How decadent! Ice cream, cookies, Grand Marnier & strawberries - definitely an adult dessert! Use a good quality ice cream for this or it will deflate. Freezer time included in cook time.

1/2 gallon vanilla ice cream
12 macaroons, crumbled
5 tablespoons Grand Marnier
2 cups heavy cream
1/2 cup toasted almond, chopped
confectioners' sugar
1 quart fresh strawberries, washed hulled and halved or 3 (10 ounce) packages frozen sliced strawberries, thawed
1/2 cup sugar
5 tablespoons Grand Marnier

Steps:

  • Soften ice cream until stir-able but not melted. Stir in crumbled macaroons and Grand Marnier.
  • Whip cream till thick and shiny; fold into ice cream.
  • Spoon into a mold - an angel food cake pan is just the right size - or use your biggest springform pan.
  • Sprinkle with almonds, dust with sugar, cover with plastic wrap and return to freezer. (needs at least 4 hours to get firm; overnight preferred).
  • Unmold onto a serving platter & store in the freezer until serving time.
  • Make the sauce just before serving:
  • Put berries in a saucepan with the sugar. Simmer until just soft but not mushy. Remove from heat and add Grand Marnier.
  • To serve - slice the souffle and top with hot sauce. Serve immediately!

1 cup milk
1 cup heavy cream
½ cup sugar, divided
½ pod vanilla bean, slit down the middle (or 1 teaspoon vanilla extract, added while cooling)
4 large egg yolks
1 pinch salt
1 cup strawberry, hulled and quartered
⅓ cup sugar, plus 4 tablespoons sugar, divided
1 teaspoon lemon juice
1 tablespoon butter, softened
4 large egg whites
¼ teaspoon cream of tartar
1 pinch salt

Steps:

  • Preheat the oven to 400˚F (200˚C)
  • Prepare an ice bath and place a strainer over a medium bowl. Set nearby.
  • Make the crème anglaise: In a small saucepan, heat the milk, heavy cream, ¼ cup (50 g) of sugar, and the vanilla bean pod over medium heat for 2-3 minutes, until it begins to steam. Remove the pan from the heat.
  • In a medium bowl, combine the egg yolks, remaining ¼ cup (50 g) of sugar, and the salt and whisk together. Continue whisking and ladle in the milk mixture. Once combined, return the saucepan to medium heat, begin to whisk the milk mixture, and slowly pour in the egg mixture.
  • Cook the custard, continuously whisking to ensure the egg yolks don't cook on the bottom, for about 5 minutes, until it coats the the back of a spoon.
  • Set the bowl with the strainer in the ice bath and strain the creme into the bowl. Whisk until cooled, about 5 minutes. Cover and refrigerate until ready to serve.
  • Add the strawberries, 2 tablespoons of sugar, and the lemon juice to a small saucepan. Cook over medium heat for about 5 minutes, stirring occasionally, until the strawberries are softened but still vibrant red. Remove the pan from the heat.
  • Strain the strawberry mixture through a fine-mesh sieve into a medium bowl. Use a spatula to press the berries through, making a strawberry puree. Discard the pulp and set the puree in the refrigerator to cool.
  • Set 6 ramekins on a baking sheet and coat the insides with the softened butter. Sprinkle 2 tablespoons of sugar among the ramekins and shake each to coat the bottom and sides with sugar.
  • Add the egg whites, cream of tartar, and salt to a large bowl. Using an electric hand mixer, beat the whites on medium-high speed until foamy. Add the remaining ⅓ cup (65 g) of sugar in small increments, continuing to beat until the whites are stiff and glossy.
  • Using a spatula, carefully fold in the strawberry puree.
  • Fill each ramekin with the strawberry-egg white mixture and level off the tops with a butter knife. Run a clean thumb around the inside edge of each ramekin to allow the soufflés to rise properly.
  • Bake the soufflés for 10-12 minutes, until the tops are light brown. Avoid opening the oven prematurely, so the soufflés don't fall.
  • Serve the soufflés immediately with the crème anglaise poured over the top.

1/2 cup butter, cut into small pieces
4 ounces best-quality chocolate, coarsely chopped (semisweet works too)
3/4 cup sugar
4 egg yolks, room temperature
1 tablespoon instant coffee, dissolved in
1 tablespoon rum
1 teaspoon vanilla
1/4 cup all-purpose flour
5 egg whites, room temperature
1 pint premium-quality vanilla ice cream
2 tablespoons rum

Steps:

  • Position rack in center of oven and preheat to 450°F.
  • Butter a 1-quart soufflé dish and sprinkle with sugar.
  • Melt butter with chocolate, stirring until smooth.
  • Blend in ¼ cup of sugar, yolks, coffee mixture and vanilla; stir in flour (can be prepared several hours ahead and set aside at cool room temperature. Reheat before continuing.) Beat whites in large bowl until soft peaks form; gradually add remaining ½ cup sugar, beating, until whites are stiff but not dry.
  • Fold ¼ of whites into chocolate mixture, then fold chocolate back into whites (be careful not to deflate - a few streaks of white may remain).
  • Gently turn batter into prepared dish.
  • Sprinkle lightly with sugar.
  • Bake 5 minutes.
  • Reduce oven temperature to 400F and continue baking until puffed, about 20 minutes (center will remain moist).
  • Serve immediately with sauce.

  • Vanilla Ice Cream Sauce: Let ice cream soften 10 minutes; add rum and beat until smooth.

3 tablespoons unsalted butter, at room temperature, for the ramekins
1/2 cup sugar, plus more for the ramekins
1 1/3 cups whole milk
1 vanilla bean, split and scraped, or 1 tablespoon pure vanilla extract
4 large eggs, separated
2 tablespoons all-purpose flour
2 tablespoons cornstarch
Fine sea salt
Vanilla ice cream, for accompaniment
Confectioners' sugar, for sprinkling

Steps:

  • Preheat the oven to 400°F. Generously butter four 8-ounce or six 5-ounce soufflé ramekins. Put a couple of tablespoons of the sugar inside one ramekin and toss to coat, then tip the excess sugar into the next, and repeat until all the ramekins are sugar-coated. Place the ramekins on a rimmed baking sheet.
  • In a large saucepan, add the milk and the vanilla bean and heat just to a boil over medium-high heat. Turn off the heat, cover, and set aside to let the vanilla bean infuse for 10 minutes. Remove the vanilla bean and rinse and reserve for another use.
  • To make the pastry cream, in a bowl, whisk 1/4 cup of the sugar with the egg yolks until thick and light, about 1 minute. Whisk in the flour, cornstarch, and a pinch of salt. Add a little of the warm infused milk and whisk to combine. Add the remaining milk. Return the egg mixture to the saucepan and bring to a boil over medium-high heat. Decrease the heat to medium and cook, stirring constantly, until thickened, 45 to 60 seconds; it will be lumpy. Remove it from the heat and whisk until smooth. Set aside.
  • To beat the egg whites, in the bowl of a heavy-duty mixer fitted with the whisk, whip the egg whites with a pinch of salt on medium speed until foamy. Increase the speed to high and beat until the whites begin to form soft peaks. Slowly add the remaining 1/4 cup of sugar, beating until the whites are glossy and hold stiff peaks, 1 to 2 minutes.
  • Add about a quarter of the beaten egg whites to the pastry cream mixture and stir until well mixed. Pour this mixture over the remaining whites and fold them together as lightly as possible.
  • To assemble the soufflés, spoon the mixture into the prepared soufflé ramekins (the mixture should come up to the top). Smooth the tops with a metal spatula. Run your thumb around the inside of the rim of each dish, making a shallow channel around the edge of the batter. (This will help the soufflés rise up straight and tall.) Set the filled soufflé ramekins on the rimmed baking sheet.
  • Bake the soufflés until risen and just set, 12 to 15 minutes. Remove from the oven. With two forks, pull open the center of each soufflé. Place a scoop of vanilla ice cream in the opening. Sprinkle with confectioners' sugar and serve immediately.

6 large egg yolks
1/2 cup sugar
1/4 cup orange liqueur
2 tablespoons water
2 teaspoons orange juice
1 teaspoon grated orange zest
1-1/2 cups heavy whipping cream
1 tablespoon confectioners' sugar

Steps:

  • In top of a double boiler or a metal bowl over simmering water whisk egg yolks and sugar until blended. Stir in liqueur, water, orange juice and zest. Cook over low heat until mixture is just thick enough to coat a metal spoon and a thermometer reads at least 160°, about 10 minutes, stirring constantly but gently. Do not allow to boil. Immediately transfer to a bowl., Place bowl in an ice-water bath for a few minutes, stirring custard occasionally. Cool to room temperature. In a large bowl, beat cream until it begins to thicken. Add confectioners' sugar; beat until stiff peaks form. Gently fold into cooled custard mixture., Transfer to eight 4-oz. ramekins; smooth tops. Freeze until firm, at least 4 hours or overnight. Garnish with additional orange zest.

1 1/2 pints fresh strawberries, stems removed, sliced
3/4 cup sugar for strawberries
8 eggs, separated
1/2 cup sugar for egg whites
Strawberry sauce (see recipe)

Steps:

  • Preheat oven to 425 degrees. Butter well and chill 8 1 1/4-cup souffle dishes.
  • Place strawberries in food processor or blender. Add 3/4 cup sugar. Puree well. Taste for sweetness (amount of sugar varies with sweetness of fruit). Transfer to bowl.
  • Add yolks to mixture and blend well with wire whisk. In another bowl whisk whites while gradually adding 1/2 cup sugar. Whisk until you have soft peaks. Fold 1/4 of whites into strawberries, then remainder. Do not overwork. Taste for sweetness.
  • Place souffle dishes on baking sheet and fill rim. Before placing in oven run thumb around rim of each to remove any overflow, which could cling and prevent souffle from rising fully. Bake for approximately 10 minutes. Add sauce before serving.

1 vanilla bean, split and seeds scraped
2 ounces semisweet chocolate, coarsely chopped (1/2 cup), melted, and coole
3 tablespoons sour cream
2 large pinches cream of tartar
Confectioners' sugar and Dutch-process cocoa powder, for dusting
Vanilla ice cream, for serving (optional)

Steps:

  • Preheat oven to 400 degrees, with rack in lower third. Butter six 6-ounce ramekins; coat with sugar. Place on a rimmed baking sheet.
  • Whisk together flour, 1/4 cup granulated sugar, and salt in a medium saucepan. Whisk together milk and egg yolks, then whisk mixture into saucepan along with vanilla seeds. Cook over medium-high heat until mixture comes to a boil; let boil 1 minute, whisking frequently. (Mixture should be very thick.)
  • Remove from heat and divide mixture evenly between two bowls. Whisk chocolate into one half; let second half stand 5 minutes, then whisk in sour cream. Press plastic wrap directly onto surface of each; let cool to warm room temperature, about 10 minutes. (Or place over an ice-water bath and whisk until cool.) Souffle bases can be made ahead to this point and refrigerated up to 1 day. Bring to room temperature and whisk to loosen before proceeding.
  • Whisk egg whites to break up a bit, then pour half (about 1/4 cup) into the bowl of a stand mixer fitted with the whisk attachment. Beat on medium-high speed until foamy; add cream of tartar and beat until soft peaks form. Gradually add 2 tablespoons granulated sugar; beat until peaks are stiff and glossy, 1 to 2 minutes. Spoon a dollop of mixture into chocolate base; whisk to lighten. Add remainder and gently fold in until combined (don't worry if some streaks remain). Repeat with other half of egg whites and vanilla base.
  • Divide chocolate mixture among prepared ramekins, then spoon vanilla mixture into centers. For a marbled effect, swirl with a small spatula. Bake until risen and set, about 16 minutes. Serve immediately, dusted with confectioners' sugar and cocoa powder, with scoops of ice cream.
