2 eggs, slightly beaten
1 medium onion, chopped fine
3/4 cup milk
2 teaspoons baking powder
1/4 teaspoon baking soda
1 1/2 teaspoon salt
1 tablespoon sugar
2 cups plain yellow cornmeal
1/4 cup all purpose flour
Vegetable oil, for deep frying

Steps:

  • Combine eggs, onion, and milk together in a mixing bowl.
  • Mix baking powder, baking soda, salt, sugar, cornmeal, and flour together.
  • Then mix the dry ingredients with the milk mixture. Blend well.
  • Drop by spoonfuls into hot oil and cook until golden brown.

Vegetable shortening or cooking oil for deep-frying
1 1/2 cups yellow cornmeal
1/4 cup all-purpose flour
3/4 tablespoon baking powder
1 1/2 teaspoons salt
1 teaspoon baking soda
1 teaspoon ground coriander
1/2 teaspoon chili powder
1/2 teaspoon cayenne pepper
1/2 onion, grated
2 1/2 cups buttermilk
3 large eggs, lightly beaten
1/4 cup fresh or thawed frozen corn kernels

Steps:

  • Begin heating the shortening or oil in a deep-fryer or cast-iron skillet over medium heat.
  • In a large bowl, stir together the cornmeal, flour, baking powder, baking soda, coriander, chili powder, and cayenne. Stir in the grated onion. Stir in the buttermilk, eggs, and corn until combined. The mixture will have the consistency of wet sand.
  • Heat the oil until it registers 375 degrees F on a deep-fat thermometer. (You can also test the heat by sprinkling a bit of cornmeal on the hot oil to see if it bubbles.) Scoop up rounded tablespoons of dough and carefully drop them into the fat (in batches, if necessary). Fry on one side until golden, 2 to 3 minutes. Turn and fry the other side until completely golden. Using a slotted spoon, transfer the cooked hushpuppies to several layers of paper towels to drain. Serve immediately.

3 cups cornmeal
1 cup self-rising flour
1/2 cup sugar
2 tablespoons dried onions
1 tablespoon baking powder
1/2 teaspoon salt
1/2 teaspoon ground black pepper
3/4 to 1 cup hot water
Oil, for frying

Steps:

  • Combine the cornmeal, flour, sugar, dried onions, baking powder, salt and pepper in a large bowl and mix. Next, add the hot water slowly until the mixture begins to thicken. The batter should be thick and start to rise quickly. Continue to mix and knead until the batter stops rising. Once the batter is thick enough, let it stand for 30 minutes before cooking.
  • When ready to cook, add enough oil to a frying pan for the hushpuppies to be submerged. Heat over high heat to 350 degrees F. Use a spoon to carefully drop the batter into the oil. Make sure to spread them apart so they do not stick together. Fry until golden brown on all sides. (The hushpuppies will rise to the top of the oil, so make sure to turn them in the oil on all sides so they cook evenly.) Repeat with the remaining batter.

Peanut oil, for frying
1 cup yellow cornmeal
3/4 cup self-rising flour
1 teaspoon kosher salt, plus more to taste
1/2 teaspoon sugar
1/2 teaspoon cayenne pepper
1/2 teaspoon smoked paprika
1/2 small Vidalia onion, finely grated
4 scallions, thinly sliced
1 cup buttermilk
1 large egg, beaten
1/4 cup grated cheddar cheese

Steps:

  • Preheat 2 inches peanut oil in a deep-fryer or Dutch oven to 375 degrees F. Whisk the cornmeal, flour, 1 teaspoon salt, the sugar, cayenne and paprika in a large bowl to get rid of the lumps. (No one likes a lumpy hushpuppy.) Mix in the remaining ingredients, stirring well to combine.
  • Dip 2 spoons into a mug of water (this allows the batter to come clean off). Scoop up about 1 1/2 tablespoons of the batter and carefully slide it into the hot oil, working in batches. Fry the scoops of batter 3 to 5 minutes, or until golden brown and cooked all the way through (test the first one for doneness). Remove and drain on a paper towel-lined baking sheet, seasoning with salt as soon as they come out of the fryer.

1 cup stone-ground yellow cornmeal
1/2 cup all-purpose flour
2 tablespoons sugar
1 1/4 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon fine salt plus to taste
Pinch of cayenne
1 1/4 cup butter milk
1 large egg, beaten
2 scallions, finely chopped
Vegetable oil for frying

Steps:

  • Using a fine-meshed sieve over a large bowl, sift together the cornmeal, flour, sugar, baking powder, baking soda, salt, and cayenne. Using a rubber spatula, stir in the buttermilk, egg, and scallions, until a batter is formed. (Take care not to over-mix the batter or the hushpuppies will be dense.)
  • Pour the oil for frying into a large heavy-bottomed pot to a depth of 2 inches. Place over medium heat and heat to 375 degrees F. Working in small batches, using a greased teaspoon, drop spoonfuls of batter into the oil, turning once, frying until golden brown and cooked through, about 4 minutes per batch. Using a slotted spoon, transfer the hushpuppies to a paper towel-lined plate and sprinkle with salt. Serve immediately.
  • Cook's Note: Using a greased spoon (vegetable oil spray works well) helps to release the batter from the spoon. Additionally, if you drop the batter off of the tip of the spoon it will form ball shapes; if dropped off the side it will form oblong shapes.

3/4 cup all-purpose flour
3/4 cup fine-grind cornmeal
2 teaspoons sugar
1 1/2 teaspoons baking powder
1 1/2 teaspoons kosher salt
1/2 teaspoon garlic powder
1/4 teaspoon onion powder
1/4 teaspoon freshly ground black pepper
4 tablespoons chilled unsalted butter, cut into pieces
1 large egg, beaten to blend
1 cup buttermilk
1/2 small onion, finely chopped
1 jalapeño, seeded if desired, finely chopped
Vegetable oil (for frying; about 6 cups)
Buxton Hall Tartar Sauce (for serving)
A deep-fry thermometer

Steps:

  • Whisk flour, cornmeal, sugar, baking powder, salt, garlic powder, onion powder, and pepper in a large bowl to combine. Add butter and work in with a pastry blender or your fingers until mixture resembles coarse meal (the largest butter pieces should be no bigger than a pea).
  • Make a well in the center of flour mixture and add egg and buttermilk to well. Gradually incorporate into dry ingredients, mixing from the center out, until a smooth batter forms. Add onion and jalapeño and mix gently just to evenly disperse (be careful not to overmix).
  • Pour oil into a large heavy saucepan to come halfway up sides and fit with thermometer. Heat oil over medium-high until thermometer registers 350°F. Using a 1-oz. scoop or a tablespoon and working in 2-3 batches, carefully drop balls of batter into oil and fry, turning often with a spider or a slotted spoon and adjusting heat to maintain temperature, until hushpuppies are puffed and deep golden all over, about 4 minutes. Transfer to paper towels to drain and let cool slightly.
  • Serve warm hushpuppies with tartar sauce alongside for dipping.
  • Batter can be made 2 hours ahead. Cover and chill. Scoop cold batter directly into hot oil and fry.

Steps:

  • In a large bowl, combine the cornmeal, flour, baking powder and salt. Whisk the egg, milk and onion; add to dry ingredients just until combined. , In a cast-iron Dutch oven or an electric skillet, heat oil to 365°. Drop batter by tablespoonfuls into oil. Fry until golden brown, 2 to 2-1/2 minutes. Drain on paper towels. Serve warm.

½ onion, minced
½ cup milk
1 egg, beaten
1 stalk celery, minced

Steps:

  • Heat oil in a deep-fryer or large saucepan to 375 degrees F (190 degrees C).
  • Mix flour, cornmeal, onion, milk, egg, celery, garlic, and Cajun seasoning in a bowl.
