Easy Ice Cream in a Bag image

Great recipe for kids on a campout. Eat the ice cream right out of the bag or serve over homemade cobbler.

¼ cup milk
¼ cup half-and-half
1 tablespoon white sugar
¼ teaspoon vanilla extract
1 cup ice cubes, or as needed
3 tablespoons ice cream rock salt

Steps:

  • Combine milk, half-and-half, sugar, and vanilla extract in a pint-size resealable plastic bag; seal tightly.
  • Put a scoop of ice, 3 tablespoons ice cream rock salt, and the bag containing the milk-cream mixture into a gallon-size resealable plastic bag; seal tightly.
  • Rock the bag back and forth (do not shake) until contents thicken into ice cream, about 10 minutes. Wipe salt from the top of the pint-size bag before opening to prevent salt from getting into the ice cream.

1 tablespoon whole milk
1 tablespoon brown sugar
1 tablespoon cream cheese, room temperature
1/3 cup sweetened condensed milk
1/2 cup plus 2 tablespoons heavy cream
2 tablespoons crushed freeze-dried strawberry
1 tablespoon brown sugar
1 tablespoon cream cheese, room temperature
1/3 cup sweetened condensed milk
1/2 cup plus 2 tablespoons heavy cream
1 tablespoon cocoa powder
1 tablespoon brown sugar
1 tablespoon cream cheese, room temperature
1/3 cup sweetened condensed milk
1/2 cup plus 2 tablespoons heavy cream
1/2 tablespoon matcha powder
2 drops mint extract
1/4 cup semisweet chocolate chip

Steps:

  • Make the strawberry ice cream: In a small blender, blend the strawberries and milk until slightly chunky.
  • Add the brown sugar, cream cheese, sweetened condensed milk, heavy cream and blended strawberries to a 12-ounce mason jar. Using an electric hand mixer fitted with the whisk attachment or one standard beater, whip until thickened, 3-5 minutes. Add the crushed freeze-dried strawberries and stir to incorporate. Seal the jar tightly with the lid and freeze for at least 5 hours, or overnight.
  • Make the chocolate ice cream: Add the brown sugar, cream cheese, sweetened condensed milk, heavy cream, and cocoa powder to a 12-ounce mason jar. Using an electric hand mixer fitted with the whisk attachment or one standard beater, whip until thickened, 3-5 minutes. Seal the jar with the lid and freeze for at least 5 hours, or overnight.
  • Make the matcha mint chocolate chip ice cream: Add the brown sugar, cream cheese, sweetened condensed milk, heavy cream, matcha powder, and mint extract to a 12-ounce mason jar. Using an electric hand mixer fitted with the whisk attachment or one standard beater, whip until thickened, 3-5 minutes. Add the chocolate chips and stir to incorporate. Seal the jar tightly with the lid and freeze for at least 5 hours, or overnight, stirring after about 2 hours to make sure the chocolate chips are evenly distributed.

  • Using two 1-quart resealable plastic bags, place 1 bag inside the other. Place the first 5 ingredients inside the inner bag. Seal both bags, pressing out as much air as possible., Place the 2 bags in a gallon-size resealable plastic freezer bag. Add ice and salt. Seal bag, again pressing out as much air as possible., Shake and knead cream mixture until thickened, about 5 minutes. (If desired, wear mittens or wrap bags in a kitchen towel while shaking to protect hands from the cold ice.)

13.6 oz unsweetened coconut cream
1 teaspoon vanilla paste
⅓ cup sweetened condensed milk
¼ cup unsweetened almond milk
6 fresh figs, sliced

Steps:

  • In a liquid measuring cup or medium bowl, whisk together the coconut cream, vanilla paste, sweetened condensed milk, and almond milk until smooth. Divide evenly between 6 ice pop molds, filling each about two-thirds of the way.
  • Add 2-3 slices of fig to each ice pop mold, then insert a wooden stick into the center of each mold. Freeze the pops for 4-6 hours, or until completely solid.
  • When ready to serve, unmold the ice pops (run the outside of the molds under lukewarm water to help release, if needed). Leftover pops will keep in an airtight container in the freezer for up to 6 weeks.
