"I CAN'T BELIEVE IT'S NOT BUTTER" COOKIES



A healthier way to make those yummy buttery cookies! Add sprinkles, frosting, icing or no topping at all. Enjoy!!

Number Of Ingredients 7

1 cup all-purpose flour (any flour)
1/2 cup brown sugar (not packed) or 1/2 cup Splenda sugar substitute
1/4 cup I Can't Believe It's Not Butter
1/4 teaspoon baking powder
1 large egg (whipped in a small bowl and put to the side)
1 teaspoon vanilla extract
1/8 teaspoon salt

Steps:

  • Preheat your oven to 350°F.
  • Whisk together the flour, baking powder, and salt in a small bowl. Set aside.
  • Cream the butter and sugar in a bowl (use a plastic or wooden spoon or spatula). Mix until well combined. Add whipped egg and vanilla. Mix until well combined (3-4 min.).
  • Slowly incorporate the flour mixture into the butter mixture. Mix until well combined but do not over mix dough.
  • Drop dough by the tablespoonful onto cookie sheet 1/4" apart. Use your first two fingers and press cookies down at least 1/2 " - 1/4" thick. Do not make them too thin.
  • Bake for 10-12 minutes or until the cookies are lightly golden brown. (Place cookie sheet in the oven on the middle rack.).
  • Let cookies cool completely. If you are using colorful sugars or sprinkles, feel free to top your cookies while they are still warm, not hot. Top with frosting or icing after cookies are completely cooled. You will want to refrigerate them with the frosting on top to allow the frosting to properly set.

I got this recipe from my grandmother, who found it in one of her many cookbooks. It's a quick easy recipe. I've used various Hershey kisses over the years and the original is still the best.

1 cup(s) creamy peanut butter
1 cup(s) sugar
1 - egg
36 - hershey kisses

Steps:

  • Preheat oven to 350. Unwrap Hershey Kisses
  • In mixing bowl, combine egg, sugar, and peanut butter and stir until combined.
  • Take dough and make 36 balls, placing on cookie sheet as each one is made. Press 1 Hershey kiss into the center of each peanut butter ball. Bake for 10 minutes.

I have made this for cookie swaps and for my large tray of various Christmas cookies. I first made it about 40 years ago. [I was just going thru my own old cookie recipe booklet, when I found this again]. Hope you and all the kids enjoy.

Steps:

  • 1. Mix well peanut butter, sugar and egg.
  • 2, Mix bits of mixture into balls the size of small walnuts. Press down balls with a chocolate star *****[Chocolate Candy Kisses DO NOT work!!!]
  • 3. Place on an ungreased cookie sheet.
  • 4. Bake at 350 degrees for 8-10 minutes OR until light tan.
  • 5. Let cool a few minutes before removing them from the cookie sheet.
  • 6. Note: **** DO NOT USE Candy Kisses, ONLY use stars****
