HUSH PUPPIES
The story of the hush puppy comes from back in the antebellum days in the south. When the planters had a fish fry, the food was cooked outdoors. The dogs would gather around and hope for a scrap of food (some things never change!). The hush puppy was originally just a piece of fried dough that was thrown to the dogs to keep them happy. The secret of a good hush puppy is the temperature of the oil. It has to be hot enough to cook, but not so hot that the outside is hard and inside is mush. If your oil is smoking, it is way too hot! Peanut oil works great, but isn't required. These are fabulous with fried fish or shrimp. **Cooking is time is for 2 batches

- Mix together the cornmeal, flour, baking soda, baking powder and salt. Add the grated onion and sliced green onions.
- Take the egg yolk and buttermilk and blend into the batter. Whip the egg whites into stiff peaks. Fold the egg whites into the batter until it reaches a good consistency. (The amount of egg white depends on the size of your eggs).
- Drop by teaspoonful into hot oil (in a deep fryer or in a dutch oven -- the oil needs to be deep enough to cover the hush puppies). Cook until golden brown.

HUSH PUPPIES
I get a kick out of seeing these hush puppies turn themselves over, and they taste great! They usually disappear before the meal. If you don't like my sweet Southern version, just omit the sugar.

Steps:
- Mix all ingredients together just until they are wet.
- Refrigerate 30 minutes to 5 hours.
- To cook, heat oil to about 350-375 degrees.
- Dip a small spoon in cold water, then get a spoonful of batter, using the side of the bowl to"break-off" the spoonful of batter from the bowl.
- Immediately submerge spoon in the hot oil for a few seconds until the Hush Puppy releases from the spoon.
- Repeat this process with each Hush Puppy, until you have 6 or 7 in the hot oil.
- Do not crowd the"puppies", as you do not want to lower the temperature of the hot oil.
- Getting the spoon wet between puppies is important, as it helps keep the batter from sticking to the spoon.
- If your oil is the correct temperature, the hush puppies should be golden on the outside and cooked on the inside.
- When golden on one side, if they automatically turn themselves over, you're cooking like a Pro.
- If they don't give them a little nudge to make them turn over.
- Possible Problems: If oil is too hot, or"raw puppies are too large", they will get too browned on the outside and be gummy or runny on the inside.
- If oil is not hot enough, the puppies will be greasy.
- I usually put 1 or 2 spoonsful of batter in the hot oil to test it before making a whole batch of these tasty little Southern treats.
- Adjust oil temperature as needed.
- Although not quite as good as when freshly cooked, I often freeze leftover hush puppies and reheat them in a toaster oven until warm.
- They are still mighty good.

HUSH PUPPIES
Hush puppies are found on menus throughout the South and in many homes as well, an ace accompaniment to most of the region's meals. They are fritters, essentially: sweet cornmeal dough that is fried until golden brown. The recipe here comes from Craig Claiborne, the longtime food editor at The New York Times who was from Mississippi.

HUSHPUPPIES
The pieces of butter in the batter melt as the hushpuppies fry, making them extra moist and luscious. This recipe is from Buxton Hall, one of Bon Appétit's Hot 10, America's Best New Restaurants 2016.

Steps:
- Whisk flour, cornmeal, sugar, baking powder, salt, garlic powder, onion powder, and pepper in a large bowl to combine. Add butter and work in with a pastry blender or your fingers until mixture resembles coarse meal (the largest butter pieces should be no bigger than a pea).
- Make a well in the center of flour mixture and add egg and buttermilk to well. Gradually incorporate into dry ingredients, mixing from the center out, until a smooth batter forms. Add onion and jalapeño and mix gently just to evenly disperse (be careful not to overmix).
- Pour oil into a large heavy saucepan to come halfway up sides and fit with thermometer. Heat oil over medium-high until thermometer registers 350°F. Using a 1-oz. scoop or a tablespoon and working in 2-3 batches, carefully drop balls of batter into oil and fry, turning often with a spider or a slotted spoon and adjusting heat to maintain temperature, until hushpuppies are puffed and deep golden all over, about 4 minutes. Transfer to paper towels to drain and let cool slightly.
- Serve warm hushpuppies with tartar sauce alongside for dipping.
- Batter can be made 2 hours ahead. Cover and chill. Scoop cold batter directly into hot oil and fry.
