Instant Mexican Style Hot Cocoa image

When I was a kid my Mom used to make Ibarra Mexican hot chocolate for me. If you've never tried it, it's wonderful stuff. You melt two wedges of the stuff in a cup of hot milk and zip it in the blender. It has some cinnamon in it and makes me think of winter with every sip. This recipe originally comes from Alton Brown's instant cocoa recipe. I've made some changes to make it my own and to get close to the taste of Ibarra

Number Of Ingredients 8

4 cups powdered sugar
2 cups unsweetened baking cocoa
5 cups powdered milk
2 teaspoons salt
2 tablespoons cornstarch
1 tablespoon cinnamon
1 teaspoon nutmeg
1/8 teaspoon cayenne pepper

Steps:

  • Combine all ingredients in a mixing bowl. Stir slowly to combine.
  • Sift mixture into your storage container. DO NOT skip this step. Sifting helps mix the ingredients, aerate, and break up the clumps.
  • Store in a sealed container and be sure to give it a good shake before you use any of the mix. You can adjust the amount of cayenne pepper to taste as needed.
  • To use mix.
  • Fill a mug about half full with the mix and then slowly top it off with hot water, stirring the whole time. Use more or less to taste.

Ibarra Mexican Brownies image

These brownies have a little kick of cinnamon from a melted down Mexican Hot Chocolate bar (this can be found in the Mexican section of the grocery store or in a Latin American food store). I use Ibarra brand, but Abuelita or any Mexican hot chocolate bar would do. I have substitued applesauce for the butter and this is the only brownie recipe that has still turned out moist for me when doing so. My sister shared this recipe with me.

3/4 cup butter or 3/4 cup margarine
3 (1 ounce) unsweetened chocolate squares
3 1/8 ounces mexican chocolate, broken into wedges (disc)
1 3/4 cups sugar
4 eggs
1 1/2 cups flour
1/2 teaspoon salt
1 1/2 teaspoons vanilla
1 3/4 cups nuts

Steps:

  • Preheat oven to 375°F.
  • Grease 9x9x2 pan.
  • Melt butter, baking chocolate and Mexican chocolate in 3 quart saucepan over low heat, stirring constantly, until smooth.
  • Remove pan from heat and mix in remaining ingredients in the order listed, beating well after each addition.
  • Pour batter into greased pan and smooth with a spoon. Bake 35-45 minutes.

Mexican Hot Chocolate image

Mexican chocolate is available at Mexican markets, some grocery stores and always online. Often you will find it under the brand name Ibarra, in a distinct yellow- and red-striped, hexagon-shaped box. Ibarra chocolate comes in both dark chocolate and in ''new'' flavorings - mixed with sugar cane, cinnamon and finely ground almonds. Get the former and follow the lead of our recipe's source, Rick Bayless, the great American interpreter of Mexican cuisine.

2 1/2 cups milk
1 3 3/10-ounce tablet Mexican chocolate, roughly chopped (see note)

Steps:

  • In a medium saucepan over medium-low heat, simmer the milk and chocolate for a few minutes, stirring constantly to dissolve the chocolate.
  • Either pour into a pitcher and beat well with a Mexican molinillo (chocolate beater), a whisk or an electric mixer, or pour into a blender, cover loosely and blend until thoroughly mixed. Either way, you should wind up with a nicely frothy drink. Serve immediately.
