Our icced tea is delicious served on its own or as a mixer for summer cocktails. We've made it with rooibos and strawberries for real fragrance

Steps:
- Put the tea bags, sugar and lemon juice into a large jug and pour over 1 litre cold water. Leave to infuse for about an hour, giving it the odd stir. Using cold water preserves the tea's delicate flavour.
- Leave in the fridge to get really cold. To serve, add ice and slices of strawberry and sprigs of mint.

High in anti-oxidants and also caffeine-free, this tea is not only refreshing but also a wonderfully healthy thirst quencher. Rooibos and Honeybush teas are both available in local supermarkets in Maryland. I have also purchased this tea from Cost Plus World Market.

- Stir occasionally until cold.
- Remove tea bags when tea is cold and refridgerate.

- Heat water (in the microwave, or on the stovetop) until it comes to a simmer. Add tea bags and steep for 2-3 minutes. You want the tea to be nice and strong.
- Remove and discard the tea bags.
- Add in the vanilla and honey, and stir until the honey is completely dissolved. Add in the ice, followed by the milk, and stir (or if using a mason jar, shake) until combined.
- Serve immediately.

- Allow to infuse for 2-3 minutes.
- Remove the teabags, stir in the honey and leave to cool.
- Add the mango juice and sweeten the mixture further if necessary.

MANGO ROOIBOS ICED TEA
Steps:
- In a small saucepan, add the brown sugar, allspice, cassia cinnamon, and 1 quart of water. Bring to a boil. Stir and add the rooibos tea, then take the mixture off of the heat. Let the mixture stand for 30 minutes.
- Pour the tea through a fine mesh strainer and discard the solids. Add the tea to a pitcher along with 1 quart of cold water and mango puree. Stir until combined. Add ice and enjoy immediately.
