2 1/2 lbs boneless beef round steak, cut 1-inch thick
2 (14 1/2 ounce) cans diced tomatoes
1 (8 ounce) package sliced fresh mushrooms
1 cup sliced celery
1 cup frozen sliced carrot
1 (14 ounce) can low sodium beef broth
1 (10 3/4 ounce) can reduced-fat reduced-sodium condensed cream of mushroom soup
1 (1 5/8 ounce) package beef stew seasoning
hot cooked medium noodles

Steps:

  • Trim fat from beef. Cut beef into 6 serving size pieces.
  • Combine undrained tomatoes, mushrooms, celery, and carrots in 5-6 quart slow cooker.
  • Place beef on vegetables.
  • Stir together broth, soup, and seasoning mix; pour over beef.
  • Cover; cook on low-heat setting for 8-10 hours, or on high-heat setting for 4-5 hours.
  • Serve with cooked noodles.

Hunter's Sauce with Mushrooms image

This sauce is also known as sauce chasseur. It's a nice brown sauce with mushrooms. I sometimes substitute this sauce when the recipe calls for golden mushroom soup.

2 tablespoons minced onions
2 tablespoons butter
1 cup chopped mushroom
1/2 cup white wine
1/2 cup tomato puree
1 cup left over home made beef gravy (or brown gravy/brown sauce made from a packet such as Knorr's)
2 -5 drops maggi seasoning (or other flavor enhancer like Kitchen Bouquet, or even Worcestershire sauce)
salt and pepper

Steps:

  • Saute onions in butter until very tender.
  • Add mushrooms and saute additional 2- 3 minutes.
  • Add wine, simmer, and reduce by half.
  • Add tomato puree and gravy and simmer for 5 minutes.
  • Adjust seasoning to your taste with Maggi, salt and pepper.
  • You can also add your favorite herbs to this sauce.

1 slice bacon, minced
1 medium onion, chopped
1/2 lb mushroom, sliced
3 tablespoons olive oil, divided
1 tablespoon tomato paste
1/2 teaspoon salt
1/8 teaspoon pepper
1/2 teaspoon paprika
1/4 teaspoon dried thyme
1 cup red wine
1 cup reduced-sodium beef broth
2 tablespoons creme fraiche or 2 tablespoons sour cream
1 tablespoon chopped parsley

Steps:

  • Saute bacon in 1 tablespoons olive oil until golden brown.
  • remove bacon to a bowl and saute onion in drippings until soft.
  • remove to bowl with bacon.
  • saute mushrooms in remaining 2 tablespoons olive oil.
  • return bacon and onions to skillet.
  • add tomato paste, thyme, salt, pepper, and paprika.
  • stir until tomato paste is dissolved.
  • add wine and reduce over medium heat for 5 minutes.
  • add beef broth and reduce over medium heat for 10 minutes.
  • stir in creme fraiche and parsley until heated through.
  • spoon over sauteed chicken breasts or veal/pork scallopine.

This is a great recipe for a small dinner party. The pan sauce is delicious over garlic cheese mashed potatoes or recipe #247050. This is probably my husband's favorite dish, at least it is the one he requests the most. As written the sauce can be spicy (depending on the freshness and type of cayenne you have), so if you are not a fan of spicy food I would 1/2 the cayenne.

1 1/2 lbs boneless beef steaks, cut 3/4-inch thick (economical cuts like bottom round work well)
3 -4 tablespoons all-purpose flour
1/2 teaspoon salt
1 teaspoon black pepper
2 -3 tablespoons olive oil
3 stalks celery, cut on diagonal in 1-inch slices
1/2 lb mushroom, sliced in thirds
1 bunch scallion, chopped (white & green parts)
1 cup red wine
1/2 cup low sodium soy sauce
1 1/2 teaspoons ground ginger
3/4 teaspoon ground cinnamon
1/2 teaspoon cayenne pepper

Steps:

  • Trim fat from meat.
  • Cut into 4-6 serving size pieces.
  • Pound with meat hammer until 1/4-1/2" thin and tenderized.
  • Combine flour, salt, and black pepper.
  • Rub mixture onto the steaks to thoroughly coat.
  • Heat oil in large flat bottom skillet that has a lid.
  • Add the meat and brown on both sides.
  • Scatter the celery, mushrooms, and 3/4 of the scallions over the top.
  • In a small bowl, combine the red wine, soy sauce, ginger, cinnamon, and cayenne.
  • Pour over the meat & vegetables.
  • Bring to a simmer.
  • Simmer covered for 1 hour. (can be simmered an additional 30-45 minutes without adverse effects).
  • Serve with pan sauce and vegetables poured over and sprinkled with remaining scallions.

2 pounds boneless venison or beef chuck roast, cut in 1-inch cubes
2 tablespoons canola oil
4-1/4 cups water, divided
1/2 cup tomato juice
2 medium onions, cut in wedges
2 celery ribs, sliced
1 teaspoon Worcestershire sauce
2 bay leaves
2 to 3 teaspoons salt
1/2 teaspoon pepper
6 medium carrots, quartered
1 large rutabaga, peeled and cubed
6 medium potatoes, peeled and quartered
1 cup frozen peas
1 tablespoon cornstarch

Steps:

  • In a Dutch oven, brown meat in oil over medium heat. Add 4 cups water and scrape to loosen any browned drippings from pan. Add the tomato juice, onions, celery, Worcestershire sauce, bay leaves, salt and pepper. Bring to a boil. Reduce heat; cover and cook for 2 hours, stirring occasionally. , Discard bay leaves; add the carrots, rutabaga and potatoes. Cover and cook for 40-60 minutes. , Stir in the peas; cook for 10 minutes. Combine cornstarch and remaining water until smooth; stir into stew. Bring to a boil. Cook and stir for 2 minutes or until thickened.

1-1/2 pounds sliced fresh mushrooms
3 tablespoons butter
1 cup dry red wine
1 tablespoon cornstarch
1-1/4 cups vegetable broth
3 tablespoons tomato paste

Steps:

  • Cook noodles according to package directions. Meanwhile, in a large skillet, saute the mushrooms in butter until tender. Add wine. Bring to a boil; cook until sauce is reduced by half, about 5 minutes. , In a small bowl, combine the cornstarch, broth and tomato paste until smooth. Add to mushroom mixture. Bring to a boil; cook and stir until thickened, about 2 minutes. Drain noodles; serve with mushroom sauce.
