Steps:
- In a large cast-iron or other heavy skillet, cook the sausage over medium heat until no longer pink; drain. Add the onion, carrots and green pepper; cook until tender. Stir in the potatoes, salt and pepper. Reduce heat; cook and stir until lightly browned and heated through, about 20 minutes.

HUNTERS' HASH (VENISON MEAT STUFFING)
A very simple and delicious recipe handed down to me from my Canadian grandparents. This is a very robust recipe and makes great leftovers.

Steps:
- Place potatoes into a large pot and cover with salted water; bring to a boil. Reduce heat to medium-low and simmer until tender, about 20 minutes. Drain.
- Preheat oven to 300 degrees F (150 degrees C).
- Stir together venison, pork, liver, heart, onions, garlic, and sage in a large bowl. Stir in potatoes; season with salt and pepper. Place mixture into a large oven-proof Dutch oven with a lid.
- Bake in the preheated oven until meat is fully cooked and flavors have blended, about 2 hours. Mix thoroughly with a fork, replace lid, and allow to rest for 15 minutes before serving.

POTATO AND HAM HASH
Steps:
- Gather the ingredients.
- Melt the butter in a large skillet over medium heat.
- When the butter has melted and has stopped foaming, add the diced potatoes, onion, bell pepper, and ham. Mix well.
- Cook the hash until well browned, stirring and turning frequently. Season with salt and freshly ground black pepper, to taste, and add the crumbled dried thyme.

- Brown beef and onion in a large saucepan over medium high heat until meat is no longer pink. Drain fat, add potatoes and Worcestershire sauce. Season with salt and pepper to taste.
- Reduce heat to medium low, cover and simmer for 30 minutes, or until potatoes are tender.

- Begin shredding the potatoes by using the largest holes of your box grater. Wash and scrub the potatoes clean. You can peel them or leave the peels on, whichever you prefer. I always peel them when I make shredded hash. Place the shredded potato in a large bowl lined with a couple paper towels. Top with more paper towels and press down hard so the paper towels can absorb a lot of the moisture. You want a lot of the moisture gone, so just keep squeezing and using new paper towels as necessary. Alternatively, you can shred the potatoes onto a kitchen towel, wrap them up, and squeeze them out over the sink.
- Transfer the shredded potatoes to a plate lined with two layers of paper towels. Cook in the microwave on high for 2 minutes– see notes in my post about why you are doing this. Set the potatoes aside.
- Place a 10 – 12 inch skillet on the stove. Bacon should always begin in a cold pan, so before you turn the heat on, lay out your three strips on the pan. Then, turn the heat on low. Cook the bacon on both sides just before they become crispy. They will go back onto the stove and then in the oven, so they have more time to cook later in this recipe. Remove from heat, reserve the grease, and set bacon on a plate lined with paper towels to absorb some grease. Once the bacon is slightly cool, you can chop it up.
RABBIT HUNTERS SLOW COOKER POT ROAST RECIPE - CULLY'S KITCHEN

- Prepare all the vegetables and place them in the bottom of the slow cooker. In a small bowl combine the beer, chili sauce, minced garlic, and brown sugar.
- In a large skillet over medium-high heat, using the oil, brown the rabbit on all sides. Arrange the rabbit pieces over the vegetables in the slow cooker, and then pour the beer mixture over the rabbit meat.
- Cook on high heat for 3-4 hours (if you need extra cooking time-cook on low 5-6 hours) or until vegetables and rabbit meat are fork tender.
- Drain the juices from the slow cooker to make gravy. You should have about 1 1/2 cups of liquid, if you don’t, add some water to make up the difference.
