and water in a saucepan and add 1 infuser, if desired. Bring to a simmer over medium heat, stirring until the sugar dissolves, then remove from the heat and let cool. Strain the infused syrup through a fine-mesh sieve (you'll get about 1 cup).
- Orange Add 6 strips zest
- Blackberries 1 cup
- Cinnamon 2 sticks
- Lavender 3 tablespoons dried
- Vanilla 1 halved bean
- Mint 3 sprigs
- Ginger 1 cup sliced
- Lemon 8 strips zest
- Nectarine 1 cup chopped
- Cucumber 2 cups chopped

Steps:
- Gather the ingredients.
- Steep the tea, star anise, cardamom, cinnamon stick, vanilla bean, tamarind powder, and almond extract (if using) in the boiling water for 5 minutes.
- Strain the tea.
- Stir in the sugar and sweetened condensed milk until both are completely dissolved.
- Fill 2 tall glasses with ice.
- Pour the tea over the ice, leaving an inch or so of space at the top for the evaporated milk.
- Top up with more ice if needed, and then drizzle with 1 teaspoon of evaporated milk on each glass of tea.

CRANACHAN PARFAIT
Steps:
- Chill a large bowl in the fridge for the cream. Place the egg yolks in another large bowl, heat the honey without boiling it (I put it a few seconds in the microwave) and pour it over the yolks and beat with electric beaters (or a stand mixer) for about 10 minutes until thick and moussy. Add the Whisky and beat again until well mixed.
- In the chilled bowl, whisk the cream like a Crème Chantilly until soft peaks and the same consistency as the yolk-honey mixture. Gently fold the 2 mixtures together and spoon either into spherical silicone moulds (this used 10 spheres), greased muffin tins, or in a lined cake tin. Transfer to the freezer and leave overnight to set.
- In a saucepan, heat the sugar with a few drops of water. Just as it starts to change colour after about 5 minutes, stir using a wooden spoon until the sugar is completely dissolved and the caramel is medium golden. Add the butter and stir to mix well then pour in the oats. Stir until the oats are well covered then immediately transfer to a baking tray.
- Once cool, break the praline into small pieces and reserve in a jam jar. (This can keep for about 10 days)
- Preheat the oven to 180°C/160°C fan/360°F/Gas 4.Cream the butter and sugar together in a large bowl until pale and creamy (either by hand or in a stand mixer). Gradually add the flour, rice flour and salt until the mixture comes together into a dough that's easy to work with.
- Spread the mixture into a greased non-stick baking tin and thinly even it out using a palette knife. Alternatively roll the dough out with a rolling-pin until about 1cm thick and bake in the oven for about 25 minutes until golden brown.
- When the mixture is still soft and warm, cut out disks with a cookie cutter (the same size as the moulds). Leave to cool on a wire tray.
- When ready to serve, place the shortbread disk on each plate (spread each with raspberry jam if no fresh raspberries), turn out the frozen parfaits at the last minute and place on top. Sprinkle with the oat praline and, if using, serve with fresh raspberries.

- In a small saucepan, bring water to a boil. Remove from the heat; add tea bags. Cover and steep for 5 minutes. Discard tea bags. Stir gelatin into tea until completely dissolved. Cool slightly., Pour 1/4 cup gelatin mixture into each of four parfait glasses. Place a cherry in each glass; refrigerate until set but not firm, about 1 hour. Transfer remaining gelatin mixture to a small bowl; refrigerate for 1 hour or until soft-set., Whisk gelatin mixture for 2-3 minutes or until smooth. Stir in 1/2 cup whipped topping; spoon into parfait glasses. Refrigerate for at least 2 hours. Just before serving, top with remaining whipped topping and garnish with lemon slices.

- In a pan, boil the lime juice and zest to reduce by 3/4. Cool
- Put the egg yolks, sugar and reduced lime juice in a heatproof bowl over a pan of simmering water. Whisk until the mixture is thick, light and at least doubled in volume
- Remove from the heat and continue to whisk until the mixture cools to room temperature.
- Fold in the cream and Marsala
- Whisk the egg whites until they can form stiff peaks. Fold into the mixture. Spoon the mixture into glasses and leave to set in the freezer for at least 2 hours
