2 ounces unsweetened chocolate squares
1/2 cup butter
2 eggs
3/4 cup sugar
1 teaspoon vanilla
1 cup all-purpose flour
1/4 cup butter, softened
1 1/2 tablespoons cocoa
1 1/2 cups powdered sugar, sifted
2 -3 tablespoons milk
1/2 teaspoon vanilla extract

Steps:

  • Cookies:.
  • Combine chocolate squares and 1/2 cup butter in the top of a double boiler. Bring the water to a boil; reduce heat to low, and cook until the chocolate and butter melt, stirring occasionally. Set aside.
  • Combine eggs, sugar, and vanilla in a medium mixing bowl; beat at medium speed of an electric mixer until blended. Add flour and reserved chocolate mixture. Mix well.
  • Preheat waffle iron. Drop dough by 2 teaspoonfuls onto iron. Close iron, and bake for 1 to 1 1/2 minutes or until done. Let cool on wire racks. Continue cooking cookies until your dough is gone.
  • Top with frosting once they are cool.

  • Cream butter; add cocoa, beating well at medium speed of an electric mixture. Gradually add powdered sugar, milk, and vanilla, beating until smooth.

The best part of these crispy-on-the-outside, soft-in-the-middle- cookies is they're ready in a snap; no oven preheating required. We prefer thicker waffle irons for these cookies, but if your iron is thinner, be sure to adjust your timing so they'll cook faster.

1 1/4 cups all-purpose flour
1/2 teaspoon baking soda
1/2 teaspoon fine salt
1/3 cup packed light brown sugar
1/3 cup granulated sugar
1 stick unsalted butter, at room temperature
1/2 teaspoon pure vanilla extract (see Cook's Note)
1 large egg
1/2 cup semisweet chocolate chips
Nonstick cooking spray

Steps:

  • Whisk together the flour, baking soda and salt in a medium bowl. Beat the sugars and butter with an electric mixer on medium-high speed until light and fluffy, about 5 minutes. Beat in the vanilla and egg until incorporated. Adjust the speed to medium-low and add the flour in 2 batches, mixing until incorporated. Mix in the chocolate chips. Refrigerate the dough for at least 30 minutes if time allows.
  • Preheat a waffle iron to medium-low. Generously spray the top and bottom of the waffle iron with cooking spray. Scoop tablespoons of the dough, roll into balls and flatten slightly. Working in batches, place 1 dough round onto each section of the waffle iron, close gently and cook until slightly crisp, 3 to 6 minutes.
  • Serve the cookies warm or store in an airtight container at room temperature for up to 1 day.

1 recipe chocolate frosting, or can of frosting

Steps:

  • In large bowl, mix together melted butter and cocoa. Allow to cool for 10 minutes. Add sugar, then eggs one at a time, mixing well. Add flour, salt, and vanilla and stir to combine. Dough will be thick. Depending on your waffle iron, use between 1 teaspoon and 1 tablespoon and drop into each section of the iron.* Cook for just a few minutes and then frost immediately.

Steps:

  • Heat waffle iron to medium-high (spray with cooking spray before heating if necessary). Heat 1/3 cup chocolate chips and the butter in 1 1/2-quart saucepan over low heat, stirring constantly, until melted. Stir in remaining ingredients except 1/2 cup chocolate chips and the powdered sugar.
  • Drop 1 tablespoon batter onto each section of ungreased waffle iron. Close lid of waffle iron. Bake 2 to 3 minutes or until steaming stops.
  • Remove from waffle iron to wire rack. Immediately sprinkle each cookie with about 1 teaspoon chocolate chips and powdered sugar. Serve warm.

Steps:

  • Whisk flour, cocoa powder, cinnamon, cardamom, baking powder, and salt together in a medium bowl.

3 ounces unsweetened chocolate, chopped
9 ounces (2 1/4 sticks) unsalted butter
4 large eggs
1 teaspoon pure vanilla extract
1 1/2 cups granulated sugar
1/2 teaspoon salt
1 1/2 teaspoons ground cinnamon
1/2 cup plus 2 tablespoons unsweetened cocoa powder
1 1/2 cups all-purpose flour
Vegetable-oil cooking spray
1/4 cup confectioners' sugar, plus more for dusting
4 1/2 teaspoons milk

Steps:

  • Melt chocolate and 2 sticks butter in a small saucepan over medium-high heat, stirring. Let cool slightly.
  • Put eggs, vanilla, and granulated sugar in the bowl of an electric mixer fitted with the paddle. Mix on medium speed until pale, 4 to 5 minutes. Mix in chocolate mixture, salt, cinnamon, 1/2 cup cocoa, and the flour.
  • Heat a waffle iron until hot. Lightly coat grids with cooking spray. Spoon batter onto center of each waffle-iron square (rounds should be about 1 1/2 inches). Close cover; cook until set, about 1 1/2 minutes. Remove cookies with a fork; let cool, bottom sides up, on a wire rack. Repeat (coat grids with cooking spray each time).
  • Melt remaining 2 tablespoons butter in a small saucepan. Add confectioners' sugar and the remaining 2 tablespoons cocoa; stir until smooth. Stir in milk.
  • Gently dip surface of cookies in icing so waffle lines (not gaps) are coated. Let icing set, about 10 minutes. Using a fine sieve, dust with confectioners' sugar.
